Sweet potato biscuits



Sweet potato is new for me I always see at Supermarket but never try, but I was curious about some recipes I always see, I love them now.
Sweet potatoes are native to the tropical parts of South America, and were domesticated there at least 5000 years ago.
 Batatas was between the Yucatán Peninsula of Mexico and the mouth of the Orinoco River in Venezuela. The 'cultigen' had most likely been spread by local people to the Caribbean and South America by 2500 BC. Zhang et al. (1998) provided strong supporting evidence that the geographical zone postulated by Austin is the primary centre of diversity. The much lower molecular diversity found in Peru-Ecuador suggests that this region be considered as secondary centre of sweet potato diversity.

For me sweet potato is similar to pumpkin but different is used a lot in recipes in USA and CANADA.
Here we call Camote and in Spain called batatas.
Mommy talk me Camote was very used many years ago but you know many foods of the past the people dont know.
So I m glad this recipe help to many people use Camote (sweet potato).

This recipe is adapted from Country Living from April 2008  http://countryliving.com/ 

Ingredients

2 1/2 cups all purpose flour
2 tablespoons baking powder
1/4 teaspoon ground cloves
1/4 teaspoon cinnamon powder
1/4 teaspoon nutmeg powder
1/8 teaspoon salt
3/4 cup brown sugar
1/2 cup unsalted butter chilled
1 1/2 cups sweet potatoes mashed
2 tablespoon milk





Method

Heat oven at 190° C.
Sit the flour, baking powder, spices,(nutmeg,cinnamon,ground cloves,) and salt in a large bowl.
Use the tips of your fingers to blend in the brown sugar.
Cut in the chilled butter  with a pastry cutter or pulse in s food processor until the mixture resembles coarse, crumbly meal.
Then stir in the mashed sweet potatoes and knead until the dough just holds together..
Turn tne dough onto a lightly floured surface.
Knead gently for  a minute, adding a little flour as necessary to incorporate all the ingredients.
Path the dough in a 1/2 inch circle and let it rest covered with a clean towell for 10 to 15 minutes.

Cut our the biscuits with a 2 inch round cutter dipped in flour.
Gather the scraps, pat out again and cut into biscuits.
Place in  and ungreased baking sheet and brush the  tops with milk.
Bake until golden brown - 10 to 12 minutes. Cool the biscuits on a rack.








Biscuits de batatas o camote

La batata o camote es la primera vez que la ocupo en una receta y me ha encantado.
El sabor es suave y dulce, más bien parecido a la calabaza o zapallo camote, siempre lo veía en el Supermercado pero no habia hecho nada, pero sentía curiosidad por algunas recetas que había visto. Sobre todo en blogs y revistas de USA y Canadá donde se usa mucho.

Mi mamá me contaba que hace muchos años se usaba habitualmente el camote (batata) de postre y en muchas recetas, pero a medida que pasan los años y las personas desconocen las recetas, en parte porque compran  comida ya preparada, se pierden estas recetas,  para mí ha sido un descubrimiento.He decubierto muy buenas recetas con el camote.

La receta

Ingredientes

2 y 1/2 tazas de harina normal
2 cucharadas de polvos de hornear
1/4 cucharadita de canela en polvo
1/4 cucharadita nuez moscada
1/4 cucharadita clavo de olor molido
1/8 cucharadita de sal
3/4 azúcar rubia o sin refinar
1/2 taza de mantequilla sin sal fría
1 y 1/2 taza de batatas hecha puré (camotes)
2 cucharadas de leche

1. Precalentar el horno  a 190° c, para preparar los biscuits unir la harina, polvos de hornear, y las especias (clavo de olor,canela en polvo, nuez moscada) y la sal en un bol grande.
Unir el azúcar a esta mezcla.
Cortar la mantequilla y unirla con u  procesador o con la punta de los dedos.Hacerlo hasta qtenga una contextura migosa.
Unir con las batatas o camote molido. Unir bien.
Colocar la masa sobre una superficie enharinada, amasar suavemente  por un minuto, agregar un poco de harina si es necesario para que queden bien incorporados todos los ingredientes.
Dejar reposar la masa  cubierta por una toalla de cocina por unos 10 a 15 minutes.

Cortar los biscuits con un cortador de pastas de de unos 5 a 6 cm de diámetro enharinado.
Cortar los biscuits y colocarlos en una bandeja de horno y con una brocha pintarlos con un poco de leche.
Cocinar en horno de unos 10 a 12 minutos. Dejarlos enfriar.

  2. Siempre nos sorprendes con recetas novedosas, sabrosas y sencillas.
    En España en tiempos se tomaba batata y se hacían postres con ella, pero ahora no se emplea para nada. Y es difícil encontrar batata en los mercados.

  4. We love sweet potatoes and I've been trying to use them in different ways! I have also been trying different kinds of sweet potatoes, like Boniato. It has white flesh and is a little drier, popular in Cuban dishes.

    en los ingredientes piden 2 tazas de leche...pero no se si es leche evaporada o la leche fresca(esa mas aguadita supongo q es la leche fresca,no?) millllllllllllll gracias!!!

  35. Sweet potatoes are a wonderful vitamin packed vegetable. Americans enjoy sweet potatoes a/k/a yams often. Your biscuits look wonderful. A couple of these biscuits served with butter and honey and a good cup of coffee would make the world good. :-)
