raspberries cheescake cupcakes














Are they a cupcake or are they a cheesecake?
Really I don't know but are really delicious!

Ingredients

150 grams cookies
60 g butter melted
For the filling
 
300g  cream cheese
1 tablespoon plain flour
100 g caster sugar
1 teaspoon vanilla extract
1 egg more 1 egg  yolk
3 tablespoon greek yogurt
150 g raspberries (fresh or frozen)
whipped double cream to serve

Preparation

Preheat the oven to 180°c-
Line a muffin tin with eight muffins cases.
Blend the cookies in a food processor until they resemble fine breadcrumbs.
Stir in the melted butter until well combined. Press the mixture into the base of the paper cases.
 
For the filling beat the  cream cheese in a bowl until smooth, then stir in the plain flour, sugar, vanilla extract, eggs and egg yolk and yogurt, beat until the mixture is light and fluffy.Put a few raspberries in the bottom of each case, reserving some for  garnish, then spoon the cream cheese mixture on top.Bake in the oven about 20 -30 minutes, or until cheescake filling is set, but still slightly wobbly in the middle.

Remove the cupcakes from the oven and set aside to cool for 30 minutes.
Remove the cupcakes from the tin, transfer to a plate and chill in the fridge for at least and hour or overnight.
To serve, carefully peel off the paper cases and top the cupcakes with   whipped cream and a few raspberries.

 Estos cheescake/cupcakes tienen este curioso nombre porque tienen forma de cupcake pero al probarlos son como un mini cheescake, es una de las recetas que aquí me han pedido que haga de nuevo, pero me falta tiempo para tanta receta pendiente, de a poco las voy haciendo.
El Universo de recetas ahora es impresionante porque aparte de libros de cocina, revistas, sitios en la red, blogs de cocina, piensen que hay en todos los idiomas mis favoritos son de USA, Inglaterra, Francia e Italia, idioma que puedo traducir la receta.
Antes una tenía el libro de recetas ah! y un cuaderno también tengo un cuaderno donde anoto recetas de mi mamá, abuelitas etc.

Ingredientes
Base
150 gramos de galletas (vino u otras)
60 gramos de mantequilla derretida

relleno

300 gramos de queso crema (tipo Filadelphia)
los quesos crema son de 220 más o menos pueden agregar
un poco más de yogurt.
100 gramos azúcar glass o azúcar polvo
1 cucharadita extracto de vainilla
1 huevo más una yema
3 cucharadas de yogurt griego
150 gramos de frambuesas frescas o congeladas
Crema batida para servir

Preparación
Precalentar el horno a 180°c
Preparar moldes de muffins con 8 capsulas de papel.
Moler las galletas en un procesador (o 1,2,3)
 En un bol mediano mezclar las galletas molidas con la mentequilla derretida (se puede derretir unos 20 seg en el microondas. )mezclar bien y repartir en los envases de papel haciendo una base para el cheescake.
Es más fácil si están dentro del molde de muffins.
Al colocar presionar un poco y reservar.

 
Para el relleno batir un poco primero la crema de queso Filadelphia (u otra) hasta que este cremosa agregar un poco de yogurt y batir nuevamente.
Entonces agregar la harina, los huevos, la yema de huevo, extracto de vainilla y el yogurt , batir bien hasta tener una consistencia cremosa y suave.
Poner en el fondo de los cupcakes unas pocas berries y entonces repartir la crema de queso en los cupcakes.
Cocinar de 20 a 30 minutos en el horno o hasta que la textura se vea firme y suave.
Retirar del horno y dejar enfriar por lo menos 30 minutos.
Para servir retirar la cápsula de papel y adornar con un poquito de crema y unos berries.
Conservar en refrigerador hasta servir.

    2. We were very lucky this year, my part of the country was lovely and warm the entire winter! Spring has come early here and I love it! All the birds are singing and the flowers are starting to bloom! Es maravilloso!!! :D

      Anyway is nice have frozen berries especial because we are in Winter but I think in September maybe will be the first strawberries!!
