Blueberry küchen (South of Chile : Villarrica)

Other recipe from here on the South, yesterday was a shining day after the rain.

This recipe of kuchen is  with blueberries and the recipe is adapted  from one of  my friend Rosario (a chilean blogger) .
She has an amazing blog  Recetas para todas.blogspot.com

I talked before about küchen history, when about 1800 the germans arrive here on the South and in this time küchen and others meals  begin to be part of Chile cuisine.

Maybe all the cuisines are like this, when arrived the spanish (many years before) they add some things to the meals and the people lived here (mapuche people) had others things, and now we know these food like chilean food, but is all a mix I think we have similars foods with Peru, Argentina, Uruguay and others.

Each country has their own cuisine history and is so good and interesting know about it.

Ingredients
(a mold about 28 cm diameter)

dough
180 grams of butter
200 grams all purpose flour
1 teaspoon of baking powder
150 grams sugar
2 eggs
pinch of salt
1/2 teaspoon of vanilla

Filling

250 grams of blueberries or
raspberries (frozen or fresh)
3/4 cup of heavy cream
2 tablespoon of sugar

Streusel
120 grams of butter
150 grams sugar
150 grams of all purpose flour

Method
In a bowl mix the butter and sugar and the pinch of salt, add the flour  to make a crumbly  mix  and then add the egg and vanilla.
Would be a sticky dough.
Butter and floured a mold of 28 cm.
Cover the bottom with the flattered dough and  floured fingers(add some flour if is needed)

Preheat oven to 180°c
Cover the crust with blueberries (bury slightly).
Bake until lightly browned.
While mix the cream with the sugar and vanilla.
 Once you remove the küchen from oven wait some minutes and spread the cream over the fruits.

Make the streusel
In a bowl put the butter, flour and sugar and make crumbs with your fingers.
And put these crumbs over the cream.
Back to oven with the küchen and bake until is dry and golden(about 20 minutes)

Serve warm or let chill.

De aquí siguiendo más al sur la tradición de los kuchenes es fuerte, es un legado de los alemanes cuando llegaron a Chile alrededor del 1800.

Porque es impresionante como los küchen se comen casi a lo largo de todo Chile sobre todo al sur.
Crecí en el sur (Concepción) y allá era lo más normal hacer Küchen, con manzanas, peras, duraznos o frutillas, lo que hubiera. Mi mamá cuando quería aprovechar una manzanas decia voy a hacer un küchen.

Cuando llegaron los españoles, había cosas que no tenían idea y las agregaron a otras comidas  que preparaba el pueblo mapuche por ejemplo, todo lo que es con maiz, humitas, pastel de choclo etc.
Incluso hacian el pan con maiz.
Y las frutillas...
Y despues los alemanes con sus recetas que pasaron a ser propias  de nosotros.(aqui se venden kuchenes en todas partes)
pero los mejores kuchenes los he comido más al sur, Puerto Varas, valdivia, Frutillar etc.Ayer comí pastel de choclo y de postre kuchen:)

Esta receta está adaptada de una receta de Küchen de mi amiga Rosario que viven en Viña del Mar, que tiene estupendas recetas y además hace clases de cocina.
Su blog se llama Recetas para Todas y se los recomiendo especialmente.

Ingredientes
(para un molde de unos 28 cm de diámetro)
Masa

180 gramos de mantequilla
200 gramos de harina sin polvos de hornear
1 cucharadita de polvos de hornear
150 gramos de azúcar
2 huevos
1 pizca de sal
1/2 cucharadita de vainilla

Relleno

250 gramos de arándanos o frambuesas (frescas o congeladas)
 3/4 taza de crema espesa
2 cucharadas de azúcar

streusel
120 gramos de mantequilla
150 gramos de azucar
150 gramos de harina

Preparación

En un bol mezclar la mantequilla, el azúcar y una pizca de sal,
agregar la harina y con los dedos hacer una mezcla arenosa entonces agregar el huevo y la vanilla. Unir todo bien y debe quedar una mezcla un poco pegajosa.
Enmantequillar y enharinar un molde de 28 cm.
Colocar en el fondo la masa bien distribuida.Hacerlo con los dedos enharinados.
Si fuera necesario agregar un poco de harina.
Precalentar el horno a 180° c.
Cubrir la masa con los arándanos distribuyendelos semi enterrados.
Hornear hasta que esté lugeramente dorada la masa (unos 10 minutos)
Mientras mezclar la crema con el azúcar y la vainilla.
Distribuir sobre los arándanos.
Por otro lado hacer el streusel
En un bol mezclar la mantequilla, harina y azúcar haciendo migas con los dedos. Distribuir sobre la crema.
Llevar a horno nuevamente unos 20 mminutos hasta que esté bien dorados.
Servie tibio o frío.

Blackberries rustic tart




Was a cloudy day here when I made this Tart and lots of rain later, but really the pictures aren't bad, we are in the South for a few days, but we really love rain after the hot days in Santiago.

We find  here an interest  site , a berries market, you can   imagine, I love so much berries, we bought some strawberries and blackberries and made this rustic tart.









Ingredients

Crust
350 grams of all purpose flour
a pinch of salt
175 grams of butter unsalted
50 grams of sugar
cold water

Filling

600 grams blackberries frozen or fresh
6 tablespoon of sugar
1 tablespoon of cassis or water
5 teaspoon of semolina
1 white egg


Method

For the pastry sift the flour and salt in a bowl, add the butter and work the mixture with your fingers.
Add the sugar and add enough water to bind the dough.
Wrap in plastic wrap and refrigerate for 30 minutes.

Meanwhile wash the berries and place in a bowl with four tablespoons of sugar and cassis or water and  stir them so they are well coated.

Remove dough from refrigerator and spread with a pin roll   in a circle on a floured surface.

Work carefully because it is a soft dough (you can add a little flour to prevent sticking to fingers)
Sont cut the borders  and place in a baking pan or into a mold.
Sprinkle with semolina dough leaving a border of about 6 cm.


Place the blackberries mix in the center and paint the edges with egg white. Fold edges to cover the fruit.
Brush the cake with the remaining egg white and sprinkle with sugar and bake in preheated oven at 180 ° C for about 25 minutes or until edges are golden brown on the cake.
To serve, whip the cream and add some with a sprig of mint for garnish.
Personally I do not put cream is so delicious taste of the berries that I almost do not need.:)

Fue un dia tremendamente lluvioso aqui en el sur donde estamos por unos dias (Villarrica) hace mucho que no veniamos para acá.
Por supuesto que estamos felices con la lluvia despues de los calores horrible de Santiago.
Villarrica está precioso y tiene mas cosas lindas y entretenidas
de la última vez que vine.
Tiene una feria de berries (se exportan muchas berries en esta zona) de pequeños agricultores y sus productos, compramos moras y frutillas.
Bueno las frutillas no duraron nada se las comieron ese mismo dia pero las moras las congelé y preparé esta tarta de moras.
A pesar del dia lluvioso las fotos no estan malas, la cocina es amplia y luminosa, hay cocina a leña y cocina a gas. Espero poder hacer algo en la cocina a leña.

Ingredientes

masa

350 gramos de harina sin polvos de hornear
1 pizca de sal
175 gramos de mantequilla sin sal
50 gramos de azúcar
5 cucharadita de semola
1 clara de huevo

relleno

600 gramos de moras frescas o congeladas
(tambien pueden ser frambuesas)
6 cucharadas de azúcar
1 cucharada de cassis o de agua
5 cucharaditas de semola
1 clara de huevo

para servir
crema batida (optativo)
hojas de menta

Lavender muffins















I made these muffins some days ago and  is a special recipe with a little lavender flowers .
This recipe is adapted from a nice book " Cupcakes and muffins" from Parragon, England.

Ingredients  (12 muffins)

150 grams golden sugar
120  grams soft butter
200 grams all purpose flour
1 teaspoon of baking powder
2 eggs beaten
1 tablespoon of milk
1 teaspoon  lavender flowers
(chopped)
1 teaspoon vanilla extract

glaze

150 grams glass sugar
water
Lavender flowers (to garnish)
Silver  dragees


Method


Line a muffin tin with 12 paper liners.
In a bowl beat the sugar and butter until creamy pale and frothy.
Incorporate the eggs slowly  and add  milk,
lavender
and vanilla and then the flour and baking powder slowly.

Divide the batter among the paper liners and bake in preheated oven at 180 ° c.
Bake by  15 minutes or until lightly browned tall.
Slightly tighten the tip of a muffin and recovers is  ready.
A few minutes before the muffins are  made  sift the icing sugar into a bowl and add a little water to get a thick glaze.
When you are ready, then let stand covered with glaze and let it drip down the sides a little.
Garnish
with  lavender flowers and silver dragees.

El otro día hice estos muffins con flores de lavanda que quedan muy buenos.
Para los que no estan acostumbrados a mis recetas con lavanda (postres, helados cakes) les diré que el sabor es muy suave y si quieren pueden disminuir la cantidad.
En este caso lleva una cucharadita de lavanda  y puede ser media .

Ingredientes

150 gramos de azúcar rubia
120 gramos de mantequilla suavizada
2 huevos batidos
1 cucharada de leche
1 cucharadita de flores de landa picadas
1 cucharadita extracto de vainilla
200 gramos de harina sin polvos de hornear
1 cucharadita de polvos de hornear

Glace
150 gramos de azúcar flor o impalpable
flores de lavanda
perlitas plateadas

Chicken & Bacon pot pie

Really I love this, you know other amazing bloggers and cookers and new recipes and always is a challenge cook or bake new recipes.

My assignment was Annie'Noms and I love her blog and recipes.
Was difficult choose but finally I wanna make this Chicken &Bacon pot pie and was delicious!

Her recipe is for two but I made to four servings.

Ingredients
(4 servings )

For the pastry

1 cup of flour
1/2 cup of butter
30 ml water
pinch of salt
1 egg to brush dough

For the filling:
1 tablespoon of oil
1 teaspoon of butter
1  1/2 chicken breast sliced into small chunks
1 onion sliced thinly
3 rashers of bacon, diced
1/2 red pepper in slices
2 tablespoon chicken  broth  or chicken gravy granules
3 tablespoon single cream
water added to the consistency you want your gravy
salt and pepper to taste

Method

Make the pastry as it needs time to rest. Put the flour, salt and butter into a small bowl and rub together with your figers until
it resembles breadcrumbs.
Add the water in a teaspoon at a time and mix with a wooden spoon until a dough forms.

Wrap it in cling film and place in the fridge for at least 30 minutes.
When you are ready to make the filling,get the pastry out to rest.

Filling

 To make the filling, preheat the oven to 180 degrees C .
 Heat the oil and butter in a large saucepan or wok.
Place the onion and bacon in the saucepan and place the lid on so that the onion and bacon softens.
Cook for about 5 minutes, stirring occasionally.

 Add  the chicken and and red pepper and  stir, replace the lid and leave for 5 minutes to colour the chicken.
Add the  chicken broth of chicken gravy granules and as much water as you require to make the consistency of gravy you like.
Coat everything then stir in the cream. Add salt and pepper to taste.
 Bring to the boil and then leave to simmer for 10 minutes to thicken and cook through.

Once the chicken is cooked, split it between the  dishes or ramekins.
Cover each  ramekin or dish with the pastry using a sharp knife, cut around the edge of the dish to make the pie top.
Beat the egg with a little water and wash the dough before to bake.


 Place in the oven and bake for 20-25 minutes, or until the pastry is lightly browned and crispy.
I
heat later one in microwaves and was perfect!!

Pastel de pollo









Otra vez tuvimos el intercambio de recetas del Secret Recipe Club, que es super bueno y entretenido
porque es el momento de conocer otras personas, de otros paises, con costumbres distintas, es muy especial.
De hecho he comentado aqui que a veces me ha tocado bloggers que no usan huevos por ejemplo, o veganos y hay que ingeniarselas para encontrar una receta.
Esta vez me tocó el blog de Annie, Annie's Noms un blog excelente con muchas recetas, finalmente elegí este pastel de pollo porque siempre me ha gustado.
Y se calienta perfectamente en microondas.

Ingredientes (4 porciones)
masa
1 taza de harina
1/2 taza de mantequilla
30 ml de agua
pizca de sal
1 huevo batido para el brillo de la masa

Relleno de pollo

1 cucharada de aceite
1 cucharadita mantequilla
1 y 1/2 pechuga de pollo en trozos pequeños
1 cebolla picada fina
3 tiras de tocino cortado en tiras
1/2 pimiento rojo picado fino
2 cucharadas de caldo de pollo o 1 cubo de caldo de pollo
3 cucharadas de crema
agua para la consistencia de la salsa segun se desee
sal y pimienta a gusto

Preparación

Primero preparar la masa porque debe reposar un rato.
Poner la harina, sal y mantequilla en un bol. Unir con los dedos hasta que tenga consistencia de migas de pan.
Agregar de a poco el agua hasta hacer una masa . Envolver en film plastico y  dejar reposar por lo menos 30 minutos.

Mientras preparar el relleno.

Precalentar el horno a 180°
En un sarten grande o wok calentar el aceite y la mantequilla.
Agregar la cebolla picada y el tocino en tiritas y tapar por unos 5 minutos para que se suavizen, cocer a fuego medio y revolver de vez en cuando.
Agregar el pollo en trozos y el pimiento rojo, revolver y dejar cocinar unos 5 minutos para que se dore el pollo.
Agregar el caldo de pollo o el cubo o granulos disuelto en agua. Revolver bien.
Sazonar con sal y pimienta y finalmente la crema, dejar cocer a fuego suave durante unos 10 minutos.
Agregar un poco de agua dependiendo de lo espeso que se quiera el guiso.
Preparar los ramekins u ollitas de ceramica, repartir el guiso en las ollitas.
Estirar la masa y cubrir cada ollita o plato cerámico con la masa.
batir el huevo con un poco de agua y con una broche pintar la masa.
Llevar a horno por unos 20 a 25 minutos, hasta que esten dorados y crujientes.
Tuve que calentar más tarde uno de los pies en microondas y quedó perfecto.

Ginger peach pie











This ginger peach  Pie is our dessert today.
We have a peach tree but this year they came out very small and I think  they needed more water.
(We have had many problems with water to irrigate this summer)

But they are so good today and I picked a few peaches to make this pie.

And you can make with peaches jar too.
The dough of this Pie is delicious and  reminds me delicious apples pies.

 
This recipe is adapted from Saveur






Ingredients

For the crust
2 cups flour
1/2 tsp salt
6 tablespoon chilled butter, cut into pieces
2 tablespoon chilled vegetable shortening
| egg
1 tablespoon fresh lemon juice

For the filling

1 tablespoon fresh lemon juice
2 teaspoon fresh ginger or ginger powder
1 teaspoon ground cinnamon
2/3 cup sugar
1/4 cup cornstarch or tapioca
fresh peaches or 1 peaches jar
1 egg to wash

Method

For crust
Sift flour and salt into a medium bowl. Rub butter and shortening into flour mixture with your fingers until it resembles coarse crumbs.
Whisk an egg and lemon juice together in a small bowl, then sprinkle into flour mixture with 2 or 3 tablespoon of ice water.
Mix until dough just begings to hold togetherc.
Wrap and refrigerate about 1 to 2  hours.

For  the filling
Combine lemon juice, ginger,cinnamon,2/3 cup of  the sugar and cornstarch or tapioca in a large bowl,
If use fresh peaches blanch peaches in a pot of boiling water for 15 seconds, then cold in a bowl of cold water. Cut in slices and toss in lemon juice mixture.
If  use peachs tin cut in slices and toss in lemon mixture.
Preheat oven to 180° Divide dough in half.Roll in two circles on a floured surface.
Line the pie pan with one circle. add peach filling.
Drape remaining circle in top. crimp edges, and slash top.
Brush with egg and sprinkle with 1 tablespoon of sugar.
Bake until golden about 45 minutes. Serve warm or cold with vanilla Ice cream.

Pie de duraznos









Me encantan los duraznos y tenía ganas de hacer un pie, el único problema es que los duraznos de nuestro arbol estan muy pequeños (les faltó agua creo)

Pero hoy día fue a sacar algunos porque igual se empiezan a caer del arbol.,
La cosa es que hice este pie de duraznos (que tambien se puede hacer con duraznos en tarro) y que quedó delicioso
me recuerda a los exquisitos pies de manzana, pero con duraznos.

Ingredientes

masa

2 tazas de harina
1/2 cucharadita de sal
6 cucharadas de mantequilla fria cortada en trozos
2 cucharadas de manteca vegetal
1 huevo (mediano)
1 cucharada de jugo de limón
agua fria para unir (2 o tres cucharadas)

relleno
1 cucharada de jugo de limón
2 cucharaditas de jengibre rallado o jengibre molido
1 cucharadita decanela en polvo
2/3 taza de azucar granulada
1/4 taza de maizena  (o tapioca)
duraznos frescos (unos 6 picados en trozos)
o 1 tarro de duraznos en conserva
1 huevo para el brillo

Preparación

Para la masa:
cernir la harina y sal en un bol mediano. Agregar la mantequilla en trozos y la manteca con los dedos formando como migas.
Batir el huevo y el jugo d elimon en un bol pequeño. entonces agregar a la masa que se está haciendo, agregar 2 o 3 cucharadas de agua helada para formar una bola de masa.
(si se necesita agregar un poco de harina)
Envolver en un film plástico y refrigerar por lo menos dos horas.
(No hay porblema si se queda mas rato yo no la pude hacer en el momento quedó toda la noche y la hice al otro dia, solo se debe espolvorear con un poco de harina para estirarla con el rodillo)
Para el relleno
Unir jugo de limon, jrngibre, canela, azúcar y la maizena en un bol. Colocar unos  15 se gundos los duraznos en trozos para blanquearlos. despues dejarlos enfriar.
Unir con el jugo de limon ya preparado. Reservar.

Precalentar el horno a 180°c
Dividir la masa en dos partes. Enmantequillar un molde para pie, y hace un circulo con una de las masas.
Rellenar con la mezcla de duraznos y estirar la otra masa con el rodillo y cubrir el pie.
Pintar con el huevo ya batido con un poco de agua y espolvorear una cucharada de azucar .
llevar a horno por unos 45 minutos o hasta que esté bien dorado.

Servir tibio o helado.
Con helado de vainilla es espectacular, más que con crema.

Hot chocolate with marshmallows hearts and Happy Valentine to all of you!









Finally I made this simple but delicious recipe for Valentine's day, all years I make something to this day but this year, the last  were the most difficult and busy days in many times.

And I love this recipe from Martha Stewart and love chocolate and marshmallows and you know chocolate is special good for the soul, so today I take a large and delicious cup of chocolate like you see here:)

Happy Valentine!








Ingredients (4 cups)

  • 4 cups whole milk
  •  2 tablespoons sugar
  • 2 tablespoons plus one teaspoon unsweetened Dutch-process cocoa powder
  • 4 tablespoons finely chopped or shaved semisweet chocolate
  • Vegetable oil or cooking spray
  • Large marshmallows

Method

Bring milk,sugar,cocoa powder and chocolate to a simmer in a medium saucepan over medium heat,stirring until chocolate has melted (do not boil).

Pour into mugs or cups.

Grease a hert shaped petit four cutter or aspic cutter with vegetable oil or cooking spray.

Cut several marshmallows in half horizontally, and then press the cutter into the center of each one.

Float the marshmallows and the cutouts on hot or warm chocolate.

Tazas de chocolate con
corazones de marshmallows










Todos los años a estas fecha preparo una receta de San Valentín, pero esta vez me ha sido sumamente dificil por muchas razones, ha sido un verano pesado y agotador.

Bueno hoy preparé este chocolate con marshmallows de Martha Stewart y queda delicioso, yo me lo tomé tibio, ah el chocolate hace tan bien para el alma creanme.
Se puede tomar caliente, tibio o frio, se le agrean los marshamallows y queda delicioso.

Feliz San Valentin a todos!


Ingredientes
(4 tazas)

 4 tazas de leche
4 cucharadas de azucar
1 cucharada de cocoa en polvo
4 cucharadas de chocolate en barra trozado o picado
aceite vegetal
marshmallows grandes (1 bolsa)

chocolate zucchini cake













This Zucchini chocolate Cake is  adapted from a recipe of My recipes.com  is a healthy and moist cake because the zucchini is awesome inside of the cake.

 The delicious chocolate glaze still has no butter in the preparation only milk, cocoa and vanilla

 (I made this cake yesterday with no expectations (the audience here is very special) and I'm surprised because it was a success)


Ingredients

Cooking spray for the bundt pan
3/4 cup granulated sugar
1/2 cup of brown sugar
1/2 cup fat free cream cheese
softened
1/3 cup vegetable oil
2 large eggs
2 large eggs whites
1 teaspoon vanilla extract
2 1/2 cups all- purpose flour
1/2 cup unsweetened cocoa
2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup buttermilk
2 cups shredded zucchini

Chocolate glaze

3/4 cup powdered sugar
3 tablespoon cocoa powder
7 tablespoon of milk
2 tablespoons semisweet chocolate chips
1/2 teaspoon vanilla extract

Method

Preheat oven to 180°c

Coat the bundt pan with cooking spray (or oil) dust pan with
1 tablespoon flour (silicone mold work amazing)

Place sugars, cream cheese and vegetable oil in a large bowl
beat with a mixer at medium speed until well blended (about 5 minutes)
Add eggs and eggs whites, 1 at a time, beating well after each addition .
Add 1 teaspoon of vanilla.
Lightly spoon 2 1/2 cups into measuring  cups .
Combine the flour with the other 4  ingredients(cocoa powder, baking powder,baking soda, and salt) in a medium bowl, stirring well.
Add flour mixture and buttermilk (or yogurt) alternately to sugar mixture.
Stir in zucchini 2/3 cup chocolate chips.
Pour batter in prepared pan.
Bake by 50 minutes or until a wooden pick inserted in cake comes out clean.
Cool in pan about 10 minutes.

Chocolate glaze

Combine 3/4 powdered sugar and 3 tablespoon od cocoa in a bowl, stir with a whisk.
Combine 2 tablespoon of chocolate chips (or chocolate in pieces)
and vanilla in a cup glass measure.
Microwave at medium 45 seconds until chocolate melts stirring after 20 seconds .
Combine powdered sugar mixture with chocolate mixture , stirring with a whisk.
Drizzle glaze over cake.

Cake de zapallito  italiano (zucchini) y chocolate










 
 
 
Este queque de zapallito italiano con chocolate queda super! 
Algunas amigas en USA  que suelen hacerlo me lo habian comentado hasta que el otro día encontré este receta en
My recipes.com y me gustó porque el glaze de chocolate es muy liviano, no lleva mantequilla-
 
Nota: El zapallito va rallado y no se nota, yo por si acaso
no mencioné que tenía zapallito y a todos les encantó, no son tan open mind aqui ja! Como postre lo serví con un poco de crema.
 
 
Ingredientes

 aceite o mantequilla para el molde
3/4  taza azucar granulada
1/2 taza de azúcar  rubia
1/2 taza de queso crema (tipo Filadelfia)
1/3 taza de aceite vegetal
2 huevos
2 claras de huevo
1 cucharadita de extracto de vainilla
2 y 1/2 tazas de harina sin polvos de hornear
1/2 taza de cocoa  sin azúcar
2 cucharaditas de polvos de hornear
1 cucharadita de bicarbonato
1/2 cucharadita de sal
3/4 taza de yogurt natural
2 tazas de zapallito rallado (con cáscara)

Glace de chocolate
3/4 taza de azúcar en polvo
3 cucharadas de chocolate en polvo
6  o 7 cucharadas de leche entera
2 cucharadas de chips de chocolate
chocolate en barra
1/2 cucharadita de vainilla

Preparación
