Pumpkin pie with caramelized waltnuts












To participate in this  Creative Tuesdays I think in many Thanksgiving recipes, finally I choose a Pumpkin Pie, all we know pumpkin is special for Thanskgiving and I love  this Pie with caramelized nuts.

 Happy Thanksgiving from here to all you celebrate in US.


Ingredients (8 servings)

1 1/3 cups of flour all purpose
1/2 teaspoon of salt
1/2 cup of butter
4 to 5 tablespoon of ice water(to make the dough)


Filling

2 cups of boiled and mashed pumpkin
2/3 cup of golden sugar
1/4 cup of glass sugar
1 teaspoon of cinnamon powder
1/2 teaspoon ginger powder
1/4 teaspoon of salt
1/4 teaspoon of nutmeg1 1/2 teaspoon of grated orange peel
1 1/2 cup of heavy cream
3 beaten eggs

garnish
2 tablespoon of sugar
1/2 cup of chopped waltnuts or in quarters
whipp cream to serve

Method

For pastry
In a bowl mix the flour and salt, adding a little butter to form coarse crumbs.


Add in a little cold water to form the dough into a ball wrap in plastic wrap and leave in refrigerator for about 20 minutes.


Preheat oven to 180 ° c.


Later put the dough on a floured surface and roll the dough giving the pie shape of the mold to be used.


Cover with waxed paper and place a weight (some beans)


and cook about 8 minutes.


Remove the weight, reduce the heat (160 degrees) and cook 4 minutes more.


Remove and let cool.

 

Filling

In a bowl mix the pumpkin with sugar and add the cinnamon, ginger, salt, nutmeg, orange zest and incorporating them finally add the cream and eggs.

Pour into prepared the dough and cook in oven 180 ° cdurante about forty to fifty minutes, until cream is firm.
Cool 3 hours in refrigerator.
Meanwhile in a skillet with a little sugar caramelized nuts and always medium-low heat, stirring until they are caramelized and roasted.
Cool de nuts over an aluminium foil
Whip up some cream for garnish and then decorate with nuts caramelized.


Unfortunately my post I did for Creative Tuesday was not accepted, must include a sign that said Thanskiving, somebody  tell me  when  was late and had taken the photos, I'm sorry because I have many events that require time and I gave this a long time because I did it with love.

EN ESPAÑOL

Pastel o pie de calabaza con nueces caramelizadas

Thanksgiving  es una costumbre hermosa.
Para estema vi varias recetas porque quería que fuera algo especial por supuesto.
Finalmente me decidí por este Pie de calabaza (zapallo) con especias y con nueces acarameladas.
Queda delicioso.
El zapallo es otro alimento que es muy versátil  se puede hacer dulce o salado y lo sabemos bien acá, los porotos granados, con zapallo, las sopaipillas con zapallo, e incluso antiguamente se hacía mucho de postre zapallo asado al horno con miel queda muy bueno.
El zapallo es de esas cosas que tengo siempre en el refrigerador-
Y congela muy bien.









Ingredientes
masa

1 y 1/2 taza de harina sin polvos de hornear
1/2 cucharadita de sal
1/2 taza de mantequilla
4 a 5 cucharadas de agua helada para unir
bien la masa

Relleno

2 tazas de puré de zapallo
2/3 taza de azúcar rubia
1/4 taza de azúcar glass o en polvo
1 cucharadita de canela molida
1/2 cucharadita jengibre en polvo
1/4 cucharadita de sal
1/4 cucharadita nuez moscada
1 y 1/2 cucharadita de ralladura de naranja
1 y 1/2 taza de crema
3 huevos batidos

Para el topping
1/2 taza de nueces picadas
2 cucharadas de azúcar
crema batida para decorar (optativo)

Para la masa

En un bol mezclar la harina y la sal, agregar la mantequilla con los dedos formando migas
gruesas. Añadir el agua de a poco hasta formar una masa.
Formar una bola con la masa envolverla en film plástico y dejarla en el reftigerador unos 30 minutos.

Retirar y acomodarla en un pie de tarta (aporx 25 minutos) cubrirla con papel mantequilla
y ponerle un peso arriba como de algunas legumbres o arroz.
Precalentar el horno a 180°.
Llevar a horno por unos 8 minutos.
Despues retirar sacar el peso y el papel y cocinar unos 4 minutos más.
Retirar y dejar enfriar.

Relleno

En un bol batir el zapallo molido con el azúcar, canela, jengibre, nuez moscada y sal.
Luego agregar la ralladura de naranja, la crema y los huevos, unir bien para que quede una mezcla homogénea.
Verter sobre lka masa prepara y llevar a horno (unos 180°c) y cocinar unos 40 a 50 minutos o hasta cuajar.
Refrigerar por lo menos unas 3 horas.
Mientras en un sartén dorar las nueces con el azúcar hasta que esten caramelizadas y tostadas.
Verter a un papel aluminio y dejar enfriar.
Decorar  con un poco de crema y las nueces caramelizadas.

  3. Oh, it look delicious, Gloria! But I do think he will say you have to have the word 'thanksgiving' or 'thank you' IN the entry....so if you bake something you would have to write 'thanksgiving' in icing or something like that. Make sense?

    Even if it doesn't end up being included, it sure looks yummy. Love the idea of the carmelized nuts. I might have to try that this holiday!

  17. I never had any kind of pie except pumpkin and lemon meringue until I was over 20 years old, and pumpkin pie still remains my very favorite. I've never garnished it with nuts, but whipped cream is an absolute must! I'll be making probably 2 or pumpkin pies for Thanksgiving, and my recipe is very similar to yours!

  43. Oh gloris, this is so wonderful and ty for the thought. Looks incredible too, I might add. BUt photography is not allowed and made objects have to include artwork, not simply just made. The cupcakes to had to include artwork but were the exception really as normally it has to be all art. TY though--must be language thing, I am sure.
