Yes, you can say I love cream brulée and is true!
and especially love lemon too!
So I have share this lemon cream brulée.

Ingredients
(6 -8 servings)
4 egg yolks
1/2 cup sugar
2 tablespoons of plain flour
1 lemon the zest
1/2 cup lemon juice
1 cup of double cream
3 egg whites
1 pinch of salt
Additional sugar for brulee (about two tablespoons)
Method
Preheat oven to 170 ° c
Mix together the cream, lemon juice , flour and lemon zest in a saucepan, bring to the boil.
Simmer gently by 5 minutes, always stirring, remove from heat and set aside.
In a bowl mix the yolks, and sugar and add to lemon cream and mix well.
Whisk the whites and salt and add to the yolks cream.
Pour the mixture into ramekins and place in a baking dish with water to cook to a double boiler ..
Cook about 20-25 minutes or until mixture is set on the edges but still wobblyin the centre.
Remove from the oven and set aside to cool..
Sprinkle with granulated sugar and brown with a kitchen torch the surface .
If you dont own a mini blowtorch caramelise them under the grill.

Creme brulée
Como ya he dicho anteriormente la creme brulee se puede hacer en diferentes formas. Esta es bastante liviana lleva menos huevos y solo 1 taza de crema.
Si no se tiene la antorcha para dorar se puede usar el grill del horno.
Ingredientes
(6 a 8 porciones)
4 yemas
3 claras
1/2 taza de azúcar
2 cucharadas de harina sin polvos de hornear
1 cucharada de ralladura de limón
1/2 taza de jugo de limón
1 taza de crema espesa
1 pizca de sal
azúcar adicional para dorar (unas 2 cucharadas)
Preparación
Precalentar el horno a 170°c.
en un bowl mezclar la crema, jugo de limón, harina, ralladura de limón porner a fuego suave y darle un hervor.
Bajar el fuego y cocinar a fuego suave unos 5 minutos siempre revolviendo.
Apagar y reservar.
En un bowl mezclar las yemas y el azucar y agregar a la crema de limón.
Batir las claras con la pizca de sal y agregar a la crema de yemas y limon.
Repartir la crewma de limon en los ramekins o bols de cerámica y colocar en una fuente con agua hasta la mitad, colocar en el horno de 20 a 25 minutos o cuando ya se vea la mezcla firme.
Cuando se enfria se pone mas firme.
Espolvorear azúcar y dorar con la antorcha o en el grill.
Dejar enfriar antes de servir.

hi gloria, the last time i made it i find that it was a little too rich for me..i guess lemon is a nice flavour and that it helps to tone down the richness :))
