Orange cream dessert (Postre de crema de naranjas ) Hna. Bernarda





By this time we have a lot of oranges, sweet, and juice's oranges, because the winter is the best to this fruit. And thank's God for this because I saw all yours strawberries in Blogs and I miss the summer maybe only by the fruits.





I take this recipe is from a sweet person: Bernarda Sister, maybe you dont know, but here is so known, live in Argentina and sometimes teach in Gourmet channel, Is a Nun but not typical is so special she cook with love and I love her recipes but maybe here I didn't post before.

I was reading about her and she has 78 years but is travel all Latinoamerican countries and continue teaching cook. Has many books with her recipes.




Many recipes of her are as how Mom, tasty, not difficult and so nice.Really tasted like home!










Ingredients


3 eggs


7 spoonfuls of sugar


1 spoonful of orange peel


3 sponfuls of Orange's juice


1 teaspoonf of lemon's juice


1/2 cup of warm orange's juice


2 envelopes of gelatin unsaborized


1 cup of double cream


1 spoonful of orange's liqueur


Method

Place in a bowl 1 egg and two yolks with 4 spoonfuls of sugar,orange's peel,orange's juice and lemon's juice.Mix well.

Dissolved the gelatin in warm orange's juice and add to the mix.

Heat this mix to Bain Marie and beat until be hot. Take out the fire and chill until is normal temperature.


Beat the whites firm with 3 spoonfuls of sugar as to a merengue.

Whipped the cream when is firm, add the liqueur, the orange'smix and the meringue.

Mix carefully and place in some glasses or little pyrex. Place at Fridge by 1 hour.

Orange's sauce

4 spoonfuls of sugar

1 spoonful of cornstarch

1 cup of orange's juice

1/2 cup of water

2 spoonfuls of jelly orange

1 spoonful of orange's liqueur (optative)

Place in a pot the sugar and the cornstarch mixing well, add the orange's juice slowly and the water, take to the fire to medium heat until simmer.

Take out the fire and the orange'sjelly and liqueur and mix well.

When the desserts of the fridge are firm serve with this orange's sauce.

You may garnish too with pieces of chocolate over the desserts is so nice.

Postre de Crema de naranjas (Hermana Bernarda)

En este tiempo tenemos aquì en el Hemisferio sur (sobre todo bien al sur) (Uruguay,Chile y Argentina) muchas deliciosas naranjas,porque en el invierno es cuando màs se da esta fruta, igual que las dulces mandarinas (Ya harè algo con mandarinas)

Y gracias Dios que tenemos naranjas y mandarinas porque despues de ver en todos los blogs la abundancia de fresas,frambuesas y aràndanos me dan ganas de que llegue el verano pero màs que nada por la deliciosa fruta, bueno ya nos tocarà.

Esta receta es de la Hermana Bernarda, una monja muy dulce y no tìpica, cocina hace muschos años, tiene libros y sale en el Canal Gourmet, es muy conocida en Am+erica Latina, esto lo explico porque seguramente en España no la conocen como acà.

Estaba leyendo que en este momento tiene 78 años y sigue viajando y enseñando.

Muchas recetas de ella son como las de mi mamà, fàciles, deliciosas, realmente como tìpicas de la casa o el hogar.

Ingredientes

3 huevos

7 cucharadas de azùcar

1 cucharada de ralladura de naranja

3 cucharadas de jugo de naranja

1 cucharadita de jugo de limòn

1/2 taza de jugo de naranja tibio

2 sobres de gelatina sin sabor

1 taza de crema o nata

1 cucharada de licor de naranja

Colocar en un bowl 1 huevo y dos yemas junto con 4 cucharadas de azùcar,ralladura de naranja,jugo de naranja y jugo de limòn.Mezclar bien. Disolver en el jugo de naranja tibio los sobres de jalea sin sabor y agregarlo al resto de los ingredientes.

Llevar a baño marìa y batir hasta que estè bien caliente. Retirar del calor llevarlo a agua frìa y continuar batiendo hasta que se enfrìe.

Batir las claras a nieve con 3 cucharadas de azúcar.

Batir la crema como para chantilly y cuando tome consistencia añadir el licor, la mezcla ya preparada y el merengue.

Mezclar con cuidado y servir en copas o pequeños pyrex. Llevar al refrigerador por una hora para que tome consistencia.

Salsa de naranjas

4 cucharadas de azùcar

1 cucharada de maicena

1 taza de jugo de naranja

1/2 taza de agua

2 cucharadas de mermelada de naranja

1 cucharada de licor de naranja

Poner en una cacerolita el azùcar y la maicena bien mezcladas. Añadir de a poco el jugo y el agua, llevar a fuego medio revolviendo hasta que suelte el hervor.Retirar del fuego y añadir la mermelada y el licor.Mezclar bien.

Cuando esten listos los postres, sacar del refrigerador y servir con la salsa de naranja sobre ellas. Tambièn si tienen ralladura de chocolate le pueden colocar sobre los postres..La naranja con el chocolate son una muy buena mezcla.

    Ojalá me agarre un día de estos con menos fiaca de la habitual y me ponga a cocinar postres, que es lo que mas me cuesta. Lo salado no hay mas remedio, pero el postre se soluciona con una fruta, y como bien dices, en esta época las naranjas y mandarinas están espectaculares.

    My son lived in Argentina for a little over 2 years. Now he works for GE and travels to Latin American countries all the time. I don't know if he get to Chile but if he does I wish that I could hop in his suitcase and come see you.
