Poires Belle Helene ( Peras al chocolate) chocolate pears







I have other chocolate pears  into blog but I try this recipe of  Rachel Khoo   from  "The Little paris Kitchen " because I love cardamom!

Ingredients

1,5 litres water
1 vanilla split and seeds scraped
or 1 teaspoon of vanilla extract
150 g sugar
4 firm pears peeled with the tstalks still attached 

Cardamom chocolate sauce
100 g dark chocolate chopped finely
150 ml double cream
3 cardamom pods crushed

Method

Bring the water, sugar vanilla bean and seeds (or vanilla extract) in a medium to large saucepan stirring occasionaly until the sugar is dissolved.

Add the pears and place a  lid on top to keep them submerged , then simmer gently for 15 to 20 minutes.

Insert a skewer or small sharp knife into the pears to test whether they are tender.When the pears are cooked leave them to cool inh the syrup for at least an hour to give them time to take on the flavour of the vanilla.

For the sauce, place the chocolate in a heat proof bowl. Put the cream and cardamom pods (and seeds) in a small saucepan.
Stir and bring to the boil  (careful not to burn) . Remove the cardamom pods (leave the seeds and pour over the chocolate .Stir gently until smooth. If it's too thick  add a little cream.

To serve put the cold pears on individual plates and pour over the warm chocolate sauce. If you like  you can add some vanilla ice cream.

Peras con salsa de  chocolate











He hecho peras en diferente formas y otras con chocolate y me encantan!
Las peras son deliciosas, creo que hemos comido todo el invierno peras y manzanas, uno de mis hijos tomas de desayuno peras y a veces manzanas.

Lo que me encantó de esta receta es que lleva cardamomo y es una especia tan rica.
Generalmente aqui en Chile solo se encuentra en polvo pero en una de esas encuentran semillas de cardamomo.
Una amiga Lola de Salados y postres  me las mandó de España y estoy encantada.
Son maravillosas las semillas de cardamomo Lola, gracias!

Esta receta es de Rachel Khoo que tiene un blog con recetas simples y deliciosas. vive en Londres y tambien en Francia.Me encanta la simplicidad de Rachel y como presenta sus platos.


Ingredientes

1 ,5 litro de agua
1 palo mde vainilla 
o 1 cucharadita de extracto de vainilla
150 gramos de azucar
4 peras firmes

Salsa de chocolate y cardamomo
100 gramos chocolate en barra en trozos
150 ml de crema espesa
3 semillas de cardamomo
o 1 cucharadita de cardamomo en polvo

Preparación

Poner a hervir el agua con las vainilla y el azúcar, revolver esporádicamente para que el azúcar se disuelva.
Colocar las peras en la olla y cocer a fuego suave por un rato con la tapa.
(unos 15 minutos)
Despues probar para ver si estan tiernas con la punta de un cuchillo o una brocheta de bamboo.

Cuando esten cocidas dejarlas por lo menos 1 hora para que se impregnen con la vainilla.

Para la salsa de chocolate colocar  el chocolate en un bol en trozos.
En una ollita mediana colocar la crema con el cardamomo
calentar por un rato y cuando hierva apagar el fuego.
Agregar los trozos de chocolate a la crema y revolvar suavemente.Si está muy espeso se puede agregar un poco de crema.
Para servir colocar las peras ya frías en un plato y bañar con la salsa de chocolate.
Si se quiere se puede servir con un poco de helado de vainilla.
