This Zucchini chocolate Cake is adapted from a recipe of My recipes.com is a healthy and moist cake because the zucchini is awesome inside of the cake.
The delicious chocolate glaze still has no butter in the preparation only milk, cocoa and vanilla
(I made this cake yesterday with no expectations (the audience here is very special) and I'm surprised because it was a success)
Ingredients
Cooking spray for the bundt pan
3/4 cup granulated sugar
1/2 cup of brown sugar
1/2 cup fat free cream cheese
softened
1/3 cup vegetable oil
2 large eggs
2 large eggs whites
1 teaspoon vanilla extract
2 1/2 cups all- purpose flour
1/2 cup unsweetened cocoa
2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup buttermilk
2 cups shredded zucchini
Chocolate glaze
3/4 cup powdered sugar
3 tablespoon cocoa powder
7 tablespoon of milk
2 tablespoons semisweet chocolate chips
1/2 teaspoon vanilla extract
Method
Preheat oven to 180°c
Coat the bundt pan with cooking spray (or oil) dust pan with
1 tablespoon flour (silicone mold work amazing)
Place sugars, cream cheese and vegetable oil in a large bowl
beat with a mixer at medium speed until well blended (about 5 minutes)
Add eggs and eggs whites, 1 at a time, beating well after each addition .
Add 1 teaspoon of vanilla.
Lightly spoon 2 1/2 cups into measuring cups .
Combine the flour with the other 4 ingredients(cocoa powder, baking powder,baking soda, and salt) in a medium bowl, stirring well.
Add flour mixture and buttermilk (or yogurt) alternately to sugar mixture.
Stir in zucchini 2/3 cup chocolate chips.
Pour batter in prepared pan.
Bake by 50 minutes or until a wooden pick inserted in cake comes out clean.
Cool in pan about 10 minutes.
Chocolate glaze
Combine 3/4 powdered sugar and 3 tablespoon od cocoa in a bowl, stir with a whisk.
Combine 2 tablespoon of chocolate chips (or chocolate in pieces)
and vanilla in a cup glass measure.
Microwave at medium 45 seconds until chocolate melts stirring after 20 seconds .
Combine powdered sugar mixture with chocolate mixture , stirring with a whisk.
Drizzle glaze over cake.

Algunas amigas en USA que suelen hacerlo me lo habian comentado hasta que el otro día encontré este receta en
My recipes.com y me gustó porque el glaze de chocolate es muy liviano, no lleva mantequilla-
Nota: El zapallito va rallado y no se nota, yo por si acaso
no mencioné que tenía zapallito y a todos les encantó, no son tan open mind aqui ja! Como postre lo serví con un poco de crema.
Ingredientes
aceite o mantequilla para el molde
3/4 taza azucar granulada
1/2 taza de azúcar rubia
1/2 taza de queso crema (tipo Filadelfia)
1/3 taza de aceite vegetal
2 huevos
2 claras de huevo
1 cucharadita de extracto de vainilla
2 y 1/2 tazas de harina sin polvos de hornear
1/2 taza de cocoa sin azúcar
2 cucharaditas de polvos de hornear
1 cucharadita de bicarbonato
1/2 cucharadita de sal
3/4 taza de yogurt natural
2 tazas de zapallito rallado (con cáscara)
Glace de chocolate
3/4 taza de azúcar en polvo
3 cucharadas de chocolate en polvo
6 o 7 cucharadas de leche entera
2 cucharadas de chips de chocolate
chocolate en barra
1/2 cucharadita de vainilla
