Roasted milk (gluten free recipe) (Leche asada)













The roast milk  is a typical recipe from our childhood. 
When the desserts still not come in jars or  or plastic containers. 

All these desserts are typical  like  leche asada -floating islands (nevada milk)´- course Flan - Wine dessert and rice pudding. 

Funny that my kids still love these desserts. 
I made this dessert and take  to my mother on Saturday for 
lunch  and they loved literally! 

It's like flan  but  better  I think. The best is eat after refrigerate by a while. 
They are so old desserts (like  wine dessert) of course I remember my grandmother making ​​this recipe.

Pears tree




Ingredients
(6 servings)

6 eggs
6 cups of  whole milk
2 teaspoon vanilla extract
8 tablespoon of powder sugar
orange zest

Caramel
5 tablespoons granulate sugar
some water


Method


Melt granulated sugar with water (enough to cover the sugar) in a medium pan until it turns a golden blonde color .. 

Don't stir  only move a little the pan to all be golden. 

Turn off and put in a baking dish to cover the bottom of the pan. 
Care to empty the caramel could burn. 

Then in a large bowl beat the eggs and add the powdered sugar- milk-vanilla and orange peel. 

Pour the mixture in the baking dish where the caramel is ready. 
Oven at 180 ° c. 
Bake at  oven for 40 minutes. 
Remove from oven and let cool by a  time. 
Then refrigerate to be chilled.

Completando este mes de recetas especialmente diciocheras agrego esta receta de Leche Asada que hace tiempo no hacía.
La llevé para la casa de mi mamá para el 18 y fue un éxito:)
Bueno mis hijos adoran estos postres.

Vi varias recetas pero finalmente me quedé con la receta de Pablo Hunneus (Manual práctico de cocina chilena) al cual recurro siempre (lo tengo desde que me casé.)
Lo unico que cambié fue agregarle 2 huevos. Lo demás igual y queda perfecta.

Ingredientes

6 huevos
6 tazas de leche
2 cucharaditas de vainilla
8 cucharadas de azúcar flor
cáscara de naranja

Para el caramelo
5 cucharadas de azucar granulada 
y agua para hacer el caramelo

Preparación

Derretir el azúcar granulada con agua en un sarten mediano hasta que tome un color rubio dorado.
Luego verter en una fuente que vaya al horno puede ser metálica o de pyrex.
Ver que se esparza todo el caramelo en el fondo de la fuente.
Reservar.
En un bol batir los huevos y agregar el azúcar en polvo-la leche-cáscara de naranja y vainilla.
Cuando está bien unida la mezcla se vacia en la fuente en que está el caramelo.
Precalentar horno moderado (180°c)
Llevar a horno por 40 minutos y se notará que está lista porque se verá cuajada.
Retirar del horno y dejar enfriar un rato. Luego poner en el refrigerador para que se termine de enfriar.

  5. Yum - sometimes the oldest recipes are the best recipes. I bet that's why the twins like it so much - reminds them of their childhood and it reminds you of yours too! Love your pear tree and bougainvillea - so pretty, Gloria.

    First I must say, that Pear tree is awesome!!! And that Bougainvillea, oh my goodness, gorgeous!

    As for that Milk Pudding, it sure sounds like comfort food. Many of the cookbooks I have from the early 1800s have recipes for "roasted milk" that they call milk pudding. It was especially important for people when they were sick.
