Caramel apple tarts (tartas de manzana caramelizadas)








   I love apples and usually I eat and bake them year-round.
 I find this recipe of little tarts and think could be lovely. And was awesome.
The pastry really thin and the filling delicious.

Ingredients
12 tarts

pastry 

350 g all purpose flour 
3 tablespoon of sugar 
160 grams of chilled butter in cubes
4 1/2 tablespoons cold water 

Method

In a bowl place the flour and sugar. Then add the butter cubes and make crumbs with fingers .
Until have  a breadcrumb texture. 
Gradually add the cold water and work dough until smooth. 
Wrap the dough in plastic film and refrigerate 15 minutes. 
Roll out on a lightly floured surface and use a round pastry cutter to cut the circles.
 And  then place in muffins cups. 
 Prick with a fork the bottom of the tarts  and refrigerate 15 minutes 
Preheat oven to 180 ° c 
Place a weight on top as  beans  or other to maintain the shape. 
Cook them 10 minutes or until crust is crisp and dry. 
Set aside  while prepare  apple filling. 

Apple filling 

4 to 5 Apples granny smith or fuji 
pitted and peeled. 
80 grams sugar 
fine zest of 1 lemon 
Juice of 1 lemon 
3 eggs 

20 grams of butter.
icing sugar for dusting

Method


Grate 3-4 large apples over a bowl  and add 2/3 of the sugar-grated lemon  and lemon juice. 
Finally add the eggs and stir well. 
When you are ready  distribute the mixture into the tarts 
Cut another apple (or 2) into thin slices and arrange on the tarts. 
Sprinkle with remaining sugar and cover each with a little butter.
Bake the tarts in the oven (180 °) 20 to 25 minutes or until filling is set and the apple slices are, starting to brown. 
Dust with icing  sugar and place in the oven about 5 minutes to caramelize.
Allow to cool and serve warm or at room temperature.

Ingredientes (masa)
12 tartas

350 gramos de harina
3 cucharadas de azúcar
160 gramos de mantequilla
refrigerada en cubitos

Preparación

En un bol colocar la harina y azúcar.
Entonces añadir la mantequilla haciendo migas con los dedos.
Hasta que tenga una textura de migas de pan.
Entonces agregar de a poco agua la necesaria.
Hacer una masa homogénea y envolver en un film plástico y dejar en el refrigerador 15 minutos.

  17. A lot of my friends in France make apple tarts, it seems to be the thing to make in the Dordogne valley. Their tarts are much the same ingredients, but full sized tarts, 25 cms in diameter usually. Those you make look very tasty.
