Zucchini and spinach quiche









Love the quiches because are wonderful  at any time, winter or summer. They are fast and when they are at  oven  you can while make  a dessert, setting the table, and other things that are make always in a house.




This zucchini and spinach quiche I especially loved by the dough that is whole flour, is a very light mass.


This recipe is adapted from a Chef Clara Mailis her specialty is low glycemic recipes.

Ingredients dough

2 cups whole flour
(I used 1cup of white flour and 1 cup whole flour)
is OK the 2 options
70 grs. butter or marguerine
1/2 cup of warm water
1 teaspoon of salt

Filling

500 grs. spinachs leaves
1 tablespoon onion chopped
2 or 3 zucchinis  in chunks boiled
3 eggs
3/4 cup of ricotta
3 tablespoon of grated cheese
1/2 tablespoon of oil
salt and pepper

Method dough

In a bowl mix the flour with margarine or butter and salt, slowly adding the warm water go by the spoonful, until a smooth dough does not stick in your hands, if necessary add a little more flour.

Wit a roll pin extend the dough.
Greased  a pie or or tart pan  of about 26 cm, place the dough over the leaving a border of 3 cm. high.


Bake  a preheated oven (180 ° C) for about 10 minutes. Reserve.


Stuffing


Cut the spinach into thin strips and put about 8 minutes in the microwave, once ready, drain and set aside.

Besides cooking the zucchini wi th peel, until soft.


Then drain them and crush them.


In a skillet saute the onion and once that is ready to mix with the zucchini, spinach, and eggs.


add two tablespoons of grated cheese, seasoning and add ricotta .

When ready  empty the mix of pre-cooked quiche dough.


Sprinkle with remaining cheese. Bake to 200 ° c for 40 minutes. The cover  should be golden.


Serve with salad.

Quiche de harina integral con calabacines y espinacas









Lo que me encanta de este quiche es que se puede hacer casi en cualquier época, porque zapallitos (calabacines) hay practicamente todo el año y tambien espinacas.
Se hace rápido y mientras está en el horno se pone la mesa, se hace algún postre y esas cosas que nunca falta en una casa.
Normalmente sirvo los quiches con ensaladas, incluso para la noche son muy buenos porque no te demoras nada.
Esta receta está adaptada de una de Clara Majlis que es una chef que se especializa en reetas de bajo índice glicémico .

La masa es con harina integral . Pero tambien se puede mezclar  una taza de harina blanca y una de integral.


Ingredientes

2 tazas de harina integral
(o 1 de integral y una de harina blanca)
70 grs. de mantequilla o margarina
1/2 taza de agua tibia
1 cucharadita de sal

Relleno

500 grs. de hojas de espinacas
1 cucharad de cebolla picada fina
2 o 3 zapallitos italianos cocidos y trozados
3 huevos
3/4 taza de ricotta
3 cucharadas de queso rallado
1/2 cucharada de aceite
sal y pimienta

Preparación

En un bowl mezclar la harina con la margarina o mantequilla derretida y la sal, agregar de a poco el agua tibia (en cucharadas)  formando una masa, si se necesita agregar un poco harina.
La masa no se debe pegar en las manos.
Estirar y forrar con esta masa un molde de quiche o tarta de 26 c.
Precalentar el horno a 180°c y cocinar durante 10 minutos, retirar y reservar.

relleno

Lavar las epinacas y cortar en tiras, llevar al microondas por unos 5 mintos.
Una vez listas colar y aplastar con un tenedor.
Aparte cocine los zapallitos (con la cáscara) cortados en pedazos.
Cocinar hasta que estén blandos.
Luego colarlos y molerlos un poco.

En un sartén sofreir la cebolla picada, a continuación mezclar con las espinacas picadas y los zapallitos en trozos.
Agregar los huevos , la ricotta 2 cucharadas de queso rallado y aliños.
mezclar bien.
Una vez que está bien  mezclado vaciar sobre la masa ya precocinada del quiche.
Espolvorear el queso rallado que queda.
llevar a horno a 200° y cocinar por unos 40 minutos.
Servir caliente o tibio, servir en ensaladas.
