Eton mess cupcakes



Many of you known as Eton Mess dessert that I made a time ago and you loved it and comes from England.  When I found these Eton Mess cupcakes I was fell in love and because  right now is the Blog Anniversary of   my friend Tito thought they were perfect for his concurse and Celebration.

So here's my contribution Tito your blog anniversary!

This recipe is adapted from Good to know recipes.co.uk











Ingredients

For cupcakes

200 all purpose flour


200g  sugar


110g butter or margarine

2   tsp baking powder

2 large eggs


1tsp vanilla extract

For the icing:


120g unsalted butter (softened)


200g icing sugar


1tsp vanilla

For the topping:

Crushed meringue pieces(chunks)


Strawberries Fresh or freeze


Strawberry jam or strawberry sauce



Method


Preheat oven to 180°C/ and line a 12-hole muffin tin with cake cases.


2.Put all of the ingredients into a large bowl and mix on a slow speed until no lumps of fat remain. Turn to a high speed and beat well until the batter is light and fluffy (approx 1 minute). You can use a handle mixer or a freestanding mixer with the paddle attachment.


3.Put equal amounts of batter into the cake cases and bake in the preheated oven until golden and springy to the touch. Cool the cupcakes on a wire rack prior to decorating.


4.For the icing, mix the butter, icing sugar and vanilla together on a slow speed in a freestanding mixer with the paddle attachment or a hand mixer with the beater attachments. When incorporated beat at a high speed for 3 minutes.


5.Add a dollop of icing to the top of each cupcake then cover with crushed meringue pieces (meringue chunks). Then add some strawberry sauce and a few fresh strawberry pieces to finish it off.

Muchos de ustedes conocen el postre que se llama Eton Mess que publiqué hace un tiempo y que pueden ver aquí los que no lo concen. Además está la historia de este postre.
Cuando vi esta receta de Eton Mess cupcakes en Good to know recipes UK me enamoré inmediatamente de estos cupcakes y como ahora Tito tienen su concurso por su Aniversario de Blog es una receta perfecta para su concurso y estoy feliz  de compartirla para esta ocasión.

Ingredientes

Para los cupcakes

200 grs. de harina

200 grs. de azúcar

110 grs.  de mantequilla o margarina

2 cucharaditas polvos de hornear

2 huevos

1 cucharadita de vainilla

Crema

120 grs. mantequilla sin sal

200 grs. azúcar glass o azúcar flor

1 cucharadita de vainilla

Top de merengue y frutillas

pedazos de merengue en trozos
frutillas o fresas congeladas o frescas
mermelada de frutillas o pulpa de frutillas


Preparación

Precalentar el horno a 180°c y preparar un molde de muffins con 12 cápsulas de papel.

Poner en un bol todos los ingredientes para cupcakes y batir hasta mezclar bien, debe qyedar una masa de consistencia cremosa.
El batido se puede hacer a mano o con máquina de batir.Batir unos 2 minutos-

Repartir el batido en los moldes de papel que estan en el molde de muffins.
Llevar a horno unos 15 minutos o hasta que estén ligeramente dorados.
Retirar y dejar enfriar antes de decorar.

Para la crema de cubierta mezclar la mantequilla, vainilla y azúcar y batir hasta tener una consistencia cremosa.
Poner un poco de esta crema en cada cupcake.
Cubrir con pedazos de merengues. Frutillas y finalmente un poco de mermelada de frutillas.
Igual que el Eton Mess se van poniendo los pedazos de merengue y frutillas como se quiera, yo corté en dos algunas frutillas y la mermelada la puse al final como un baño.

  49. hi gloria, i just came to know eton mess cakes when i saw this in a local magazine last month. Very pretty and they sound delicious to me actually! The only thing is that we have to make the meringue ourselves as i dont think i can get the ready made meringue here..
