Well here's the cake that I made for Birthday kids was on June 13, They always ask for a chocolate cake, this time I found this recipe I loved it because the filling dont have butter but is with a chocolate mousse absolutely delicious, the kids (and all) loved so..
Brief history: Before proceeding with the recipe, the twins came into our lives 17 years ago (seems impossible) and have made us really happy, we walked together a road that has not always been easy but that's life.
They arrived us in a special way as a blessing because my children are adopted, came to our house with three days so we have them from first days of their life and I think it was the best we've done .
It is difficult in a few words to share so many emotions and love but I will tell you we really love each other and they had made my life fuller and happier. Always I think Im really blessing! LOL
This recipe is adapted from a little cook book " Simple food" (revista Líder Junio/2011)
My babies (LOL)
Ingredients (12 servings)
180 grs. dark chocolate in pieces
130 grs. soft butter
3/4 cup of sugar
6 eggs separated yolks from whites
120 grs. grinded almonds
200 grs. all purpose flour
1 teaspoon of baking powder
pinch of salt
Syrup for moist
1/2 cup of sugar
1/2 cup of water
lemon zest
1 tablespoon of lemon juice
Filling
2 teaspoon of unflavored gelatin powder
1/2 cup of cold water
2 cups of whipped cream
200 grs bitter chocolate chopped
2 eggs
1 teaspoon of vainilla extract
Garnish
black chocolate flakes
white chocolate flakes
some berries
Method
Preheat oven to 180 ° C prepare a baking pan with removable bottom, on bottom of pan to waxed paper (you can cut the same size)
(a baking pan of 20 or 24) . I used one of 24 cm because I havent more small than this.
In a bowl place the chocolate and melt in double boiler, remove from heat and let cool.
In another bowl beat butter with sugar until foam, add the yolks one at a time beating well between each addition, add the melted chocolate ,the almonds, flour and baking powder, mix well.
The mixture should be smooth.
In another bowl beat the egg whites with a pinch of salt until are firm but not dry, incorporate the chocolate mixture with smooth movements.
Pour into the prepared pan.
Baking 40 to 45 minutes.
The center should be slightly moist. Should not be overcooked.
Allow to cool and then remove from pan.
For the syrup
In a saucepan heat sugar, water and lemon zest until the sugar dissolves . Add lemon juice .Mix well.
To filling
In a small saucepan mix the unflavored jelly with cold water, dissolve in a water bath add one cup cream and heat until boiling.
In blender or food processor and place the chopped chocolate, add the hot cream and appointment process to dissolve the chocolate.
Add remaining cream, eggs and vanilla, mix well, pour in a bowl and let cool.
Then mix with a whisk the mixture until my creamy as a mousse. (About 5 to 8 minutes)
To prepare the cake:
Cut cake in half to put on a cake plate.
Moisten with half the prepared syrup.
Fill with a cream of chocolate mousse.
Cover with the other half of cake.
Cover entire cake with cream mousse, decorated with black and white chocolate and some berries if desired.
Take the refrigerator for about 1 hour before serving.

Aquí está la torta que hice para el cumpleaños de mis hijos Gerardo y María Esperanza, generalmente piden una tarta de chocolate.pero esta receta me encantó porque de relleno no lleva mantequilla (como muchas tortas de chocolate) sino que un mousse suave que queda muy bueno.
Antes de la receta una breve historia que algunos de ustedes conocen.
Los mellizos llegaron a nosotros (y literalmente a nuestros brazos) 17 años atrás
y hemos hecho un camino juntos como es la vida, con alegrías,penas y mucho amor.
Llegaron a nostros de un modo especial porque los adoptamos, llegaron a nuestra casa de tres dias.
Y pienso que es lo mejor que hemos hecho en la vida.
Es muy dificil en pocas palabras compartir todo lo que han sido todos estos años sólo diré que me siento muy bendecida, y muy agradecida.
Es un amor mutuo entre ellos y nosotros.
Torta de almendras y mousse de chocolate
Ingredientes (12 porciones)
180 grs. de chocolate en barra especial
para repostería
130 grs. de mantequila
3/4 taza de azúcar
6 huevos separados
120 grs. de almendras molidas
1 pizca de sal
200 grs. de harina sin polvos
1 cucharadita de polvos de hornear
almíbar para humedecer
1/2 taza de azúcar
1/2 taza de agua
cáscara de limón
1 cucharada de jugo de limón
Para el relleno
2 cucharaditas de gelatina en polvo
1/4 taza de agua fría
2 tazas de crema
200 grs. de chocolate bitter picado
2 huevos
1 cucharadita extracto de vainilla
para decorar
láminas finas de chocolate(tipo rama)
normal y blanco
o chocolate en trozos
algunos berries
Preparación
Precalentar el horno a temperatura media. Forrar con papel mantequilla un molde de
20cm o 24. (yo usé de 24 porque no tengo más pequeño pero quedó bien)
Reservar.
En un bol poner el chocolate y derretir a baño maría retirar del calor y dejar entibiar.
En un bol batir la mantequilla con el azúcar hasta que esté espumosa, agregar las yemas de a una , batiendo bien despues de cada adición.
Añadir el chocolate derretido, las almendras molidas, la harina y el polvo de hornear.
La mezcla debe quedar suave.
En otro bol batir las clara con la sal hasta que estén firmes, pero no secas.
Incorporar la crema de chocolate con movimientos envolventes.
Verter la mezcla en el molde preparado.
Cocinar en el horno de 40 a 45 miutos o hasta que sólo el centro estéun poco húmedo.
No debe quedar sobrecocido.
Dejar enfriar y luego desmoldar para trasladar a un plato de torta.
Almíbar
En una ollita poner el azúcar, agua y cáscara de limón.Hervir hasta disolver el azúcar.
Agregar el jugo de limón.Retirar del calor y reservar.
Relleno
En un recipiente mezclar el agua fría con la gelatina sin sabor, .Disolver a baño maría, agregar una taza de crema y calentar hasta hervir.
En una licuadora o procesadora colocar el chocolate picado, agregar la mezcla de crema caliente,.Procesar hasta disolver el chocolate.
Agregar el resto de la crema, huevos y vainilla.Procesar.Verter a un bol y dejar enfriar.
Luego batir con batidora 5 a 8 minutos o hasta que la crema de chocolate esté cremosa y suave como un mousse.
Cortar el bizcohuelo por la mitad y poner en un plato de torta. Mojar con la mitad del almíbar reservado.Rellenar con una parte de la mousse de chocolate.Cubrir con la otra parte del bizcocho.
Mojar con el resto del almíbar o sirope.
Luego con el resto de mousse tapar la torta en forma pareja por los costados y encima.
Adornar con virutas o ramas de chocolate blanco y negro o trozos de chocolate con algunas frambuesas si se quiere.
Dejar en el refrigerador por 1 hora antes de servir.
