ah strawberries again some of you will say , it is very simple I had a few strawberries and wanted to do something, before they disappeared, and I found this recipe I had saved in my cook notebook .
These little strawberry cupcakes have a delicious jam centre once you get past the strawberry and cream topping!
Source : BBC Food
(saved in my cook notebook)
Ingredients
(12 cupcakes)
200 g unsalted butter softened
200 g caster sugar
4 eggs
250 g all purpose flour
1 1/2 teaspoon baking powder
4 tablespoon srawberry jam
250 lightly whipped double cream
200 g strawberries hulled
Method
Preheat the oven to 180° c
Line 12 hole muffin trays with paper cases.
Cream the butter and sugar together, whisk in a large bowl until de mixture is light and fluffy.
Beat in the eggs , one at a time untol well combined. (If the mixture look like a Little curding add a spoonful of flour)
Fold in the remaining flour and baking poder until you have a soft, smooth mixture.
Pipe or spoon the mixture into the paper cases until half full, add half a tespoon of jam and then cover with the remainingncake mixture. The finished cake case should be about three quarters full.
Bake in the oven about for 12 -15 minutes or until the cakes are pale golden brown..
Remove the cakes from the oven and set aside to cool in a wire rack.
Using a small knife make a well in the top of each cake by removing a disk of cake. Fill this with whipped cream and top with a strawberry.
