The other with daugther we made these delicious Chocolate and raspberry muffins was a nice surprise, I find this recipe in Betty Crocker, of course they use a cake product (box Betty Crocker® SuperMoist® devil's food cake mix ) but we made a nice recipe we had of chocolate muffins.
They are filled with raspberries jam and cover with a chocolate ganache.
Ingredients (12 muffins)
4 tablespoon of soft butter
150 grs. brown sugar
2 large eggs
200 grs. flour
1 teaspoon baking soda
80 grs. powder cacao|
130 grs. sour cream or plain yogurt
Filling
2/3 cup raspberry jam
Glaze and Garnish
300 grs. dark baking chocolate, chopped
2/3 cup whipping cream
Fresh or freeze raspberries, if desired
Method
Heat oven to 180 ° c
In a bowl place butter, sugar, eggs and flour, baking soda and cocoa powder, mix everything with a whisk until the mixture makes a smooth consistency.
Add the sour cream and mix well.
Place paper baking cup in each of 12 muffin cups. Fill muffin cups 3/4 full .
Bake 20 minutes or until toothpick inserted in center comes out clean. Cool in pans 5 minutes. Remove from pans to cooling racks. Cool completely, about 30 minutes.
By slowly spinning end of round handle of wooden spoon back and forth, make deep, 1/2-inch-wide indentation in center of top of each cupcake, not quite to bottom (wiggle end of spoon in cupcake to make opening large enough).
Spoon jam into small resealable food-storage plastic bag; seal bag. Cut 3/8-inch tip off 1 bottom corner of bag. Insert tip of bag into opening in each cupcake; squeeze bag to fill opening.
Place chocolate in medium bowl. In 1-quart saucepan, heat whipping cream just to boiling; pour over chocolate. Let stand 3 to 5 minutes until chocolate is melted and smooth when stirred. Let stand 15 minutes, stirring occasionally until mixture coats a spoon.
Spoon about 1 teaspoon chocolate glaze onto each muffins. Garnish each with raspberry.
If you refrigerate these cakes, let them stand at room temperature at least 20 minutes before serving.

Muffins con chocolate y mermelada de frambuesas
El otro día con mi hija la Espe, hicimos estos muffins de chocolate rellenos de mermelada de frambuesa.Y fue una deliciosa sorpresa. La receta está inspirada en una de Betty Crocker (ellos ocupan un caja de super moist chocolate cake) pero yo tenúia una muy buena receta de muffins de chocolate. Van cubiertos con un ganache de chocolate.
Ingredientes
(12 muffins)
4 cucharadas de mantequilla
a temperatura ambiente
150 grs. de azúcar rubia
2 huevos grandes
200 grs. de harina
1 cucharadita bicarbonato de soda
80 grs. de cacao en polvo sin azúcar
130 gra. de sour cream o yogurt natural
Relleno
2/3 taza de mermelada de frambuesa
Glace
300 grs. chocolate en barra trozado
2/3 taza de crema para batir
Preparación
Calentar el horno a 180 ° c
En un bol mezclar la mantequilla,azúcar, huevos, harina y bicarbonato de soda y cocoa en polvo, batir con una batidora manual.
Batir hasta lograr una consistencia cremosa.
Agregar la sour cream o el yogurt natural
mezclar bien.
Poner las cápsulas de papel en los moldes de muffins.
Rellenar con la mezcla 3/4 de su capacidad.
Hornear por unos 20 minutos o hasta que se vean secos y ligeramente dorados, se puede insertar un palito de brocheta para ver si está bien.
Dejar enfriar por lo menos 30 minutos.
Cuando esten fríos con la parte de atras de una cuchara de madera hacer un pequeño hoyo para rellenar con la mermelada.
Colocar la mermelada en una bolsa o manga plástica y cortar una punta, luego rellenar el hoyo del muffins.
Emparejar la superficie de rastros de mermelada.
Preparar el ganache de chocolate
Colocar el chocolate en barra en un bol. En una olla pequeña calentar la crema para batir.
Vaciarla sobre el chocolate en barra.
Dejar por unos 5 minuitos hasta que el chocolate se empieze a derretir.
Revolver de vez en cuando para que se vaya formando la crema.
Dejar por unos 15 minutos hasta que la crema de chocolate tenga consistencia y esté unida.
Con una cuchara proceder a poner una capa de chocolate en cada muffin.
Decorar con frambuesas frescas o coingeladas.
Si se dejan en el refrigerador dejar en temperatura ambiente antes de servir.
