Valparaiso (A travel to the Harbor and beach)Viaje al puerto de Valparaìso











The last weekend (easter) we go to Valparaìso that is aprox. 2 hours from Santiago.



I love it because have antiques, old books, and a type of life more quiet and nice, I think.




I take some pictures and add others that I have so you may have and idea and others have good memories of the harbor.









Well Valparaìso is the principal harbor of Chile, all these lovely fruits you enjoy travel from here to all worls, and the wines too of course.




And of course you may buy wonderful fishes and prawns in Caletas and little stores.










The first pictures to right is at night and are old and antique houses near Valparaiso.




And the above pictures is from the Pablo Neruda's house that is so visited (nobel award and Poet) if you know the poems of him yoiu will understand.




He loved so the sea and the houses near the sea. This pictures is taken from his living at house,have a fabolus view of the sea and the harbor. all his houses now are Museum, if you go sometimes he collected many things and antiques so is beautiful and all the things are there.






When I went years a goI remember he had a big sofa in front of this view, to see Valparaiso.He had a bautiful desk too where he wrote sometimes.





This is a beautiful paint of Rugendas a painter that lived in Chile about 1800, had beauty paints of these age. And you may see the difference with Valparaìso now.








This other paint show the typical hills in Valparaìso, almost all the houses are in hills and the sea above.

















These are so antiques houses someones of 1900 and others more antiques pleople still live there and others have restaurants inside, so nice, almost all these houses have a beauty view of the sea.











In some houses the style is English because at 1900 lived a lot of britain people , and by many years at private school the official languaje was english .



Not all these beauty houses are well now, remember we have had a lot of earthquake all these years, but a lot of the are in so good conditions.

El fin de semana pasado (Semana Santa y Pascua) fuimos a Valparaìso, por eso quise hacer este post entre receta y receta porque sino va a quedar demodè.
Para los que no sepan o no conozcan Valparaìso queda a unas dos horas aprox. de Santiago hacia el mar(Oceano Pacìfico)
Tomè unas fotos y tenìa otras para mostrar como es actualmente, incluso es un lugar turìsticamente muy visitado, por su historia, por ser puerto, por Pablo Neruda (poeta) etc.
Valparaìso es el puerto principal de Chile, de allì sale toda esa fruta rica que exportamos al mundo .Si uno va al puerto hay moviemiento todo el dìa.
Amo Valparaìso porque hay feria de antiguedades, libros viejos, calles distintas y un ritmo de vida màs tranquilo que aquì en Santiago, ahora mismo estuve en la Feria donde compro libros de cocina antiguos y me encontrè con la misma señora que conozco hace 15 años por los menos, se impresionò de ver a los niños porque los conociò de meses y aunque los ha visto de vez en cuando hace tiempo que no ibamos.
En la primera foto arriba es una vista general de la bahìa de Valparaìso, un dìa precioso, porque a veces està nublado, pero tiene un clima muy agradable, en invierno es entre 10º y 17º y en verano màximo 24 o 25º, es por el mar.
Despues viene una vista de las casa en los cerros, una de dìa la otra en crepùsculo, esa la encontrè y la coloquè porque la encuentro preciosa.
Despues màs abajo una vista desde la casa de Pablo Neruda (Premio Nobel) muchos lo conocen, hoy sus casa que tuvo son museos, hay una en Isla Negra, otra en Santiago y esta en Valparaìso.
Las casas de èl ademàs son muy interesantes porque estàn llenas de colleciones,conchitas,figuras etc.
La vista està tomada desde el living de la casa donde tenìa un sillòn fantàstico frente al puerto.
despues dos pinturas de Rugenas que viviòn en Chile en el 1800 y que pintò Valparaiso y otras partes de Chile y uno puede ver como era y como es hoy por eso las coloquè.
Estas otras son de casas muy antiguas (del 1900) algunas en muy buenas condiciones porque estàn arregladas y bien conservadas, algunas son restaurantes u hoteles.
En muchas casas el estilo es inglès antiguo porque hubo una època en que vivian muchos ingleses en Valparaìso, incluso en los colegios privados la lengua oficial era la inglesa .Existìa mucho comercio e intercambio con Gran Bretaña.
Muchas de estas casas ahora no estàn tan en buenas condiciones, hay que recordar que somos un paìs de terremotos, pero varias de ellas han sido restauradas y y se usan como restaurantes, cafes o pequeños hoteles.
Si ustedes piensan que estoy enamorada de Valparaìso; es verdad!!
Un recuerdo cariñoso desde aquì a los que estàn fuera, hagan un Salud con un buen vino cuando tengan nostalgia.!!!

Little alfajores with Dulce de Leche(Chilean recipe)




When I begin the Blog I post other Alfajores recipe, these are so mini and we make to parties and Coktails.


Are so smooth and easy to make and of course all natural ingredients.


I put again a recipe to make Dulce de Leche but I have others in Labels with Dulce de Leche that you may see.


I made these because to Festa Italiana I occuped only whites and I had the yellows that is so important to alfajores.


Ingredients



6 yellows eggs

300 grs.plain flour

15 ml of Pisco (liqueur from Chile) or whisky orBrandy

1/4 teaspoonful of baking powder

Dulce de Leche (1 can boiled or other recipe) to filling

Method

Beat the yellows and add the liqueur (Pisco, Brandy or whisky)

and mix well with flour and the baking powder.
Place the dough in a table and roll up with a floured rolling pin so thin and cut the alfajores round with a mold or a little glass.

Prink the center of the alfajores with a fork.

Place in the tray oven (Cover first with a parchment paper) and preheat the oven to medium heat. Let at the oven about 8 minutes (are so fast)

When are little golden are ready. Take out with an spatula. Let cool in a basket with a towel kitchen.





Take one alfajor fill with dulce de leche and cover with other how a little sandwhich.

To make dulce de leche: Have some recipes in the labels "Dulce de Leche" but I will post other here.

In a pressure cooker (if you have) fill with cold water to cover the condensed milk can inside.Place the cooker on the stove top and when start to boil put the heat slow and count 45 min. aprox . Let it cool completely, is so dangerous open the can when the caramel is hot.If you want the Dulce more solid let at the refrigerator for a while and fill the alfajores later.

Mini alfajores rellenos con Dulce de Leche

(receta chilena)

Hace meses cuando empezè el Blog puse una receta de alfajores, pero estos son pequeños para fiestas o coktails como sea se necesite.

Son muy suaves y absolutamente naturales, digo esto porque estoy impresionada la cantidad de alfajores que se venden en el mercado, pero la masa no tiene nada que ver con esto que se hace en casa, son muy livianos y no tienen compuestos quìmicos.

Ingredientes


6 yemas

300 gramos de harina normal

20 ml de pisco (licor de Chile) o tambien puede ser brandy o whisky.

1/4 de cucharadita de polvos de hornear.

Dulce de leche para rellenar (1 lata u otro tipo)

Mètodo

Batir las yemas y agregare el licor elegido, mezclar bien y agregar la harina y los polvos de hornear, mezclar bien, para tener una masa suave y buena para pasarle el rodillo.

Colocar la masa en una mesa de cocina y uslerear con el rodillo logrando una textura màs o menos fina, cortar con un molde pequeño o con un vaso.

Pinchar los alfajores en el centro de cada uno con un tenedor. Colocarlos en la bandeja del horno a la que se le coloca un papel engrasado o de mantequilla.

Llevar a horno medio/alto por 8 minutos, son muy ràpidos.Estaràn listos cuando esten ligeramente dorados. Retirar con una espàtula y colocar a enfriar en un canasto con un paño de cocina.

Para hacer los alfajores unir con el dulce de leche de a dos como un sandwhich e ir colocando en un plato.

Para hacer Dulce de Leche he dado varias recetas que estàn en el Label"Dulce de Leche" pero de todas maneras doy otra.

En Una olla a presiòn llenar con agua frìa cubriendo el bote de leche condensada que ya està dentro. Ponerlo al fuego cuando empieze a hervir bajar un poco y dejar 45 min. aprox.Dejar enfriar completamente el bote antes de abrir porque es muy peligroso abrirlo caliente. Si se quiere màs sòlido cuando estè frìo dejarlo un rato en el refrigerador.

TORTONI DI MANDORLA (Almonds Tortoni)











I made this Dessert special to Festa Italiana, that are organized Maryann of http://findingladolcevita.blogspot.com/ and Marie of http://prouditaliancook.blogspot.com/ They are so nice and Marie invite me to participate, I find this interesant and a joy how a celebration to life how Italian's food is.
Is the first time I participate in something similar, and invite others friends to participate. I like this because the Italian food have many possibilities and sometimes are unknown, we know the delicious spaguettis,pizzas,tortellinis and others, but is a lot of more I enjoy italian cook because my mother always make, pizza, ñoquis,spaguettis etc..
And I like so the nice and beauty desserts they have how Tiramisu that you may find in Finding la Dolce Vita.
So I choose this Almonds desserts (Tortoni di Mandorla) that I teached in Class the last year and I find is almost how a Ice Cream or Mousse because is light, smooth and cold, so nice.
Many thanks to Marie and Maryann that invited me to participate, I enjoy a lot finding the things, searching the Amaretto etc.
Ingredients
3 white eggs
1 pinch of salt
3/4 cup of granulated sugar
1 cup and half of double cream .
1/4 cup of Amaretto liquour
1 cup and half toasted almonds copped
1 envelope of jelly unsaborized
Method
In a bowl beat the whites with a pinch of salt until be firm.
Add the sugar in spoonfuls slowly and continue beating and add the jelly dissolved in a littel wam water. Reserve.
In other bowl whipping the double cream until be firm, now incorporate the cream to the whites mix that you reserved,add the Amaretto Liquor and the middle of the toasted almonds, the rest is to garnish the dessert.
Empty the almonds mix in a rectangular mold (24x12 cm) aprox. or similar, ( you may cover the bottom with aluminium foil, is more easy to take out) and freeze by 1 hour.
Desmold in a large dish and garnish with the rest of toasted almonds.
Keep in the freeze before to serve.

He hecho este postre especialmente porque unas amigas me invitaron a la Festa Italiana, la organizan Marie the http://prouditaliancook.blogspot.com/ y Maryann the http://findingladolcevita.blogspot.com/ .
Marie es muy amable y me invitò a participar, lo encontrè muy interesante como una celebraciòn a la vida, como es la comida italiana.
Es la primera vez que participo en algo similar y me encantò. La comida italiana tiene muchas posibilidades y no todas conocidas, estamos acostumbrados a los deliciosos spaguettis,pizzas, ñoquis,ravioles etc.
Pero hay mucho màs que eso por eso esta es una buena oportunidad de ver cosas nuevas.
Disfruto la comida italiana porque mi mamà siempre ha hecho cosas italianas como ñoquis,pizzas,spaguettis etc.
Y tambièn tienen postres deliciosos como el Tiramisu que pueden encontrar una exquisita receta en donde Maryann cuya direcciòn pongo màs arriba tiene recetas estupendas igual que Marie de prouditaliancook..
Asì que elegì este Tortoni de Almendras que hice en clases el año pasado y que me encanta.
Es como una mezcla entre un helado y un Mousse, muy agradable y suave.
Muchas gracias a Marie y a Maryann por invitarme a participar. Lo disfrutè mucho buscando lo que necesitaba para el postre.
Ingredientes
3 claras de huevo
1 pizca de sal
3/4 taza de azùcar
1 y 1/2c taza de crema para batir
1/4 cup de licor de Amaretto
1 y 1/2 taza de almendras tostadas y picadas
1 sobre de jalea sin sabor
Mètodo
En un Bol batir las claras hasta que estèn firmes.Agregar batiendo el azùcar de cucharadas suavemente, batir bien y agregar la jalea sin sabor disuelta en agua tibia.Unir bien.Reservar
En otro bol batir la crema hasta que estè firme. Incorporar esta crem,a batida a la mezcla ya reservada de merengue, agregar el amaretoo y la mitas de las almendras(el resto es para adornar el postre)
Verter la mezcla en un molde rectangular de 24 x12 o similar (se puede en el fondo del molde colocar un papel aluminio y asì es màs fàcil desmoldar.
Llevar al Freezer a congelar por una hora.
Despues desmoldar en una fuente y espolvorear el resto de las almendras.
Mantener congelado antes de servir, sacar unos 8 minutos antes de servir.

English Scones from Punta Arenas













 

I have to recognize I'm  was in love from scones always!!
Mom made them all the time and my grandmotherwho was married with Maurice Baker (A lovely english gentleman who comes from England) always  love to make in Punta Arenas (the South of Chile) where they lived  and take scones and Thea with Britain Ladies.

 I dont know Punta Arenas still but Mom that born there and live until 12 th always talked  about there, so I know is a little cold around all the year Anyway is interesting you know more from Chile and their meals  like Punta Arenas I added a map and you can see how far is, to the final of the world..

My Grand father was a English engineering from Southampton, England and live  first in
 Argentina and there knew my Grand mother who come from SPAIN and they married and go to   Punta Arenas and he worked there by many years.
Of course Mom have a nice recipe, but the other day I find other recipe (similar) and I love it, so I made and here is the recipe for the people don't know how made them (I know the English people have yours!) This is from England too.


Ingredients

3 cups of plain flour
3 teaspoon of baking powder
1/2 teaspoon of salt
4 tablespoon ofbutter
1/3 cup of sugar
1/2 cup of warm milk

Preheat the oven to medium heat and line a baking sheet with a parchment paper.
In a bowl place the flour,baking powder, and salt, mix.
Add the butter until the mixture resembles breadcrumbs, stir the sugar and enough milk to mix a soft dough (but not wet or overly sticky).
Turn the dough in a floured surface knead light and roll out to 1 to 1 1/2 inch of thckness. Cut the scones round and place in the baking sheet.
Go to the oven by 15 minutes aprox. (ready when are a little golden) then cool on a wire rack.

So you may eat with, butter, differents jams, cheese or others you like with a delicious cup of Tea or Coffe, not problem.

Tengo que reconocer que amo los scones,mi mamà los ha hecho durante muchos años (reuniones,fiestas, cumpleaños etc.) y ella me cuenta que mi Abuela (casada con el inglès de la familia Maurice Baker y mi abuelo) siempre los hacìa (en Punta Arenas al sur deChile) y tomaba  el tè con las Ladies de la Comunidad Britànica ya que eran muy cercanas y se visitaban unas con otras a menudo
.
No conozco Punta Arenas pero mi mamà que naciò allà me dice que es una ciudad muy hermosa y que en el invierno hay mucha nieve (Le dicen la ciudad màs austral del mundo) . Cuando empezè este post pensè en sòlo colocar la receta de  los scones pero despues pensè que es una buena manera de que ustedes conozcan otros sitios de Chile, asì que he puesto un mapa (para que vean lo lejos que està, al final de Chile) y una foto de la ciudad.


Mi abuelo Maurice Baker fue un ingeniero inglès que vino de Southampton (un puerto inglès)Inglaterra,la verdad es que llegò a Argentina, allì conociò a mi abuela que venìa con toda su familia de Asturias, España (y por supuesto que ella no sabìa nada de inglès) y se casaron, luego por trabajo se vino a Punta Arenas donde tuvieron sus hijos, (mi mamà es la màs pequeña).


Bueno, por supuesto que Mami tiene su propia receta de scones (y me mira raro cuando yo hago otras pero confìa en mì) . Yo encontrè otra receta( muy similar) y muy buena y esa la pongo porque es la que hice hace unos dos dìas. Especialmente para los que no saben hacerlos, saca de apuro y son exquisitos para cualquier momento.





Ingredientes

3 tazas de harina normal
3 cucharaditas de polvos de hornear
1/2 cucharadita de sal
4 cucharadas de mantequilla
1/3 taza de azucar
1/2 taza de leche tibia


Precalentar el horno a fuego medio no muy fuerte, se hacen ràpido, colocar en la bandeja del horno un papel enmantequillado o engrasado.

Colocar en un bowl la harina, el polvo de hornear y la sal, mezclar. Agregar la mantequila mezclando haciendo pedacitos como migajas, agregar el azùcar con la leche para hacer una masa suave (pero no hùmeda o muy espesa, que sea manejable)
Colòquela en una superficie con harina y pasele el rodillo suavemente dejandoi la masa de una pulgada y media màs o menos, luego cortarlos redondos con un molde y colocarlos en la bandeja con el papel engrasado, si quiere màs altos no le pase el rodillo solo aplane con la mano.

Llevar al horno por unos 15 minutos aprox. y deje enfriar en una cesta con un paño.
Se pueden comer, solos, con mantequilla, mermeladas, queso con lo que uno quiera con una rica taza de tè o de cafè no importa, como les guste.

Panqueke's Torte(Crepes) filling with salads (Torta de panqueques rellena con ensaladas)


Now that in the north hemisphere will arrive the Spring this Salad Torte is so nice and you may filling with you desire, Here I place the ingredients normally I put but youy may change by others. In this recipe the crepes are so thin to this Torte, how you know the american crepes are more bulk.





Ingredients


4 eggs


1 and half cup of whole milk


2 cups of plain flour


1/2 teaspoonful of baging powder

1 pinch of salt


1 pinch of sugar


1/2 spoonful of vegetal oil


Method

In a large mixing bowl, whisk the eggs first and add the pinch of sugar ,baking powder,and the pinch of salt, gradually add the milk and flour, stirring to combine and beat until smooth.

Heat a frying pan (if you have use the special pan to crepes) and place to medium to light heat. Pour 1/2 spoonful of vegetal oil, heat and add 1/2 cup of the batter, tilt the pan with a circular motion so that the batter coats the surface evenly. Cook the crepes a bou 1 minute or two, until the bottom is golden, loosen with aspatula, turn and cook by the other side.

In a dish reserve the crepes to filling later with salads.



Filling crepe's cake

1 lettuce finely chopped

3 eggs boiled and mashed.

1 cup of mayonnaise

lemon's juice

1 chicken breast boiled

2 or 3 mashed avocados

3 tomatoes peel and cut in slices

2 cups of grain corns boiled

salt and lemon to season



Method to filling

Prepare the different types of filling: In a bowl pour the lettuce, 1/3 cup of mayonnaise, salt, pepper and lemon's juice, mix well and reserve. In other the boiled eggs mashed and add a little mayonnaise.

In other bowl, place the corn grains, 1/2 cup of mayonnaise, salt and pepper.

In other the breast chicken chopped, season and reserve.

In a large dish you can make the crepe's cake, so pour one crepe and add the letuce first,and then other Crepe and the chicken breast, other and crepe and the corns grains, the same with the tomatoes, eggs boiler mashed and the mashed avocados.
Let at the Fridge at the moment of serve.

If you want you may cover with mashed avocados, or not how the picture.

You may reserve someones crepes and freeze.

You may serve whith white rice or other salads.

If you like you may filling with differents salads, only veggis, or add chopped ham., green beans etc.
This recipe of crepes is so good to filling with jam or dulce de leche.



EN ESPAÑOL

Torta salada de panquekes o Crepes

Ahora que està por llegar la Primavera en el Hemisferio Norte, esta receta de Crepes rellenos como torta es muy agradable y se puede rellenar con lo que Uds. quieran, yo pongo aquì con lo que normalmente la relleno pero lo mismo se puede rellenar con otras cosas como jamòn picado o judìas verdes (porotos verdes).
Nota: Estos Crepes son delgados, no como los americanos que son un poco màs gruesos.
Ingredientes
4 huevos
1 y 1/2 taza de leche entera
2 tazadas de harina normal
1/2 cucharadita de polvos de hornear
pizca de sal
pizca de azùcar
1/2 cucharada de aceite vegetal
Preparaciòn
Batir bien los huevos, agregar la pizca de sal y la de azùcar, luego alternar la leche con la harina hasta tener un batido homogèneo.
En un sartèn (puede ser uno especial para crepes) ojalà de teflòn, colocar la 1/2 cucharada de aceite se caliente el fuego de suav a medio, no muy fuerte, y se coloca una 1/2 taza de batido o menos si se quieren màs delgados, esparcir con cuidado la mezcla en el sartèn y cuando estè dorado (1 o 2 minutos)darlo vuelta con una espàtula , ir reservando en un plato los crepes ya hechos para despues rellenar.
Ingredientes para rellenar la Torta de Crepes
1 lechuga pequeña picada fina
3 huevos duros (cocidos) molidos
1 taza de mayonesa
sal, pimienta para sazonar
jugo de limòn
2 tazas de granos de maiz o choclos ya cocidos
3 aguacates molidos
3 tomates pelados y cortados en rodajas finas
1 pechuga de pollo cocida y desmenuzada en trozos pequeños
Preparaciòn de los diferentes rellenos: En un bowl colocar la lechuga picada, 1/3 taza de mayonesa, sal pimienta y jugo de limòn, mezclar y reservar.
En otro bol el maìz picado y agregar 1/2 taza de mayonesa, sal y pimienta.
En otro bowl el pollo desmenuzado y sazonado.
La palta molida y aliñada.
Los huevos molidos y agregarles un poco de mayonesa.
Aliñar los tomates ya cortados y pelados.
Para armarla torta, se coloca en un plato grande un panqueque o crepe y se rellena por ejemplo con la lechuga ya mezclada con mayonesa, se pone otro crepe y se rellena con el pollo desmenuzado, otro crepe y el aguacate molido y asì con todos lo rellenos alternando con los crepes. Si se quiere se puede cubrir con aguacate molido o dejarla como està en la foto.

Se deja en el refrigerador hasta el momento de servir.
Se puede servir con arroz blanco u otras ensaladas.
Estos Crepes tambièn son muy buenos rellenos con mermelada o Dulce de Leche.

Plum's Küchen (Plums's pie) Kuchen de Ciruelas


Well, well the mentioned "kuchen de ciruelas" or plums'pie of course to the final of summer we have a lot of plums yet.





In a post before I made the plums's jam and here was a really success, if someones want look I made at Frebuary and in Labels search by Jams.





This pictures was taken by María Esperanza, my daugther.





This recipe is from an issue so antique "Saber comer y vivir mejor", year 1968, and was a nice surprise, I never made before and I love it.These antiques issues have so good recipes. Mom give me these antiques issues.





Ingredients

125 grs. butter

2 cups of flour

2 teaspoonfuls of baking powder

1 egg

3/4 cup of caster sugar

1 pie or küchen tin about 20 to 22 cm.





Filling

2 cups of fresh plums without seed and cut in pieces

2 spoonfuls of caster sugar

1 cup of apricots's jam





Beat the butter with the sugar until be creamy, and add the egg, mix well, now add the flour and the baking powder, has to be a smooth dough.

Let rest by 15 minutes on the table.

Divide the dough in two parts and add a little flour if is necessary, rolling a part first , place in the tin engrased with butter.
Take to the oven by 6 minutes only to dry a little before filling.

Filling with the apricot's jam first and then with the plums mixing with the caster sugar an cut in pieces and for last rolling the other dough and cover the kuchen or pie with the dough and presser the border of the tin.

Mix a little of water with sugar and brush to be golden.

Take to the oven by 25 minutes to medium heat. Let cool and serve.







KUCHEN DE CIRUELAS





Bueno aquí está el prometido kuchen o pie de ciruelas, esta receta fue una grata sorpresa porque nunca lo había hecho y lo encontré en una revista muy antigua, Saber comer y Vivir mejor, año 1968.

Estas revistas antiguas me las dio mi mamá y tienen muy buenas recetas de todo tipo. Espero que les guste.

Ingredientes Masa

125 grs. de mantequilla
2 tazas de harina normal
2 cucharaditas de polvos de hornear
1 huevo
3/4 taza azúcar impalpable
1 molde de tarta o pie

Relleno
2 tazas de ciruelas rojas o negras
deshuesadas y trozadas
2 cucharadas de azúcar impalpable
1 taza de mermelada de albaricoques o damascos

Preparación
Batir la mantequilla ycon el azúcar hasta que esté cremosa, agregar el hurvo y mezclar bien y empiece a agregar la harina y los polvos de hornear hasta formar una masa blanda.
Deje reposar la masa con un paño por 15 minutos.
Divida la masa en dos porciones, la más grande para cubrir.
Tome una porción y usleree con suavidad según el porte del molde de tarta y cubra sobre el molde enmantequillado.
Lleve a horno sólo para secar un poco antes de poner el relleno ( 6 minutos)
Cubrir el fondo del kuchen con la mermelada de damascosy luego vaciar las ciruelas mezcladas con el azúcar impalpable.
Estirar el resto de la masa del porte del molde como para cubrir, presionar las orillas para cubrir.
Arriba pintar con una mezcla de agua y azúcar para que quede más dorado.
Lleve a horno medio por 25 minutos.
Cuando esté listo, deje enfriar y sirva.
