This cranberry panacotta is smooth and delicious after a Christmas dinner or a lunch.

Ingredients
(6-8 servings)
2 tablespoon dried cranberries
1 tablespoon corinto raisins
3 tablespoon dark rum
4 cups double cream
150 grams powdered sugar
1 1/2 envelope unflavored gelatine (12 g.)
1 teaspoon ground ginger
3/4 teaspoon nutmeg
1 teaspoon ground cinnamon
1 handful berries or cranberries to serve
Method
Place the raisins and cranberries into a small bowl and cover with the rum.
Set aside to soak for at least 30 minutes.
Meanwhile soak the unflavored gelatine in a cup with cold water until sofetened.
In a heavy pan heat the double cream, sugar and ground spices.
Bring to the boil, then reduce the heat until the mixture is simmering and simmer for 2-3 minutes, whisking until the sugar has dissolved.
Remove the cream mixturefrom the heat and whisk in the gelatine until dissolved.Drain the raisins and cranberries and stir into the cream mixture (discard the soaking liquid)
Pour the mixture into moulds or ramekins, Filling them to three quarters full. Set aside to cool completely, then cover with cling film and chill in the fridge at least 3 hours until set.
To serve disp the ramekins briefly into hot water to loosen each panna cotta and turn onto serving plates. Scatter over some berries or cranberries to garnish.

Panacotta de Navidad
Espero que hayan tenido una bonita Navidad y ahora puedan descansar de los ajetreos navideños.
No me agota cocinar y preparar cosas para Navidad. Aqui en Santiago lo que me mata es el calor.
pero así nos tocó!
Esta panacotta es fácil y agradable especial para comer despues de una cena o almuerzo, tiene una textura muy liviana.
Está preparada con cranberries que son buenísimos pero tambien se puede hacer con otros berries.
Ingredientes
6 a 8 porciones
2 cucharadas de cranberries secos
1 cucharadas de pasas corinto
3 cucharadas de ron
4 tazas de crema para batir
150 gramos de azúcar en polvo
1 1/2 sobres de gelatina sin sabor (11 gramos)
1 cucharadita jengibre en polvo
1/4 cucharadita nuez moscada
1 cucharadita canela molida
1 puñado de crenberries secos o berries para adornar
Preparación
Poner a remojar las pasas corinto y los cranberries secos en ron en un bol pequeño.
Dejarlos por unos 30 minutos para que se impregnen.
Mientras tanto colocar la gelatina en polvo en 3/4 taza de agua fria.
En una olla mediana colocar la crema, azúcar, y las especias .
Calentar hasta que hierva despues disminuir la temperatura y cocinar por unos 2 a 3 minutos, revolver para que el azúcar que de bien disuelta.
Retirar la crema del fuego y agregar la gelatina ya disuelta.
Escurrir las pasas y cranberries y agregar a la crema. Desechar el líquido que quede donde se remojaron.
Repartir la crema ya preparada en los pocillos o ramekins (6 a 8 porciones) Llenar 3/4 de la capacidad y dejar enfriar completamente . Cubrir con film plástico y llevar a refrigerador por lo menos 3 horas.
Para servir desmoldar la base de los moldes por un poco de agua tibia o caliente y desmoldar con la punta de un cuchillo y dar vuelta en un plato.
Servir con cranberries o frambuesas.
