Always I love the poppy seed cakes and muffins, love how taste and this recipe have these and more
I adapted from Eating Well and you can serve with lemon curd if you like, the recipe below.
Ingredients
1 1/4 cups sugar
2 cups all purpose flour
3 tablespoon poppy seeds
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 large egg
1 cup buttermilk (or plain yogurt)
3 tablespoon canola oil
2 teaspoon grated lemon zest
1teaspoon vanilla extract
Lemon curd (optative) recipe below

Method
Prehat oven to 180° c (350 f) Lightly oil a 6 or 8 cups tub pan or coat with nontick spray.
Sprinkle pan with 2 tablespoons sugar, tapping out excess.
In a large bowl, whisk flour, poppy seeds, baking powder
baking soda and salt.
In another bowl, whisk egg until frothy. Whisk 1 1/4 cups sugar, buttermilk or plain yogurt, oil, lemon zest and vanilla.
Gradually add wet ingredients to dry ingredients whisking until just moistened.
Pour batter into prepared pan.
Bake cake for 30 minutos or until top spingd back when touched lightly and a skewer inserted in the center comes out clean.
Inmediately loosen edges and invert onto a wire rack.
Let cool completely. Serve with lemon curd.
Lemon curd
In a medium nonreactive saucepan, whisk 2 large egg, 1 large egg white, 3/4 cup of sugar, 2/3 cup fresh lemon juice and 1 tablespoon freshly grated lemon zest.
Add 2 tablespoon butter and cook over low heat, whisking
constantly, until thickened, 5 to 7 minutes.
Do not let sauce come to a simmer. Transfer to a small bowl and let cool-
The sauce will keep covered in the refrigerator up to 2 days.

Cake de amapolas con crema de limon
Un cake o queque delicioso con semillas de amapola, siempre me ha gustado porque las semillas tienen ese sabor a nuez suave. Bueno y con el lemon curd es maravilloso para la hora del té o en cualquier momento.
Me encantó esta receta de lemon curd porque es rápida y fácil de hacer.
Recomiendo este cake o queque:)
