Blackberries Pie (Küchen de moras)









Since I was a child I love pick blackberries, and really we never bought, so when we go to any country side we pick and bring  someones, this was at South (aahh a lovely place) now a lot of years I live  in Santiago, and  is different,  sometimes I find fresh blackberries and other I buy frozen , this tart I think is wonderful with a curious dough recipe,is the  firts time I made and I think the dough is delicious.
When you will se the recipe,(dont worry)  have 1 egg boiled (mashed) but is really OK and have some delicious spices. Is really special.
I used frozen blackberries and was nice., and add  some blackberry jam.





The recipe
Ingredients(dough)

150 grs. butter
100 grs. of sugar
1 egg boiled  and mashed
1 raw egg
200 grs. of flour
2 cloves 
1 teaspoon of cinnamon powder
pinch of salt
pinch of nutmeg powder
orange peel grated
lemon  peel grated

The filling:
3/4 cup of blacberry jam
1 cup of frozen blackberries
2 tablespoon of sugar
1 tablespoon of corn flour

Method filling

In a pot heat  the jam and frozen blackberries and sugar mix and finally the corn flour and when is thickness cut the fire and set aside.


Method

1.First process the boil egg,cinamon powder,cloves,nutmeg and pinch of salt.

2. Place in a bowl this mix and add the lemon peel, and orange peel, and the sugar, mix well.

3. In other bowl, beat the  raw  egg,and the butter, stir well and add the mix spices, add the flour, join well, and knead the dough (if is needed add some flour) .Set aside by 30 minutes.

4. Reserve some dough to the lattice pie and extend with  a roll pin and place into a springform pan.

5. Fill with the mix of blackberries jam and frozen blackberries.

6.With  the dough reserved make the lattices and place over the kuchen.

Preheat the oven at 180° C, and bake for 30 minutes or until is little golden.

Set aside and chill.

Desde que era pequeña me ha gustado ir a buscar moras, en general hay en muchos campos, cuando los españoles las trajeron en un principio era para hacer cercos (por la espinas) pero me imagino que además que se propagó  muy rápido (crece rápido) las moras fueron una descubrimiento maravilloso.
Cuando yo vivía en el sur de Chile siempre ibamos a buscar moras, las comíamos así o hacíamos mermelada.
Ahora desde que vivimos en Santiago (hace unos años) a veces encuentro moras frescas pero es raro, en general se encuentran congeladas pero para esta tarta o küchen quedan igual de buenas.

Esta receta que es primera vez que la hago y es deliciosa, especialmente la masa.No  se extrañen porque la receta lleva un huevo hervido o cocido que se muele bien.Estos más especias y la masa queda muy rica y crujiente.

Küchen o Tarta de moras

Ingredientes masa

150  grs. de mantequilla
100 grs. de azúcar
1 huevo duro o hervido (molido)
1 huevo crudo
200 grs. de harina normal
2 clavos de olor
1 cucharadita de canela en polvo
1 pizca de sal
1 pizca de nuez moscada
cáscara de naranja rallada
cáscara de limón rallallada

Para el relleno

3/4 taza de mermelada de moras
1 taza de moras congeladas o frescas
2 cucharadas de azúcar
1 cucharada de maicena

Para el relleno
Calentar en una olla a fuego bajo la mermelada con el azúcar y las moras congeladas, finalmente agregar la maicena y revolver bien hasta que quede como una mermelada espesa.

Preparar la masa

1. En un procesador moler el huevo cocido con la canela, nuez moscada, pizca de sal,clavos de olor.

2. En un bol colocar esta mezcla de especies, y agregar la cáscara de limón y de naranja, y el azúcar, unir bien.

3.En otro bol batir la mantequilla  con el huevo crudo, agregar la harina y mezclar bien, amasar (si se necesita agregar un poco de harina)dejar reposar durante unos 30 minutos.

4.Reservar un poco de masa para el enrejado. Con el resto estirar la masa con un rodillo para un molde de tarta con fondo removible, forrar con la masa el molde, rellenar con la mezcla de moras, y cubrir con el enrejado que se hace con el resto de masa.

Precalentar el horno a 180° C y cocinar por unos 30 minutos o hasta que esté ligeramente dorado .

Dejar reposar y enfriar antes de servir.

    We used to pick all sorts of berries when we were young. Growing up in Michigan they had the best blueberries, raspberies, and cherries. We had wild black raspberries growing near our house.

  22. I've picked huckleberries (they make a fabulous pie) but never blackberries.
    My daughter loves blackberries with her yogurt when she's home. I have always thought blackberries are not sweet enough for yogurt.
