Mussels au gratin (choritos o mejillones al gratin)







Without a doubt my favorite foods are  from the sea, seafood shrimp, mussels, clams etc.

Anyway , this recipe is about small mussels, in fact these are canned but you can do with mussels, fresh, frozen or canned are very delicious, I can tell when I made this recipe my youngster wiped the plate with bread .. .
Is a really lovely and simple appetizer.



The recipe

Mussels au gratin

Ingredients

1 kilo mussels (washed and without shells)
or 3 tins of canned mussels
4 tablespoon of white wine (chardonnay or other)
3/4 cup of  heavy cream
1 cup parmesan cheese (grated)
2 tablespoon of butter
sal and pepper
chopped cilantro

Method

Preheat the oven at 190° C, Place the mussels in shells or in ceramic plates (like pictures)
Over them place wine, cream and grated cheese, add some butter and seasoning with salt and pepper.

Place in  an oven dish and heat by 7 to 8  mi nutes  or until are gratined.
Take out of the oven an serve with chopped cilantro or parlesy.
Serve inmediately.
I love this recipe by the simple and yummy.
Serve with a lovely ice  white wine (chardonnay or saugvinon blanc)

Choritos al gratín (mejillones)

No es un misterio que adoro el pescado, los mariscos y la comida de mar, es realmente mi predilecta.
Esta receta e simple y deliciosa se puede comer como un delicioso aperitivo o como una comida tipo merienda, se puede acompañar de un rico pan tostado y un buen vino blanco helado.
Se puede hacer con mejillones frescos (choritos) o envasados, queda igual de bien.
La receta

Ingredientes

1 kilo de choritos (o mejillones) limpios, lavados sin las conchas (guardar algunas
o 3 tarros (botes) de choritos al agua.

4 cucharadas de vino blanco
3/4 taza de crema o nata espesa
1 taza de queso parmesano rallado
2 cucharadas de mantequilla
sal y pimienta
cilantro picado o perejil


Precalentar el horno a 190° C, colocar los choritos en conchas o en platos de cerámica aptos para horno (Los mios los compré en Casa & Ideas)
Sobre los choritos colocar repartiendo el vino blanco y la crema, y espolvorear con queso rallado,
encima un trozo de mantequilla y sazonar con sal y pimienta.
Colocar los platos o conchas sobre una bandeja de horno, llevar a horno por unos  7 a 8  minutos o hasta que esten gratinados(son muy rápidos).
Retirar del horno y servir de inmediato con cilantro o perejil picado, acompañar de pan y vino blanco helado.
Es rico, simple y rápido.

Sweet potatoes dessert (postre de camotes o boniatos)

Another delicious recipe for Peruvian cuisine which you know I'm a fan.

The Peruvian Pastry is very old, and many of  their  recipes are not yet known to us. For example, sweet potatoes, use a lot of Peruvians, they use in treats and desserts and others.


When I found this recipe I loved it, saying "flan" but rather say it is a pie without dough, the texture is soft and delicious, is a kind of rich custard.

Ingredients

3/4 kilo sweet potatos (boiled)
2 cups of evaporated milk
1 cup wheat flour
2 eggs
2 tablespoons of butter
1 cup 1/2 of sugar
2 teaspoon of liquid vanilla
Preparation:


1. In a pot, boil the sweet potatoes and while they are still hot, peel and mash them. You can also add evaporated milk to the mixture.
2. Then add the flour, stirring well so there won't be any lumps.


3. Pour this into a large bowl and mix in the sugar, eggs, 2 tablespoons of melted butter and the vanilla extract.


4. Butter the pie dish, add the mixture and bake on 180 C  by 30  to 40 minutes or until it has the consistency of a pie and starts to turn golden.

5. Remove from the oven and let it cool. Garnish with almonds and serve.

Postre Camotes, batata o boniatos


Esta es otra deliciosa receta de la Repostería Peruana, de la cual soy admiradora, la historia de la repostería y comida peruana es muy antigua, del tiempo  anterior al período colonial, despues con la fusión de ingredientes españoles, sus recetas fueron ganando en sabor y textura. Su gran valor es que hasta el día de hoy resaltan la comida propia desde sus orígenes.

Antiguamente en Chile se hacía bastante camote pero esta cosa de correr y que todo se quiere rápido y ya listo. (Para cocinar se requiere cierta organización y dedicación) los camotes han ido perdiendo su lugar. Pero en Chile aparte de las ferias se encuentran en los Líder y en el Jumbo.
Se parecen mucho a las papas aunque su textura es diferente y más suave por eso se usa más para postres, está el camote más pálido y el más amarillo, pero de sabor me gustan los dos.

Esta receta está adaptada de un lugar de recetas Peruanas muy bueno.








Ingredientes

3/4 kilo de camotes o boniatos
2 tazas de leche evaporada
1 taza de harina integral
2 huevos
2 cucharadas de mantequilla
1 taza 1/2 de azúcar
2 cucharaditas de vainilla

Preparación

1. En una olla cocinar los camotes y cuando estén listos, pelar y moler como puré.
Agregar la leche evaporada y mezclar bien.

2.Agregar de a poco la harina uniendo bien, para que no queden grumos.

3.Colocar la mezcla en un bol grande y agregar los huevos de a uno, azúcar, la mantequilla y el extracto de vainilla. Unir bien hasta tener una consistencia homogénea.

4.Enmantequillar un molde de pie o tarta y vaciar en este la mezcla.

5.Calentar el horno a 180° y cocinar por unos 30 a 40 minutos o hasta que tenga la consistencia d eun pie o esté dorado y firme.

6. Retirar del horno y dejar enfriar.  Adornar con almendras laminadas y con algunos berries

7. Refrigerar hasta servir.
