panettone pudding











It is not the English Christmas Pudding, but it's still Christmas, as the basic ingredient is the Panettone.

 This recipe is adapted from a nice italian blog Food for fun and for italian friends can see the recipe in your own  languaje:))


The recipe

Ingredients

400 / 500 grs. panettone
1 1/4 cup heavy cream
1 1/2 cup milk
3 eggs
100 grs. sugar
vanilla extract
butter

  

Method
 

In a  medium saucepot bring  a boil to the  heavy cream, milk, vanilla extract  and a tablespoon of sugar.

Preheat oven to 180 degrees and toast under the grill the slices of panettone, until they become golden and croccantine.

In a bowl, whisk the eggs with the sugar until they become very fluffy.
 Add the milk and cream, stirring constantly with a whisk.

Butter a mold deep enough.
 Arrange the slices of cake and sprinkle with the mixture. Wait until the liquid is well absorbed from slices and lie on top of the other slices and sprinkle again to exhaustion compound.
Wait again that the cake absorbs the liquid and then bake 180 ° for about 45 minutes.

Sprinkle some caster sugar over the panettone.
Serve warm or chill . Is absolutely delicious and you can use Panettone leaftovers.

Budín de Panettone














Esta receta es absolutamente deliciosa es como el budín de pan pero MAS rico, la idea es que sea con el panettone que es mas esponjoso que nuesro Pan de Pascua (para que quede húmedo)
Panettone había en el Jumbo, en el Tottus y en Falabella (y en otras partes por supuesto)
De hecho estos últimos los compré a mitad de precios porque siempre los rebajan despues del 25.
Este panettone de muy buena calidad es Battuco y lo trae el Tottus y tambien estaba en Falabella.


Ingredientes

500 grs. de panettone aproximadamente
1 1/4 taza de crema espesa
1 1/2 taza de leche
3 huevos
extracto de vainilla
100 grs de azúcar
mantequilla para el molde

Preparación

En una olla mediana hervir la crema, la leche,
el extracto de vainilla y una cucharada de azucar-

Precalentar el horno a 180°c

Tostar un poco las rebanadas de panettone puede ser con el grill o poner en una bandeja de horno.Hasta que  esten dorados
y crocantes.
Retirar y reservar.

En un bol batir el resto de azucar con los huevos hasta que esten espumosas.
Agregar la leche con crema y vainilla que se hirvió.
Batir bien con un batidor de mano.
En una fuente enmantequillada acomodar las rebanadas de panettone como en escala.
Vaciar sobre las tostadas de panettone.
Primero echar una parte del liquido hasta que se absorba y despues agregar el resto.
Llevar a horno por unos 45 minutos con el horno a 180°.
Debe quedar crocante y dorado.
Retirar y dejar enfriar.
Es muy rico frio pero tambien se puede comer tibio.
Espolvorear un poco de azúcar flor sobre el panettone.

Roasted apricots with honey
















This is a simple and delicious recipe (my favorites) and you can make with fresh apricots or an apricots tin, roasted with honey and almonds in slices.
This dessert is adapted from a lovely book 
"Mediterranea Food "that  was a gift to Christmas of one of my brother in law, thanks Paola and Rodrigo, I love this book.

Ingredients

8 apricots cut in middle
and without seed
4 tablespoons of almond slices
3 tablespoon of honey
1 pinch of ground ginger

(to serve vanilla Ice cream)

Method

Butter a baking dish that will fit in all apricot halves in a single layer.
After placing the apricots in the dish with the cut side up.

Sprinkle with sliced ​​almonds and drizzle with honey.

Preheat oven to 180 ° c.
Bring the power to the oven for  12 to 15 minutes or  until the apricots are tender and browned almonds.
Remove and serve warm or chill.

Serve with some vanilla ice cream.

Damascos (albaricoques) horneados con miel








Me encantó esta receta tan simple y tan deliciosa.
Se puede hacer con damascos frescos o damascos en tarro (pensando en cualquier época)
 
Esta receta está adaptada de un libro precioso que se llama "Cocina Mediterranea" y que me llegó de regalo para Navidad
 de la Paola y Rodrigo mi cuñado y su señora, gracias!!!

Ingredientes

8 a 10 damascos cortados en mitades
4 cucharadas de almendras laminadas
3 cucharadas de miel
1 pizca de jengibre
helado de vainilla para servir

Preparación

Enmantequillar una fuente para horno en la que quepan todas los damascos en mitades sin el hueso o semilla.

Precalentar el horno a 180° c

Colocar los damascos con la parte cortada hacia arriba
Espolvorear las almendras y regar  con la miel.
Asar en el horno entre 12 y 15 minutos o hasta que esten tiernos
y las almendras doradas .
Retirar del horno y servir puede ser tibios o frios.
Servir con helado de vainilla si se quiere.

Amaretto apricot Cake and Merry Christmas!!

















I made this yesterday, I wanna make something special for Christmas and really was:)
These cherries were delicious  but you can garnish with raspberries or strawberries or some frozen berries.
With this recipe I wanna whish you a Merry Christmas!!!

Ingredients

2 1/2 cups all purpose flour
1 teaspoon of baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
200 grs. almond paste
1 1/2 cup granulated sugar
200 grs, dried apricots
1/4  cup of butter softened
4 eggs lightly beaten
2 tablespoon amaretto
1/2 cup sour cream

1 cup confectioners' sugar
2 tablespoon  of fresh lemon juice
cherries or raspberries, mint leaves to garnish

Method

Preheat oven to 180°c.
Coat with oil or bakig spray a bundt baking pan.
In a large bowl combine 2 cups flour, baking powder, baking soda and salt.

In food processor pulse almonds paste and sugar until finrly ground.
Transfer to a bowl.
In the same food processor pulse apricot and remaining 1/2 cup of flour until dinely chopped.
Add butter to bowl with almonds sugar.
Beta by 7 minutes or until pslr snfd fluffy.
With mixer in medium speed ( or by hand) add eggs gradually  and then add the amaretto  until incorporated, ocassionally scraping  bowl with rubber spatula.

With mixer on low speed or by hand, add flour mixture alternately with sour cream or plain yogurt beginning and ending with flour mixture , untilo batter is smooth.
With rubber spatula fold in apricot mixture until blended.
Transfer batter to prepared pan .
Bake by 50 minutes or until toothpick inserted in center of cake comes out clean.
Cool cake in pan about 15 minutes.
Then invert onto rack and cool completely-
Cake can be kept at room temperature  in a container until 3 days.
Or tightly wrapped in plastic wrap, cake can be frozen up to 1 month.

To serve place cake on cake plate. In small bowl stir confectioners'sugar and lemon juice until well mixed.
Pour over cake to glaze .garnish with cherries or frozen raspberries and mint leaves.Allow glaze to set, before slicing.

almond-crusted fish














If  somebody dont like turkey or meat, or chicken??
Many Christmas we ate fish at Christmas Eve, because  daugther is a veggie but eat fish, only fish,   remember a year I made a lovely wrapped fish in dough (was amazing)
This year I have a frozen turkey  that I will make,
But sure to my daugther I can make something like this recipe.

 This recipe was really  a winner. I serve with avocado salad but with lettuce is amazing too.Or mashed potatoes,

Ingredients

1/2 cup of grind almonds
1/2 cup all purpose flour
4 fish fillets (tilapia or halibut)
salt and pepper
2 tablespoon of butter
2 tabkespoon olive oil
1/2 cup almonds peel and in slices

salads: avocados in slices, lettuces, mashed potatos


METHOD

In a large bowl mix the grind almonds and all purpose flur. Set aside.



On a kitchen table putting fish fillets (a little moist) and sprinkle with salt and pepper .. Then move the fish in flour mixture and ground almonds.
Press slightly to the mixture sticking.
Besides a large skillet, heat the butter and oil over medium heat, add the fish fillets and cook 3 to 4 minutes per side until golden brown.
Remove fish and place on serving platter.
In a skillet with a little oil brown the sliced ​​almonds cook, stirring for a minute or until lightly browned.
Remove the pan from the heat and distribute the almonds over fish ..
Serve immediately with salad or mashed potatoes.

Pescado en costra de almendras













Se que en Navidad normalmente la mayoróa come pavo o carne o pollo pero tambien hay gente que no come carne, o prefiere pescado.
De hecho mi hija es practicamente vegetariana,
Sólo come pescado. asi que muchas navidades he hecho
 para la cena salmón u otro pescado.

Así que decidí subir esta receta que en realidad se puede hacer cualquier día. Pero con las almendras le da un toque especial.
(you usé merluza que era lo que tenía pero puede ser blanquillo o el pescado que encuentren)

Receta adaptada de una de Navidad en la cocina (revista Lider)



Ingredientes
1/2 taza de almendras peladas y molidas
1/2 taza de harina
4 filetes de pescado
sal
pimienta
2 cucharadas de mantequilla
2 cucharadas de aceite de oliva
1/2 taza de almendras laminadas

(para pelar las almendras se pueden poner en un pirex con agua al microondas por uns minutos, se espera que se enfrien un poco y pelarlas)

Preparación


 En un recipiente  o bowl mezclar las almendras molidas y la harina. Reservar.

Poner el pescado en una tabla de cocina y espolvorear con sal y pimienta.
(mejor que el pescado esté húmedo)
Luego pasar los filetes de pescado por la mezcla de almendras molidas.
Presionar ligeramente para que se pegue la mezcla.

En un sartén grande  calentar la mantequilla y el aceite a fuego medio.
Agregar el pescado y cocinar unos 3 a 4 minutos por lado o hasta dorar.

Retirar el pescado y poner en una fuente de servir.
En otro sartén con un poco de aceite dorar las almendras laminadas revolviendo hasta dorar ligeramente.
Retirar del fuego y poner las almendras sobre el pescado.
Servir con ensalas de palta o lechuga o puré.

cornmeal cranberry muffins




Thanks to all of you for the sweet and warm comments (and all of you that read but not comments I know is not easy)
Special for Christmas make a pray for all the parents and  families of these kids and teachers.


I made these cranberry muffins some days ago but I cannot posted before.
I have to say are really good  especially for  the days after of Christmas with a tea or a coffe:)

Ingredients (12)

1 1/3 cup all purpose flour
3/4 cup of sugar
1/2 cup yellow cornmeal
2 teaspoon baking powder
3/4 cup buttermilk or plain yogurt
1/4 orange juice
3 tablespoon of butter melted
1 egg lightly beaten
1 cup cranberries (fresh or frozen or a jar)

Method
Stir together first 4 ingredients in a large bowl, make a well  in center of mixture.
Add buttermilk or yogurt and orange juice, melted butter,and egg.
Stir just until dry ingredients are moistened.
Fold in cranberries.
Spoon batter evenly into 12 paper lined muffins cups, filling two thirds full.

Preheat oven at 180°.
Bake for 20 minutes or until lightly  browned and a wooden pick inserted in center comes out clean.
Remove muffins from pans to wire racks let cool 15 minutes .
Serve warm at room temperature.

Note: You can freeze these muffins in zip top plastic freezer bags. Traw them at room remperature or  microwave frozen muffins at HIGH 15 to 30  seconds.

Muffins de cranberry (arándanos rojos)





Estos muffins los hice hace una semana y quedaron super buenos y tambien se pueden congelar.
Llevan cranberries que pueden ser congelados o secos (en los supermercados).
Los arándanos rojos son un poco más ácidos que los azules, pero son muy buenos.
Pero tambien se pueden hacer por ejemplo con arándanos .











Ingredientes (12)

1 1/3 taza de harina sin polvos de hornear
3/4 taza de azúcar
1/2 taza de polenta (en supermercados)
2 cucharaditas de polvos de hornear
3/4 taza de buttermilk o yogurt natural
1/4 taza de jugo de naranja
3 cucharadas de mantequilla derretida
1 huevo
1 taza de cranberries (arándanos rojos) pueden ser secos, congelados o en el Lider hay unos que vienen en tarros (Great Value en Líder)

Christmas fruit Cake (Pan de Pascua de mi mamá)












I never posted this recipe before and I dont know why, anyway this is the Christmas cake recipe my Mom make all Christmas, is a really good recipe and with this quantites you have 2  cakes.

Honestly I think is the best Christmas fruit cake I tasted, is moist, lovely dark color, and smell fantastic, when I made this cake yesterday all the house smell to cinnamon,cloves and ginger all day:)

At home we love eat this cake in the Christmas morning at breakfast with a tea or a coffe.

Ingredients


1 kilo all purpose flour
3 tablespoon of baking powder
1 cup rum o cognac
250 grams butter
3/4 cup of walnuts chopped
1 cup of milk
2 cups of granulate sugar
3/4 cup dark raisins
3/4 cup golden raisins
1 1/2 cups candied fruit chopped 
1 teaspoon of  ground cinnamon 
1/2 teaspoon of ground ginger 
1/3 teaspoon grind cloves 
1/2 teaspoon grated  nutmeg
3 eggs
 1 egg more to wash the cake


Method


In a large bowl combine well the candied fruits,and the raisins, cover with the rum and let the fruits macerate, covered overnight.

Line the bottom of two pan with a round of wax paper and butter the paper.
In other bowl sift the  flour, baking powder, 1 cup  of sugar and spices (cinnamon,clove,ginger and nutmeg). Set aside.

Make a caramel in a pan with the other cup of sugar and cover with a little water, boil until ou have a caramel color.
Warm the cup of milk an carefully add to the caramel.Stir well.

Beat the butter and add the eggs, 1 at a time, beating well after each addition.
Drain the fruit mixture in a sieve set over the batter and beat the juices into the batter.
Pat the fruits dry and in a bowl toss them with 1/3 cup of flour mixture.
Combine the caramel  milk slowly into the batter  and add the fruits and walnuts chopped.
 Stirring until the mixture is just combined and turn the batter out into the prepared pan.
Preheat oven to 180° c.
Brush the top of the  cake with the remaining egg.
Bake the cakes for 1 hour and half .
Could be golden and dry, You can test with a thin brochette if is dry .

Let the cakes cool in the pan for 30 minutes.
Remove the side of the pan, and invert the cake onto the rack.
Remove the wax paper carefully invert the cake and let it cool completely.

Pan de Pascua (de mi mamá)










 
 
 
 
Siempre había pensado hacer esta receta de mi mamá (que considero el mejor pan de pascua que he porbado) mi mamá lleva años haciendole incluso antes lo vendía a pedido (ahora ya se cansa mucho tiene 82 años)
La considero una receta estupenda de pan de pascua (me ha tocado probar varios) es húmedo,  delicioso, tiene la cntidad justa de frutas y nueces y huele maravilloso.
Con esta cantidad salen 2 panes de pascua asi si quieren menos hacer la mitad d ela receta, se puedehacer en este tipo de molde (mas alto) o en los otros más extendidos.
Además tengo la receta de mi mamá de las galletas de navidad que mi mamá hace siempre, aún hace para regalar!

Turkey pot pie










This pie is a delicious recipe for leftover roast turkey.
Or when you want to make (perhaps to the day after Christmas!
I made a veggie version to daugther.
Adapted from a recipe of BBC Food.







Ingredients (4 servings)


1 tablespoon vegetable oil
1 onion sliced
1 garlic clove crushed
1 carrot chopped
250 grs roast turkey shredded
1 red chili chopped
200 ml white wine
100 mol chicken stock
1 egg for egg wash the pastry
300 grams shortcrust pastry

(although I put a link for shortcrust pastry dont worry you can buy shortcrust pastry or other in groceries and use, the idea is dont works so much at Christmas, anyway this is a good recipe)



For veggie stuff

2 zuchinni grated or chopped
1/2 cup little green peas (frozen)
1/2 cup of chopped corn (frozen)
1 tablespoon oil
1 garlic clove.
1 onion chopped
1 carrot chopped
200 ml white wine
1red chilli chopped

(the recipe is the same only change the ingredients)

Method

Heat the oil in a frying pan over a medium heat.
Fry the onions and garlic by 4 to 5 minutes or until
golden brown and softened.

Add the remaining ingredients, (carrot chopped, turkey, red chili, green peas.white wine and chicken stock)
bring the mixture to the boil and simmer for 20 minutes.
Set aside to cool.
Preheat the oven to 180°
Divide the mixture between four individual pie dishes.Cut the pastry into four pieces, each big enough to cover the pie dish.
Brush the edge of each dish with egg wash and cover with the pasttry.
Trim any excess pastry and brush the lid with remaining egg wash.

Cook for 20 to 25 minutes until the lid is crisp and golden brown.

Pies de pavo desmenuzado o picado















Este pie es una deliciosa receta para las sobras del pavo asado o restos de pavo. (tambien se puede hacer con pavo picado)
Es una receta para el dia siguiente, se aporvechan los restos de pavo y se tiene el almuerzo listo.
Normalmente lo sirvo con ensaladas.
Adaptado de una receta de BBC Food.

Ginger-bread biscuits (Biscuits pain d'épices)




Those ginger-bread biscuits is the first time I made, and really I love them.
Are different than others cookies but are really soft and delight.

Some tips


Chill the dough before rolling it out. You'll find it is much easier to work with after it's been refrigerated for at least an hour.

• Roll the dough out on a work surface lightly dusted with a mixture of flour and icing sugar, or between pieces of baking parchment.

• Keep biscuit cutters from sticking to the dough by dusting them with flour.

• If you're cutting out large or delicate shapes, save them from falling apart by rolling out the dough on baking parchment, removing the scraps and sliding the parchment directly onto a baking tray.

• Let gingerbread cool completely before you ice

With this recipe Im sharing this recipe For Christmas to Buscador de Recetas Chilenas 

Ingredients

400 grams all purpose flour
1 egg
1/2 teaspoon of baking powder
150 grams of golden sugar
125 grams butter room temperature
2 teaspoon of Four spices  ( a french spice easy to make)
1 teaspoon of ginger ground
1 pinch of salt
150 ml golden syrup or honey

Glaze 

250 grams icing sugar
120 g butter room temperature
1 tablespoon of heavy cream

Note : anyway you can garnish  with other glaze you like more.



Method

In a bowl  mix well first the golden sugar and butter, add the egg, and golden syrup, 
Finally add flour, 4  spices, ginger grounds and baking powder. mix well making a dough.
(You can use electric mixer too)
make a ball with dough (if  needed add a little more flour) and wrap with plastic film and put in fridge about 2 hours and half.

Galletas con especias y jengibre














Estas galletas se las recomiendo de todas maneras son de las recetas más ricas que he hecho el ultimo tiempo y creo que es por la combinación de especias. Me demoré un poco en traducir porque primero la traduje al ingles ( estaba en francés) y ahora al español, no es un problema hacerlo solo les explico porque a veces me demoro una receta hay que traducirla con cuidado porque o sino puede inducir a errores,

Con esta receta comparto con el Buscador de Recetas chilenos donde pueden ver otras recetas de Navidad.


Está adaptada de una receta de Comptoir des gourmands,


Algunos tips sobre estas galletas:

. Enfriar la masa antes de usar. Será mucho más facil trabajar si la masa está fria o refrigerada.

.Evite que los cortadores de galletas se peguen o se adhieran demasiado a la mesa usando harina antes de cortar.

.Si se corta algun modelo o figura más delicada poner en un papel mantequilla y de ahi transferir o poner directo en la bandeja de hornear

.Dejar que las galletas se enfrien completamente antes de cubrir con el glaceado.

. Y por último en el hemisferio norte no tienen problema porque hace frio pero acá hace calor (32 o 34° estos dias)
despues de glasear las galletas poner en el refrigerador las galletas, y la cubierta queda perfecta y no se deshace.

Ingredientes

400 grs. de harina sin polvos de hornear
1 huevo
1/2 cucharadita de polvos de hornear
150 gramos de azúcar rubia o no refinada
125 gramos mantequilla a temperatura ambiente
(puede ser margarina)
1 cucharadita de jengibre molido o rallado
1 pizca de sal
150 ml de jarabe de maiz o miel 


Glacé

250 gramos de azúcar glass o impalpable
120 gramos mantequilla a temperatura ambiente
1 cucharada de crema espesa


(pueden usar otro glaceado si se desea)

Preparación

En un bol mezclar el azúcar rubia, con la mantequilla o margarina y agregar el huevo y el jarabe de maiz  (golden syrup) o la miel.

Finalmente agregar la harina, los polvos de hornear, las cucharaditas de 4 especias y el jengibre molido.
Mezclar bien formando una bola de masa.
Si se pega agregar un poco más de harina. Envolver en film plástico y dejar en el refrigerador por lo menos dos horas y 1/2.

Precalentar el horno a 180°c.
Enmantequillar la bandeja para horno y poner papel mantequilla.
Con el rodillo estirar la masa dejándola de unos 4 cm de grosor.
enharinar los cortadores de galletas y cortar.
Ir dejando en la bandeja de hornear.
Dejando espacios entre ellas.
Llevar a horno de 10 a 12 minutos.
Estarán listas cuando esten ligeramente doradas y al tocarlas al centro se hunde pero vuelve a su forma.

Para el glacé mezclar la mantequilla, azúcar y la crema  hasta tener el frosting para cubrir las galletas, adornar con perlitas u otro.
