Lemon meringue bread pudding







I think I love lemon more than chocolate, really! lemon Pie is my favorite and all lemon desserts so I begin a new Label with : lemon recipes, I will adding other lemon  recipes.

Well to all of you love lemon like me here is a stunning recipe, Lemon meringue bread pudding

I find this delicious lemon dessert in  Desserts Magazine

(This was a specialty of Marie Smith leonard, she adapted from a book called Joy of cooking in 1943)





Ingredients
6 servings

2 cups whole milk
2 cups fresh white bread crumbs
3 tablespoon unsalted butter  softened
1/2 cup granulated sugar or splenda
4 large egg yolks (save the whites for the meringue)
2 teaspoons finely grated lemon zest
3 tablespoons strained lemon juice

Meringue
4 large whites
pinch od salt
3/4 cup granulated sugar or splenda or similar

Set a rack in the middle level of the oven and preheat at 180°c.

Warm the milk only a little, and pour the over the breadcrumbs in a small bowl.
Dont stir only let the moistened crumbs cool while you prepare the rest of the ingredients.

In a medium mixing bowl, use a rubber spatula to beat the  butter and sugar together. Beat in the egg yolks one at a time, beating untilsmooth after each.

Switch to a whisk and mix in the lemon zest and juice.

When the crumb mixture is completely cooled or the milk will curdle when it meets the lemon juice. Use the rubber spatula to gently fold in the crumb mixture.

Scrape the pudding mixture into the prepared baking dish until set about 30 minutes.
Cool to room temperature on a rack before making the meringue  - if you put the meringue on a warm pudding a watery layer of condensation will develop and leak out when you cut the pudding.

When you are ready to make the meringue preheat the oven at 170°c.

In a bowl whisk the whites with the pinch of salt and beat with a electric mixer on medium speed until soft peaks form. Gradually beat in remaining sugar, 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved about 3 minutes.

Scrape the meringue onto the cooled pudding and spread. Make sure the meringue touches the edge of the baking dish all around or it might slide off after it's baked.

Bake the pudding again until the meringue is set and light golden about 15 minutes.
Cool an serve at room temperature-
I garnish with grated lemon zest.

Budin de pan con crema de limón











Adoro el limón y especialmente los postres de limón, me gustan más que el chocolate.
Y este budín de limón cuando lo encontré pensé que sería delicioso y así fue.
Es realmente bueno como un pie de limón pero casi mejor!

(Espero ponerme al día con las traducciones, ya expliqué que este tiempo mi mamá estuvo muy enferma asi que tenía poco tiempo pero gracias a Dios está un poco mejor, gracias por los mails, saludos y oraciones, sigan rezando, gracias)

Ingredientes
6 porciones

2 tazas de leche entera
o semi descremada
2 tazas de pan de molde blanco fresco
cortado en cuadritos
3 cucharadas de mantequilla temperatura ambiente
1/2 taza de azúcar o sugarfor o splenda
4 yemas de huevo (reservar las claras para el merengue)
2 cucharaditas de ralladura de limon
(los mejores que encuentren, estos limones salieron preciosos
y el color es natural, no le puse nada)
3 cucharadas de jugo de limón fresco

Merengue

4 claras
pizca de sal
3/4 taza de azúcar o splenda o azucar  light Iansa

Preparación

Precalentar el horno a 180°c.

Aparte en un bol u ollita calentar la leche sólo un poco  y colocar dentro el pan de molde ya cortado en cuadritos.
No revolver aún, dejar sólo un rato para que se humedezca y se vaya deshaciendo.
Mientras preparar los otros ingredientes.

En un bol mediano batir la mantequilla con el azucar. Agregar de a poco las yemas de huevo incorporando de a una.
Batiendo suavemente.
Agregar el jugo de limón y la ralladura de limón.
El pan remojado debe estar frio cuando se vaya a agregar.
Con una espátula unir suavemente el pan remojado con la crema de limón ya lista.
Batir suavemente para deshacer algún grumo y unir bien la mezcla.
Preparar un molde o fuente de cerámica para colocar la mezcla. primero enmantequillar y luego vaciar.
llevar a horno unos 30 minutos.
Despues dejar enfriar antes de cubrir con el merengue.

Preparar el merengue

En un bol grande batir las claras(con batidora elétrica) con una pizca de sal hasta que tenga una buena textura suave y de ahí agregar de a poco el azucar, continuar batiendo hasta que se formen picos suaves y firmes.
Esparcir el merengue sobre la crema de limón ya casi fria y llevar a horno suave por unos 15 minutos (estar viendo es rápido) despues retirar y dejar enfriar, se puede servir frio o temperatura ambiente igual es delicioso para los que nos gusta el limón.
Este postre queda precioso tambien haciendo en moldes de cerámica pequeños (por ejemplo para una comida) y se hace todo igual solo se distribuye la crema de limon y despues el merengue y se pone al horno.

Pears cake with blackberries sauce










A nice and moist pears cake with a blackberry sauce really I think was a winner.
Love the taste of pears in cake, are really moist and  delicious.
This was my last pears I had of my tree this years the birds and  parrots yes a  flock of parrots, we never have had before and they eat all they find, the apples,pears,almonds  
I think this is only tart I made with pears. sigh!









Ingredients 

125 grams of butter
125 grams of sugar
200 grams of all purpose flour
1 teaspoon of baking powder
2 eggs
1 teaspoon of cinnamon powder
3 or 4 pears peels in quarters o slices
sugar glass for sprinkle

blackberries sauce

250 grams of blackberries
30 grams of sugar
4 tablespoon of water

Method


Mix butter, sugar, flour, eggs and cinnamon in a bowl until  you have a homogenous dough.

Butter a cake  pan about 24 cm  and sprinkle with flour.
Pour the mixture evenly.
Put the pears over dough
Sprinkle with a little cinnamon and sugar.
Bake in oven at 180 ° C.  Cook  during 25 minutes until golden, or try  the touch of a finger  if the shape come again is ready.

Blackberry sauce

 Heat  150 grams of berries in a saucepan with sugar and water for 5 minutes and stir until thick .Set aside.
Cut the cake into portions and dusting  with some glass  sugar and the blackberry sauce  and adding the remaining berries.

Cake de peras con salsa de moras











Creo que este cake de peras con salsa de moras es lo único que alcancé hacer con peras de aqui.
Sucede que este año en el verano fuimos invadidos por bandadas de loros (no sólo nosotros sino que en varias partes)
son terribles se lo comen todo, arrasaron con las almendras, peras y parte de las manzanas.
Espero que emigren a otros lares.
Pero hablando del cake es muy bueno y la textura húmeda y deliciosa,
Así que fue buen aporte poder hacerlo.

Ingredientes

125 gramos de mantequilla
125 gramos de azúcar
200 gramos de harina sin polvos de hornear
1 cucharadita de polvos de hornear
2 huevos
1 cucharadita de canela en polvo
3 o 4 peras cortadas en octavos o en gajos
azúcar para espolvorear

salsa de moras

250 gramos de moras
frescas o congeladas
30 gramos de azúcar
4 cucharadas de agua

Easter cake ... and Happy Easter!!









I made this Easter cake  especially for my Mom and Dad wedding Anniversary, you know she was sick the last times but I wanna make something special for her Anniversary, and I made  this Easter orange Cake.

I garnish with chopped meringue but you can make only with the orange cover cream.




Adapted from 

Ingredients
300 grams of all purpose flour
225 grams butter
1 teaspoon baking powder
1 tablespoon orange juice

Orange filling
225 grams icing sugar
200 grams butter (room temperature)
rind of 1 orange
1 tablespoon of orange juice
2 tablespoon of heavy cream

glace icing
300 grams icing sugar
orange juice (about 3 tablespoons)
orange colouring (optional)

to garnish
mini eggs



Method

Preheat oven to 180°c (350°F/gas4)
Grease and base line 2 sandwichs tins (about 20 cm)
Put butter and sugar into a mixing bowl and beat util soft and light.
Gradually beat in the eggs , adding a little of the flour-
Sieve the remaining flour with baking powder and add to the creamed mixture.
Mix well, Finally stir in the orange juice.
Divide the mixture evenly between the two tins.
hollowint it slightly in the centre.
Bake by 35 minutes or until golden brown and when gently touched it feels firm.
Turn onto a wire tray to cool.
Meanwhile make the filling by beating all the ingredients together until smoth and creamy.
Next made the icing by adding enough orange juice to the
icing sugarto make a spreadable icing. If using the orange colouring add at this point.
When cakes are cold  you can slice in three or four layers (I made three) Spread icing over the top and sides of cake.
Decorate with mini eggs or bunnies!

Cake de Pascua de Resurrección

















Ya no pensaba hacer nada para Pascua pero como mi mamá y mi papá estaban de aniversario de matrimonio pensé en hacer algo y salió esta torta decorada de Easter.
(como mi mamá ha estado enferma quise hacerle algo especial)
Obviamente es una torta que se puede hacer en cualquier fecha no sólo ahora.
Como va rellena con crema de naranja a los niños les encanta.
El bizcocho es más simple de los que hacemos siempre (con las claras batidas aparte) pero queda muy rica.
Feliz Pascua de Resurrección para todos!!

Easter Chocolate eggs (Oeufs de paque a la chocolat)









These eggs are easy and delicious and are filling with a chocolate cream (like nutella cream) so you can serve on a egg cup and eat with a little teaspoon:)
I garnish with some little flowers and   colorful sugar sprinkles

Happy Easter to all of you !




Ingredients
(4 chocolate eggs)

90 grams. dark chocolate 70%
50 grams  cacao powder


4 eggs
150 grams heavy cream
40 grams glass sugar

80 grams ground hazelnuts (optative)

 

Method
With cold water wash the eggs and dry. Set aside.
Put the dark chocolate in a bowl.
Make a small hole in the top of each egg with a knife and then expand it gradually until a hole about 3 cm in diameter in order to empty the egg.
In a saucepan heat cream and cocoa over low heat.
Once boiling pour the mixture onto the bowl of
grated chocolate. Mix well to avoid creating air bubbles.Add the sugar.
Let cool stirring regulary.
(If you will add the hazelnuts  put them in a baking sheet about 10 minutes  in grill and when are  cool remove the skins by rubbing hazelnuts between your palms grind and add to chocolate paste)
Fill the empty egg with the chocolate mixture.
let cool in a box egg, decorated and serve in an eggcup.

huevos de pascua rellenos

Cream of pumpkin soup

 








  


I love  veggie cream soups and I make in all seasons!
I posted time ago other pumpkin soup but this really I loved!


Ingredients
4 servings

1 kg butternut pumpkin (about 1), or other pumpkin
cut in pieces
2 green onions chopped
800 cc veggie broth
150 cc half & half cream
salt and pepper
chopped parsley

Method

Finely chop the onions and fry in medium saucepan with a little vegetable oil
Add squash, peeled and diced  and simmer for at least 7 minutes.
Add the hot vegetable stock and continue to cook until the squash is cooked.
Then processing the mixture still warm. Incorporate the cream and season with salt and pepper.
Cook a few more minutes and  serve  with finely chopped parsley.
Serve with slices of toasted bread.

Crema de zapallo o calabaza












me encantan las sopas y las hago casi todo el año, ya saben que las de sobre tienen mucha sal aunque son buenas, asi que prefiero hacer mis sopas, de verduras, zanahorias, zapallos, zapallitos etc.
El método básico es simple, se cocinan las verduras y despues se muele o procesa la mezcla, una vez lista lo que me queda la guardo en el refrigerador. (tambien se puede congelar)

Antes de pasar a la receta mis disculpas, sé que estoy atrasada en algunas traducciones al español,he tenido unas semanas difíciles porque mi mamá ha estado enferma, espero ahora ponerme al dia de a poco.

Blueberry cornmeal muffins


















These cornmeal muffins really are delicious and moist, and are easy and fast!

Adapted from a recipe from Country Living, 2009


Note :(If you see I dont visit a lot of my bloggers friends is cause Im with  some family problems, hope be better next week, thanks)


Ingredients
(12 muffins)

1 cup yellow cornmeal or polenta
1 cup flour
1/2 cup granulated sugar
2 teaspoon baking powder
pinch of salt
1 large egg
1 cup buttermilk or greek yogurt
4 tablespoon of butter melted
1 cup of blueberries (fresh or frozen)

method

Preheat the oven at 180°c
Place baking liners in 12 cup muffin pan and
set aside.
Combine cornmeal, flour, granulated sugar, baking powder.
and salt in a large bowl and set aside.
In a separate bowl, whisk egg, buttermilk or greek yogurt and butter together and stir into dry ingredients until just combined.
Gently fold in blueberries .
Divide batter among muffin cup.
Bake until a skewer inserted into center of muffins comes out clean , about 25 minutes or until are golden and dry.
Cool are in a wire rack.
