Lemon cheesecake cupcakes










These delicious cupcakes I adapted from an amazing blog Cafe Fernando  this is one of more beauty blogs I know. He made this recipe with blackberries but I think any berry is good to this recipe.
Delicious for a Tea time or an special breakfast ot like a dessert.
I use to make the muffins pan and place the cases inside the mold.






Ingredients


Lemon Cheesecake Cupcakes Recipe

(12 servings)
Cookie base:


200 grs. of cookies (grinded)


60 ground almonds


2 tbsp sugar


3 tbsp butter, melted


Filling:




 For a creamy consistency, make sure that all the ingredients below are at room temperature.


1  cream cheese 200 grs. (Philadelphia or other)


3/4 cup of heavy cream (or sour cream)


1/2 cup sugar

2 large eggs


1/2 tsp vanilla extract


1 tbsp finely grated lemon zest


1 tbsp lemon juice


1 cup of raspberries (or any kind of berry)


2 tablespoon  powdered sugar


Method





Preheat your oven to 190° c
Line a 12-hole muffin tin with muffin cases and set aside.


Crush the cookies to fine crumbs and mix with ground almonds, sugar and melted butter.


Press 1  tablespoon of mixture into the base of each muffin case and place in the refrigerator to chill by 30 minutes.


Beat the cream cheese, heavy cream and sugar in a mixer until light and fluffy.

Add the eggs, one at a time, followed by vanilla extract, lemon juice and lemon zest, beating well after each addition.Mix well.


.Spoon the mixture over the cookie bases 3/4 full.


.Press three raspberries into the filling and bake for 25-30 minutes or until the cheesecakes are puffed and starting to color.

.Cool, then chill until ready to eat.


.Decorate each cheesecake with raspberries and dust with powdered sugar to serve.

Esta receta es de un Blog que tiene recetas maravillosas Café Fernando hace mucho que no iba y estuve mirando recetas y esta fue una de las que me encantó, el blog está en inglés pero es igual un blog hermoso para conocer.

Estos lemon cupcakes se pueden comer de postre o de merienda o para un desayuno relajado.
Usé los moldes de muffins para poner dentro las cápsulas de papel.


Cupcakes de limón y queso crema

Ingredientes (12 cupcakes)

Está compuesto de una base de galletas, luego una crema que es el cheescake y luego las frambuesas.

Masa de galletas

200 grs. de galletas molidas
60 grs. de almendras molidas
2 cucharadas de azúcar
3 cucharadas de mantequilla derretida

Relleno

Para una consistencia cremosa del relleno los ingredientes de más abajo deben estar a temperatura ambiente.

1 queso crema Philadelphia  (200 grs. o similar)
3/4 taza de crema espesa
1/2 taza de azúcar
2 huevos
1/2 cucharadita extracto de vainilla
1 cucharada de ralladura de limón
1 cucharada de jugo de limón
2 cucharadas de azúcar glass o azúcar en polvo
1 taza de frambuesas (o frutillas o arándanos)
(pueden ser frescos o congelados

Preparación

Precalentar el horno a 190°c.
Preparar un molde para muffins con las cápsulas de papel.
Moler las galletas y unir con las almendras molidas.
Agregar el azúcar y la mantequilla derretida.
Poner como basa en cada cápsula de papel una cucharada de la mezcla de galletas molidas.
Colocar el molde con las cápsulas de papel en el refrigerador por unos 30 minutos.

 Mezclar el queso crema, la crema o nata,y el azúcar. Unir bien hasta que esté suave y cremoso.
Agregar los huevos de a uno, enseguida el extracto de vainilla, el jugo de limón y la ralladura.
Mezclar bien.
Retirar del refrigerador llas capsulas con la base de galletas.
Rellenar cada cápsula con la crema  3/4 de su capacidad.
Sobre el relleno  de cada una colocar unas 3 frambuesas presionando un poco.
Llevar a horno por unos 25 a 30 minutos o hasta que estén dorados y listos.
Retirar y dejar enfriar
Decorar con otras frambuesas y espolvorear con azúcar glass o en polvo.
