lemon curd parfaits









When  I say  love lemon Im not kidding:)
And for this I have a label that say : lemon recipes.

I love lemon pies, lemon desserts, lemon cakes and especially lemon curd, so when I saw this recipe I love it!

I was tired today with one of the twins sick in bed but I wanna make a try to this recipe and was fine:)
Is a delicious and fresh recipe, to every season!

Ingredients
(6 glasses)

base
lady fingers cookies, cut into pieces

Simple syrup
1/2 cup water
1/2 cup sugar
2 tablespoon meyer lemon juice

Lemon curd

2 tablespoons meyer lemon zest
5 eggs yolk
3/4 cup sugar
3/4  cup lemon juice
5 tablespoons butter

For garnish

1 cup heavy cream
2 tablespoons confectioners'sugar
lemon zest

Method

Base
Cut cookies into tiny pieces.
 Place evenly in the bottom glasses..
 

Simple syrup

In a small saucepan and cook over medium heat until
sugar dissolves.
Allow to cool.
Spoon 1 to 2 tablespoons into each glass.
Store any leftover syrup in the fridge.

Lemon curd

Add lemon zest, lemon juice, sugar and yolks to a médium saucepan.
Whisk- and  cook over a medium low heat, adding butter right away.
Whisk until thick, which can take about 6 to 8 minutes.
Allow to cool a bit before adding to shot glasses
Spoon or pipe into glasses evenly.
Pop in the fridge for about 1 hour,

Garnish

Whip the heavy cream and confectioners' sugar.
Mix until fluffy.
Transfer to a piping tip and Pip into tip of parfaits.
Garnish with lemon zest.
 
     

 
Parfaits de lemon curd

 



 



Me encanta el limón ,me gusta el pie de limón, los cakes de limón, tartas en fin, pero especialmente el Lemon curd que es una crema de limón deliciosa.

 Hoy día me sentía bien cansada (hija enferma y demases) pero quería hacer este postre  porque por algo me gusta cocinar y tengo un blog de cocina!y fue muy bueno, delicioso y fresco.


Ingredientes
(6 copas o vasos)

 base
galletas de champagne o de vainillas en trozos

jarabe para mojar las galletas
1/2 taza de agua
1/2 taza de azúcar
2 cucharadas de jugo de limón

Lemon curd
2 cucharadas de ralladura de limón
5 yemas de huevo
3/4 taza de azúcar
3/4 taza de jugo de limón
5  cucharadas de mantequilla

Crema para cubrir
1 taza de crema para batir
2 cucharadas de azúcar en polvo o azúcar glass
ralladura de limón  para adornar

Preparación

En vasos o copas colocar pedazos de galletas  en el fondo, repartir en 6 vasos.
Para el jarabe o syrup poner en una olla pequeña a fuego medio el agua, el azúcar, cocinar hasta que el azúcar se disuelva.
Dejar enfriar.
Cuando este frio repartir cucharaditas sobre las galletas de champagne ya cortadas en los vasos.

Lemon curd

 En una olla mediana colocar las yemas, ralladura de limón,
azúcar y yemas. Batir bien y cocinar a fuego medio, siempre revolviendo o batiendo porque se irá espesando, agregar finalmente la mantequilla y revolver con cuchara de palo hasta tener un batido cremoso y espeso.
Este proceso puede durar de 6 a 8 minutos.
Dejar entibiar.
Repartir esta crema sobre las galletas de los vasos.

Crema
Batir la crema y agregar el azúcar glass o en polvo hasta que tenga una consistencia firme.
con una manga o una cuchara decorar y rallar un poco de cáscara de limón sobre los vasos o copas.
Dejar en el refrigerador hasta servir.

  31. This year I made Meyer lemon curd and truly in love with it. Now that it's season is over, I have to try with regular lemon! The parfaits look so tempting, and definitely need to buy some lemons to make this!
