The other day a good friend of mine asked me if I could make some cupcakes for the birthday of his daughter who is 3 years old, is widely used in the Birthdays (including weddings and other) in serving cupcakes instead of cake, I for kids ideal match, especially those who are little, they love these more than cake.
Anyway I said OK but I hired my daughter who is wonderful to decorate and this week with other thousands of things we had to do we finally test this recipe (there are many recipes for frosting) and we loved it .
I decorate someones but most of these was garnish by María Esperanza, my daughter, she loves to make it.
Here is the recipe if you want to try.
I adapted the cupcakes recipe from Platos y Copas, 2010.
Ingredients
(12 cupcakes)
Dough
2 eggs
3/4 cup of sugar
1 teaspoon of vanilla
1 cup of milk
1/2 cup of corn oil
2 cups of flour all purpose
2 tablespoon of baking powder
1/2 cup dark chocolate(bitter) chopped
2 tablespoon sweet chocolate powder
1 spoonful of milk
frosting
125 grs. cream cheese softened
100 grs. of butter unsalted softened
2 cups of icing sugar
some colours to garnish
and flowers or others for garnish
(in special stores)
Method
Preheat oven at 170°c.
In a bowl beat the eggs with sugar until will foamy.
Add the vanilla, milk and oil.
Beat to incorporate.
Add the flour and baking powder.
Mix and set aside.
In other bowl with a sauce pan with water (bain marie) melt the chocolate with the spoonful of milk by about 1 or 2 minutes, stir all the time, Cut the fire and incorporate to the batter. Mix well.
In place muffin tin and fill capsules of paper with this mixture.
Bake by 18 to 20 minutes or until dry and firm.
Remove and cool completely before decorating.
Frosting
Soften cream cheese, add butter, mix well and then adding a little sugar, mix well.
Divide into two or three bowls and addsmall drops of color into.
To decorate fill a plastic sleeve and keep trying to decorate with flowers or otherwise. Keep them at fridge to keep firm.

El otro día una amiga me preguntó si podía hacerle unos cupcakes para el cumpleaños de la hija que cumple 3 años, se usa mucho en las clebraciones infantiles en vez de tortas sobre todo en niños pequeños, les encanta el cupcake y es hasta más fácil para comerselo.(Incluso se hacen cupcakes con motivos especiales no sólo para cumpleaños, Bodas,bautizos etc.)
Dije que si pero le pedí ayuda a la Espe (mi hija) porque es fantastica para adornar (es como artista) así que hicimos una prueba el Sábado pasado y nos gustó mucho la receta.
Esta receta está adaptada de Platos y Copas 2010.
Ingredientes masa
(12 cupcakes)
2 huevos
3/4 taza de azúcar
1 cucharadita esencia de vainilla
1 taza de leche
1/2 taza de aceite de maiz
2 cucharadas de polvos de hornear
1/2 taza de chocolate bitter picado
2 cucharadas de chocolate en polvo
1 cucharada de leche
moldes para muffins
Frosting
1/2 pan de queso crema (125 grs.)
100 grs. de mantequilla sin sal suavizada
2 tazas de azúcar glass o en polvo
Preparación
Precalentar el horno a 170°c.
En un bol batir los huevos con el azúcar hasta que estén espumosas.
Agregar la vainilla,la leche y el aceite y seguir uniendo hasta incrporar bien.
Añadir la harina y los polvos de hornear.Mezclar y reservar.
En una olla a baño maría, derretir los chocolate con la cucharada de leche revolviendo siempre, hacerlo a fuego bajo.
Incorporar al batido anterior hasta homogeneizar bien.
Repartir en lascápsulas de papel que se colocan dentro de los muffins.
Hornear de 15 a 20 minutos. O hasta que esten secos y firmes.
Retirar y dejar enfriar.
Para decorarlos deben estar totalmente frios.
Frosting
En un bol mezclar el queso crema, la mantequilla y agregarle el azúcar glass de a poco. Unir bien.
Dividir para hacer dos o tres colores. Solo poner unas gotas. Con una manga plástica rellenar con la crema y adornar.hacerlo como en círculo
Adornar con flores u otros.
Cuando estén listos colocarlos en el refrigerador así la mezcla se asienta y queda más compacta.
Tip: Los adornos como flores y otros se encuentran en lugares especializados (como Cherry) las mostacillas y perlitas en los Supermercados.
