zucchini and ricotta rolls











I find this recipe a time ago but I made some changes and have to say was good!

I love zuchinni but this was a special thing, maybe by the ricotta, I dont know is really light and yummy.
Is a special recipe to veggies lovers.  But is good to all love ricotta too.

Ingredients (4-5 servings)

4 medium zucchinis
cut into thin slices across
Olive oil to brush
1/3 cup sesame seeds

Filling
1 1/2 cup of ricotta cream
1/2 cup of parmesan cheese grated
1/4 teaspoon of nutmeg powder
salt
1 yolk


Method



Preheat oven to 180 ° c.

On a baking tray place the zucchinis cut in slices. Brush with olive oil or sunflower oil.

Bake for 15-20 minutes until cooked through, not browned.

Remove from oven and let cool.



Prepare the filling.


In a medium bowl place the ingredients, ricotta, Parmesan, nutmeg  yolk  egg and salt.


Mix well with a wooden spoon until it becomes a smooth paste.


Prepare an aluminium dish  or similar to hold the rolls.


Place a little oil.


On a flat surface  place the zucchini slices.


At the top of each put a little of the filling mixture, roll to form a small tube.


Secure with a skewer wood.


Sprinkle with sesame seeds.


Cover with foil and bake for about 25-30 minutes.
Let stand a few minutes before serving. Serve with salads or rice.

Rollos de zapallito italiano con ricotta (calabacines con ricotta)





Hace tiempo encontré esta receta (de repente entre tanta receta se traspapelan) y siempre me tincó hacerla, sólo que le hice algunos cambios y  puedo decir que me encnató, es liviano, delicioso y fácil, y es que me encanta la ricotta y los zapallitos italianos, se puede servir como una entrada o aperitivo, pero tambien como una comida.
Nosotras lo comimos sólo con tomates y quedó muy bien. Es una  receta  que es buena para cualquier época del año.Mal que mal ahora hay zapallitos o calabacines casi todo el año.




Ingredientes  (4 a 5 porciones)

4 zapallitos italianos (calabacines)
cortados en lonjas finas a lo largo
aceite de oliva o de girasol para
pincelar las lonjas

Relleno
1 1/2 taza de crema de ricotta
1/2 taza de queso parmesano rallado
1/4 cucharadita nez moscada
sal
1 yema de huevo


Preparación

Preparar el horno a temperatura media (180° c)
Sobre una lata de horno aceitada colocar las lonjas de zapallito
para que se cocinen un poco. No deben dorarse. Cocinar  por unos 15 a 20 minutos.
Preparar el relleno
En un bowl mediano mezclar la ricotta, la yema de huevo, queso parmesano, nuez moscada y sal, unir bien haciendo una pasta homogénea.

Sobre una superficie lisa colocar las lonjas de zapallo para rellenarlas, en la parte superior colocar una cucharadita del relleno y enrollar . Sujetar con un mondadientes o brocheta para que no se desarmen.

Colocar los rollos  en una fuente para horno.
Espolvorear el sésamo y cubrir con papel aluza. Llevar a horno por unos 30 minutos.
Retirar y dejar reposar unos 10 minutos.
Servir con ensaladas o con arroz.
