Chile pepper chicken -Ají de gallina (A peruvian recipe)














Ají de Gallina (Spanish for chili pepper chicken) is a traditional Peruvian dish which has its roots in the social upheaval of the French Revolution in 1789.
Chefs working for wealthy families lost their jobs after French aristocrats were imprisoned and executed. Some of these chefs travelled to the New World, including Peru, bringing with them French culinary expertise.
 Wealthy Peruvian creole families hired them to demonstrate their wealth to the ruling Spaniards. The fusion of local cuisines with French cooking traditions led to many new recipes, including ají de gallina.
This is a shredded chicken dish in a spicy sauce flavored with cheese, garlic, nuts and Peruvian chili peppers Peruvians love eating this dish every day possible.


Like many recipes in the world  Ají de gallina born from a mix of french chefs and the local cuisine, is a nice and lovely dish.
Here in Chile we eat and prepare a lot of Peruvian food because we love it!
I make always. I posted this when I begin blog but I think the pictures do not do justice and this recipe is a little different than the first and is absolutely yummy!

 
Ingredients

600 grs.boiled chicken (I make a breast)
6 o7 slices of white loaf bread
1 onion chopped
1/2 cup of vegetable  oil
1 teaspoon of grinded paprika
salt  pepper
 1 Chile pepper chopped  without seeds (or ají paste)
3 tablespoon of parmesan grated cheese
1/2 cup of grinded waltnuts
1 tin of evaporated milk
3 boiled eggs
2 garlic clove
turmeric powder

Method

Boil chicken in water with salt and pepper.. Remove bones and break into bite size pieces keeping the resulting children stock..
Soak the bread in the evaporated milk,then stir, it should be like puree.

Vegetable oil in a large saucepan over medium heat. Stir in minced garlic and minced onion; cook until the onion has softened and turned translucent, about 5 minutes. Stir in shredded chicken and aji  until heated through. Pour in bread puree and cook until hot, stirring frequently. Add more chicken stock if needed to keep from getting too thick. Season with turmeric and simmer for 5 minutes more.

Add the chopped waltnuts-
Serve with boilked potatoes and pieces of boiled eggs.

Ají de gallina (receta peruana)











El Ají de gallina es un plato que viene del tiempo de la revolución francesa, alrededor del 1700.
Se cree que este plato lo inventaron chefs franceses que despues de la Revolución se vinieron a América del Sur buscando nuevos horizontes.
Aqui en América unieron sus conocimientos con platos de cocina  peruana, o sea  ya nace la comida fusión.
En todo caso es un plato delicioso que hago siempre.
Si tienen niños ponganle poco ají o separen una porción aunque a los mios les día ají de gallina cuando tenían unos 4 años.
Si pueden conseguir ají peruano (en el Jumbo o en la Vega) es mucho más sabroso y no tan picante, yo ocupé ají verde picado pero no demasiado.

Ingredientes

600 grs. pollo cocido.
6 o 7 tajadas pan de molde blanco sin las orillas
1 cebolla picada fina
1/2 taza de aceite vegetal
1 cucharadita de paprika molida
sal y pimienta
1 ají verde picado o ají amarillo peruano
3 cucharadas de queso rallado
1 tarro leche evaporada
1/2 taza de nueces
3 huevos duros en tajadas
2 dientes de ajo
cúrcuma en polvo

Preparación

Cocinar la pechuga o presas de pollo con sal y pimienta.
Cuando esté listo retirar los huesos y el pellejo. Reservar el caldo.
Remojar las tajadas de pan en la leche evaporada, dejar un rato y revolver hasta que se forme una especie de puré.

En un sartén poner el aceite y agregar la cebolla y el ajo, cocinar hasta que la cebolla esté tierna.
Agregar el pollo desmenuzado y el ají, revolver bien.
Agregar el pan remojado revolver y verificar la sazón, agregar si es necesario má sal o pimienta.
Si se quiere más espeso se puede agregar más caldo de pollo.
Agregar la cúrcuma en polvo y cocinar por unos 5 minutos.
Agregar las nueces picadas.
Dejar reposar un poco.
Servir con papas cocidas y las tajas de huevo duro.

Vanilla mini cupcakes











All of you that love  make cupcakes know this is very serious, you make someones and other day say I want to make others and etc,etc.
So, after the others I show you I bought a wonderful and nice mini cupcakes pan and I love it.
I made these mini cupacakes that are wonderful for birthdays, parties or other time.
You can garnish like you want and the recipe is simple. enjoy!
I garnish with lavender,m & m, little silver balls, sugar flowers, etc.

I adapted this recipe from Joy of Baking  recipes.




IngredientsButtercream Frosting:
110g/4oz butter or margarine, softened at room temperature
200g/ granulated sugar
2  eggs, lightly beaten
1 tsp vanilla extract
1  1/2 cup all purpose  flour
1 1/2 teaspoon of baking powder
2  tablespoon of milk.




Buttercream Frosting:

230 grs  confectioners sugar (icing or powdered sugar), sifted
1/2 cup (113 grams) unsalted butter, room temperature
1 teaspoon pure vanilla extract
2 tablespoons milk or light cream
Assorted food colors






1.Preheat the oven to 180C and line a 12-hole muffin tin  or 24 if are little with paper cases.


2.Cream the butter and sugar together in a bowl until pale. Beat in the eggs a little at a time and stir in the vanilla extract.




3.Fold in the flour  and baking powder using a large spoon, adding a little milk until the mixture is of a dropping consistency. Spoon the mixture into the paper cases until they are half full.




.Bake in the oven for 10-15 minutes, or until golden-brown on top and a skewer inserted into one of the cakes comes out clean. Set aside to cool for 10 minutes, then remove from the tin and cool on a wire rack.
 

In an electric mixer, or with a hand mixer, cream the butter until smooth and well blended.
Add the vanilla extract. With the mixer on low speed, gradually beat in the sugar. Scrape down the sides of the bowl. Add the milk and beat on high speed until frosting is light and fluffy (about 3-4 minutes). Add a little more milk or sugar, if needed. Tint the frosting with desired food color.

Mini cupcakes de vainilla








Si algunos de ustedes (lo más probable que sí) ha hecho cupcakes entenderá que esto de los cupcakes es absolutamente adictivo, uno prueba recetas, decoraciones o ve otra receta en fin.
Solo los que aman la cocina me entenderán. Otros pensarán que estoy loca.
Hice estos minicupcakes cuando me compré un molde especial de mini cupcakes o pastelitos.
Y me lanzé por supuesto. A veces soy muy arriesgada.(en serio)
Estos mini cupcakes son estupendos para cumpleaños, fiestas o lo que sea.
Se pueden adornar como uno quiera. Yo usé flores de  lavanda, m&m, mostacillas, perlitas, flores de azúcar, etc. Desplieguen su imaginación.


Ingredientes

110 grs de mantequilla o margarina
200 grs. de azúcar granulada
2 huevos ligeramente batidos
1 cucharadita extracto de vainilla
1 1/2 taza de harina sin polvos de hornear
1 1/2 cucharadita polvos de hornear
2 cucharadas de leche

Frosting o cubierta

230 grs. de azúcar impalpable
o azúcar glass
1/2 taza de mantequilla temperatura ambiente
1 cucharadita extracto de vainilla
2 cucharadas de leche o crema


Preparación

Calentar el horno a 180°C, preparar con cápsulas de papel los moldes para cupcakes si es grande (12) si son pequeños 24.
Unir la mantequilla y el azúcar en un bol.
Agregar los huevos batidos y el extracto de vainilla.
Unir  a la harina y los polvos de hornear. agregar la leche. Unir bien.
Con una cuchara llenar las cápsulas de papel dejando un borde.
Hornear de 10 a 15 minutos o hasta que estén dorados y secos.
Dejar enfriar antes de decorar.

Frosting

Con una batidora o a mano batir la mantequilla hasta que esté suave.
Agregar el extracto de vainilla.
Agregar gradualmente el azúcar uniendo bien.
Agregar la leche y batir unos 3 a 4 minutos hasta que la crema sea consistente y suave.
Si se quiere más espeso agregar más azúcar, más suave o cremoso agregar un poco de leche.
Para decorar es mejor que esté espeso.
Despues de decorar dejar reposar para que tengan consistencia.

Sweet potatoes yummy dessert and some Awards..














I love sweet potatoes and so when I can I love to make dessert, here we  consume more sweet potatoes for dessert.
 This is a rich texture  and a meringue layer and delicious dessert recipe from Martha Serani, a chef de Chile.
Hope you enjoy!


Ingredients

600 grs. sweet potato



thick diced


orange peel for flavoring


3 egg yolks


1 cup cream

1 teaspoon vanilla extract


6 tablespoons sugar


meringue

4 egg whites


1 cup sugar


1 pinch of salt

Cinnamon for sprinkle

method



In a pot boil water with orange peel, add the potatoes peeled and sliced.

Cook until the sweet potatoes are  very soft and tender.

Cook by 25 minutes.

Discard orange peel and grind the potatoes in a food processor.


In a bowl, mix sweet potatoes together with the yolks, cream, sugar and vanilla essence.


Place in a large dish  that can go in the oven.


For the meringue beat egg whites with pinch of salt, prepare a syrup with sugar and put over the beat egg whites, beat until firm.


Spoon the meringue over the mixture of sweet potato and place in the oven to 180 ° c


by 20 to 25 minutes or until top is golden brown.


Remove from oven and sprinkled  with cinnamon and  serve at room temperature or cold .

Postre delicioso de camotes (boniato)















Postre de camotes y algunos premios


Me encanta el camote(boniato) especialmente para postres y pies, para los que conocen a la lúcuma les diré que es muy parecido.
En el Líder y en el Jumbo siempre hay y por supuesto en la Vega pero personalmente me cuesta mucho ir a la vega.
Para un postre con unos 500 o 600 grs les sale un postre para seis personas.
Es absolutamente dleicioso.
Esta receta la adapté  de una de la martita Serani que tiene muy buenas recetas y es chef del suplemento Ya de El mercurio.

Ingredientes

600 grs.de camote (boniato)
picado en cubos gruesos
cáscara de naranja para cocer los camotes
1 cucharadita de esencia de vainilla
3 yemas
1 taza de crema
6 cucharadas de azúcar

Merengue
4 claras
1 taza de azúcar
canela para espolvorear

Preparación

En una olla poner a cocer los camotes pelados y en rodajos con la cáscara de naranja.
Dejar cocer hasta que esten blandos y tiernos por lo menos unos 25 minutos.
Estilar, descartar la cáscara de naranja y moler el camote en una porcesadora.
En un bol junta el puré de camote con las yemas, la crema y el azúcar y la esencia de vainilla.
Poner en una fuente o budinera que pueda ir al horno.
Batir las claras a nieve con una pizca de sal
Para el merengue preparar un almíbar de pelo con el azucar,  y agregar suavemente hasta que se enfríe al merengue batido.
Prender el horno a 180 °c  y vaciar el merengue sobre el camote.Cocinar por unos 20 minutos o hasta que esté dorado.
Retirar del horno espolvorear con canela y servir a temperatura ambiente o frío.

Rustic Apple Galette










A lot of time I wanna make this Rustic Apple galette and was amazing and nice, never I try before, love apples, always you have apples and are amazing in dessert and cakes and these apples are from my apple trees, Im so proud, he,he.
I adapted this recipe from countryliving recipes I love Country Living, and Goodhousekeeping their recipes are absolutely nice.



Ingredients

2 1/2 cups all purpose flour, and more for surface
6 tablespoons of sugar
1/4 teaspoon salt
130 grs. butter (cold in cubes)
ice water
4 large Empire or Granny Smith peeled and cored
and cut in thick slices
zest of a large orange
more 2 tablespoon of orange juice
cinnamon  ans sugar for  sprinkle


Method

 In a large bowl combine 2 1/2 cups of flour, 3 tablespoon of sugar and salt.
Add cubes butter , cut into flour with a pastry blender. Mix in 3 or 4 tablespoons of ice water(If is needed add some flour.
Shape dough into a disk, wrap in plastic and refrigerate for ate least 1 hour.

2.In a large bowl toss apples with orange juice and zest.
Preheat oven at 200 ° c.

3. Roll out dough on a well floured surface to a  26 cm. diameter.
Transfer to a parchment lined baking sheet.

4.In a small bowl mix together remaining 1 tablespoon flour and 2 tablespoon of sugar sprinkle over dough.
Layer apples on dough leaving about 2 inch border.
Fold edges over apples lightly brush apples with melted butter and dough with 1 tablespoon of water.
Sprinkle sugar and cinnamon over apples and dough.
Bake until crust is golden and apples are tender about 40 minutes.
Let cool in a rack and then lift the parchment carefully  and place the gallete in a dish.
Enjoy!

Tarta galette de manzanas







Hace mucho que quería hacer esta receta. A veces he comentado que veo algo o leo (depende de lo antigua que es la receta) ya saben que antiguamente no teníamos fotos, mi abuelita Chela  hacía dibujos en su cuaderno, muy ingenioso!
Bueno vi esta receta en una revista de Country living me encantó siempre había querido hacerla, pero son tantas las recetas pendientes! Cuando empezé este Blog mi hijo me decía y que pasa si se te acaban las recetas? Le dije honestamente no creo, tengo tantas que  no sé si alcanzaré a hacerlas todas. (y siempre van saliendo nuevas sobre todo en los blogs)
Bueno aquí está la recomiendo absolutamente,  la masa es  deliciosa.
Y el relleno de manzanas tambien.

Ingredientes

2 y 1/2 tazas de harina sin polvos de hornear
6 cucharadas de azúcar
1/4 cucharadita de sal
130 grs. de mantequilla
agua helada para unir
4 manzanas grandes Fuji o Granny Smith
peladas, sin semillas y cortadas en tajadas delgadas
la ralladura de una naranja
2 cucharadas de jugo de naranja
azúcar y canela para espolvorear

Método

En un bol grande unir la harina, más tres cucharadas de azúcar y la sal.
Agregar la mantequilla helada en cubos mezclar con la harina haciendo migajas, Agregar 3 a 4 cucharadas de agua fria y unir haciendo una masa, envolver en un film plástico y llevar al refrigerador por al menos 1 hora.

En un bol grande mezclar las manzanas, el jugo de naranja y la ralladura de naranja.

Precalentar el horno a 200°C.
Estirar la masa con un rodillo sobre una superficie enharinada.

Formar un círculo de unos 26 cm de diámetro.
Colocar sobre papel mantequilla en la lata de horno.
En un bol pequeño mezclar una cucharada de harina con dos de azúcar.
Espolvorear sobre la masa.
Formar las manzanas en forma de abanico sobre la masa.Dejando un borde unos 4 cm. alrededor.
Doblar la masa en las orillas hacia dentro.
Mojar con un poco de  agua la masa.
Pincelar lasmanzanas con mantequilla derretida.
Espolvorear con azúcar y canela.
Llevar a horno por unos 40 minutos hasta que esté la masa  dorada y las manzanas tiernas.
Dejar enfriar y con cuidado retirar el papel mantequilla.

marshmallows easter pie










Since I was a child I remember that in my house we celebrated Easter, so small was that (like many children) only got this bunny brought eggs and we believe it absolutely.




We live in a house with a garden, I must have had 5 or 6 and my mom  put the eggs in the garden was wonderful and magical! and so for many years.


Then I really understand the whole meaning of Easter that is wonderful for those who are believers but never let the bunnies.

(To this day my mom also her eggs behavior)

Then when the children arrived we did the same thing and they live the magic , even today (every Easter) I leave on the nightstand when they sleep when they awaken to find them.


They are also the sígn of our joy at the Resurrection.

So when I think about doing something for Easter  usually has eggs or bunnies.


And I found this pie that I adapted (the original idea was a little different) filled with marshmallows and a crust. It is not difficult and is cute.

Ingredients (8 servings)


•1 1/2 cups thin chocolate cookie crumbs



•2 tablespoons sugar


•1/3 cup butter or margarine, melted


•3 cups mini marshamallows

•1 can  sweetened condensed milk


•2 cups whipping (heavy) cream

shredded coconut  and candy eggs for garnish



Method:


Spray pie plate with cooking spray. In small bowl, mix cookie crumbs, sugar and butter. Press evenly in bottom and up side  ceramic or glass pie plate.

In large microwavable bowl, place marshmallows and milk. Microwave uncovered on High about 3 minutes, stirring once, until marshmallows are melted. Refrigerate about 25 minutes or until mixture mounds slightly when dropped from a spoon.


In chilled medium bowl, beat whipping cream, with electric mixer on high speed until stiff. Stir marshmallow mixture until blended; fold into whipped cream. Mound mixture into crust. Cover; freeze about 5 hours or until frozen. garnish with coconut and eggs. Let stand at room temperature 10 to 15 minutes before cutting. Cover and freeze any remaining pie.

Tarta de Pascua con marshmallows











Desde que era pequeña la visita del Conejo de Pascua para estas fechas me ha encantado, desde que era muy pequeña, (debo haber tenido 5 o 6 años no más) y me acuerdo buscando los huevos de dulce que mi mamá dejaba en el jardín.
Apenas abriamos los ojos el Domingo de Resurrección.
Por supuesto que era muy chica para entender lo que significa Semana Santa, despues lo supe pero nunca dejé al conejito de Pascua.
Cuando llegaron nuestros hijos a nuestra casa  continuamos esta dulce tradición que por supuesto les encantaba.
Hasta el día de hoy en la noche les dejo los huevitos para que los encuentren en la mañana cuando despierten. Y es como sagrado para ellos.
Para nosotros los huevos de chocolate o dulces simbolizan la alegría de la resurrección .
Esta receta está adaptada de una de Betty Crocker recipes.

Ingredientes

1 y 1/2 taza de galletas de chocolate molidas
2 cucharadas de azúcar
1/3 taza de margarina o mantequilla derretida
3 tazas de mini marshmallows
1 tarro de leche condensada
2 tazas de crema para batir
coco desmenuzado o rallado para decorar
y huevos de dulce o conejitos

Preparación

Preparar un plato de pie enmantequillando o con aceite en spray.
En un bol mezclar las galletas molidas, la mantequilla derretida y el azúcar, mezclar y colocar como base para el pie en el molde.Presionando para que se forme la costra de galletas.Reservar.

En un bol mediano mezclar los mini marshmallows (hay en todos los super, yo ocupé  unos del Lider de esa marca americana que traen ahora) cpon la leche condensada. Llevar a microondas por tres minutos en potencia alta.

Retirar y revolver, ver si los marshmallows están derretidos, si no colocar unos 30 seg. más.
Llevar  a refrigerador por lo menos por 25 minutos hasta que la mezcla esté espesa .

En un bol frío batir la crema hasta que esté firme, unir con movimientos envolventes la crema batida con la mezcla de marshamallows,unir bien.
Vaciar esta mezcla sobre el molde que está con la base de galletas.
Llevar al congelador por unas 5 horas o hasta que esté firme.
Antes de servir retirar un poco antes y despues volver a congelar.
Mantener en el freezer lo que quede.

Crab pudding review (Pastel de jaiba )National day of Chilean food











This is a really classic from Chile, "Pastel de Jaibas" (Crab pudding)


This pudding in its own shell crab is a typical of my country, I did it for the past summer when we went to the beach a few days.

It is absolutely delicious, I did it in their shells but can be done in small bowls, ceramic or clay.

This recipe is from Coco Pacheco chef, a fantastic chef from Chile specially in fishes and sea food.

I made this review because tomorrow April 15th is the national day of chilean food! and my friend Anabella asked me if I can post about it. Please visit her blog , she has a wonderful and nice blog about chilean food with nice recipes.
I think this is one of my favorites chilean meals


Ingredients (6 servings)


2 tablespoon of oil


1/2 teaspoon of red pepper grinded


2 cloves galic grinded


1 cup of chopped onion

1 pinch of oregano


1 cup of fish soup or seafood soup


500 grs. crab meat shredded (or frozen crab meat)


8 slices white sandwich bread without crust soaked in milk


4 tablespoon of parmesan cheese grated

2 tablespoon of butter


salt and peper


3/4 cup heavy cream

METHOD


1. In a saucepan heat the oil and red pepper, and cook with the garlic cloves and chopped onion, until are tender.


2. Add the oregano and the fish soup, cook to medium heat until boil.

3.Add the the crab meat to this mix and stir .
4. Add the soaked bread, the grated cheese and butter.Seasoning with salt and pepper and stir all the time until is thick .


5. Set aside and add the heavy cream and cook by a while.

6. Empty the crab mix in a clay or ceramic dish or little ceramic bowls.Or use teh crabs shell clean and dry.Look great.


Sprinkle with grated cheese Cook at oven to medium heat until are golden (About 20 minutes)


Serve inmediately.

Pastel de Jaibas (Pastel de cangrejo)







Este Pastel de Jaibas es un clásico de mi país, Chile.
Lo hice para el verano anterior  cuando estuvimos unos días en la playa.
Esta receta es de Coco Pacheco un muy buen Chef de Chile especialmente en pescados y mariscos , tiene un restaurante delicioso.
Vuelvo a publicar esta receta porque mi amiga Anabella del blog http://cocinartechile.blogspot.com/   y nos pidió si podiamos hacer algo para mañana 15 de Abril  que  es el día  de la comida chilena.
Y este es uno de mis platos favoritos.

Ingredientes (6 porciones)

2 cucharadas de aceite


1/2 cucharadita de paprika o pimentón molido


2 dientes de ajo picados finos


1 taza de cebolla picada fina


orégano


1 taza de sopa de de pescado o de mariscos


500 grs, de carne de cangrejo o jaiba desmenuzada (tambien puede ser congelada)


8 rebanas de pan blanco de molde (en tajadas) sin las cortezas

y remojadas previamente en leche


4 cucharadas de queso rallado


2 cucharadas de mantequilla


sal y pimienta


3/4 taza de de crema o nata espesa


Preparación


1. En una olla calentar el aceite a fuego medio con el pimentón molido y cocinar con los ajos y la cebolla hasta que estén blandos sin dorar.

2. Agregar revolviendo el orégano y caldo de pescado, llevar a fuego medio revolviendo.

3. Limpiar la carne de cangrejo para eliminar cualquier dureza, (se puede hacer tambien con carne de cangejo congelada) y se añade a la mezcla anterior. Revolver.


4. Agregar revolviendo el pan remojado en leche, el queso rallado y mantequilla. Sazonar con sal y pimienta, revolver hasta que la mezcla espese y hierva.


5. Al final agregar la crema o nata espesa, cocinar por un rato..

Vaciar la mezcla en pailas de greda o en bols de cerámica o en los caparazones de jaiba.
Espolvorear con queso y gratinar por unos 20 minutos,
Servir inmediatamente.

Noddle pudding with panko and basil









Dearies this dish is absolutely nice and yummy comfort food, when we eat the other day I think was the best definition.
Goes with panko and I understan why I love panko  so much is the best for this type of food and is so light and nice.
Panko may sound exotic and unusual, but it's simply the Japanese version of breadcrumbs. However, their flakiness makes them crispier than standard breadcrumbs, and they tend to be healthier because they absorb less oil. Panko makes delicious breading for chicken, fish or seafood; or makes a great topping for lasagna or casseroles.

Íngredients

1 cup panko bread crumbs
1 tablespoon  butter, melted
400 grs. eggs noddles cooked and drained
1 cup sour cream or greek yogurt
1/2 cup heavy cream
1/2 cup grated parmesan cheese
1 medium onion chopped
1 teaspoon of salt
2 tablespoon of chopped basil
1 tablespoon  of red pepper chopped

Method

Boil and drain the noddles.
Preheat the oven at 200 ° c.
In a small bowl  toss panko
with melted butter and set aside.
Butter six  1 cup ramekins.

In a large bowl combine noddles, 1 cup of sour cream or yogurt, the heavy cream, parmensan cheese and onion chopped, red pepper, basil  and salt. Mix all.

Divide noddle mixture between prepared ramekins and top with reserved panko bread and butter.
Bake for 45 minutes or when look crips and golden.
garnish with basil. and  sprinkle with cheese  over the ramekins.
Serve hot.

Budin de fideos con panko y albahaca al horno







Este plato es lo que se llama comfort food, algo delicioso pero no complicado e ideal para comer en cualquier momento.
Un plus es que a los niños les encanta (comprobado)
Uno muchas veces tiene fideos y los hace tal cual con huevo o con otra cosa.
Esto le da un toque distinto y que vaya al horno es delicioso.
Yo usé corbatitas, pero pueden ser caracoles o los que tengan.
Lleva panko que ya expliqué en una receta anterior que se encuentra en las tiendas orientales (o naturales) que es una especie de migas de pan suaves y deshidratadas, pero tambien se puede usar pan rallado.
Más adelante si no encuentran albahaca fresca se puede hacer con albahaca deshidratada.
(En el  Jumbo debe haber panko tambien)

Ingredientes

1 taza de panko o 3/4  taza pan rallado
1 cucharada de mantequilla derretida
400 grs. de fideos tipo corbatitas o caracolas
cocidos y escurridos
1 taza de sour cream o yogurt natural
1/2 taza de crema espesa
1/2 taza de queso parmesano rallado
1 cebolla mediana picada
1 cucharadita de sal
2 cucharadas de albahaca picada
1 cucharada de pimiento rojo picado

Preparación

Cocer los fideos al dente, drenar y reservar.
Precalentar el horno a 200 °c.
Mezclar en un bol el panko (o pan rallado con la mantequilla derretida)
Reservar.
Enmantequillar pocillos de greda o cerámica.

En un bol más grande mezclar los fideos, la sour cream o yogurt, la crema, el queso rallado, la albahaca picada,la cebolla,  sal y el pimiento rojo. Mezclar bien.

Repartir esta mezcla en los pocillos de greda o cerámica.
Repartir el panko con la mantequilla sobre la mezcla.
Llevar a hornbo por unos 45 minutos o hasta que esté ligeramente dorado.
Adornar con hojas de albahaca y espolvorear con queso rallado.

Eton Mess (a very british dessert)






Eton Mess is a delicious combination of fresh strawberries, whipped cream, and meringue cookies. Its name "Eton Mess" pays tribute not only to the place where it was invented, Eton College , but also to the fact that the cream, strawberries and broken meringue cookies are all just mixed together in one big bowl that looks, like a bit of a mess.




This is a very simple dessert that needs to be assembled just before serving so the pieces of meringue stay nice and crisp.starters, the meringue cookies can be store bought or if you prefer making your own, as I do, than they can be made several days beforehand.

Special dessert for the people are in Spring in the North hemisphere!

I adapted this recipe from a recipe of Jennifer Paterson, a british chef.

Ingredients (6 servings)

500 grs. strawberries (fresh or freeze)
1/2 cup of sugar
2 teaspoon of kirsh or cherry brandy
1 large meringue or 300 grs. little meringues
2 cups of whipped cream

Method

In a bowl place the strawberries (you can use raspberries too) with the kirsh and powder with the sugar.Set aside in fridge about 2 hours.

Cut into the meringue in pieces and gently add to the mix of strawberries, add whipped cream and mix gently.



Leave in the refrigerator for a while before serving.
Garnish with mint leaves and some berries .

Este delicioso postre inglés fue inventado en la Universidad de Eton, en Inglaterra, por eso su nombre.

La traducción sería un "postre desordenado" porque se toman los ingredientes y se mezclan.
Es un postre de frutillas o fresas mezclado con crema batida y merengues en trozos, simple y delicioso.

Este postre está adaptado de una receta de Jennifer Paterson una chef británica.

Se puede hacer con frutillas frescas o congeladas.



ETON MESS

Ingredientes (6 porciones)

500 grs. de frutillas (frescas o congeladas)
1/2 taza de azúcar
2 cucharaditas de Kirsh o brandy de guindas
1 disco grande de merengues o
300grs. de merengues  pequeños.
2 tazas de crema batida

1. En un bol mezclar las frutillas y espolvorear con el azúcar, agregar el kirsh y dejar reposar por unas 2 horas.

2.Partir en trozos el merengue o los merengues.

3.Agregar suavemente los merengues a la mezcla de frutillas.

4.Incorporar la crema batida y mezclar suavemente.

Dejar en el refrigerador hasta el momento de servir.
