Some of you maybe remember other cupcakes (Blueberry cupcakes) that I made a time ago healthy and delicious and were adapted from Eating Well. This other recipe is too from Stacey Fraser that work in Eating Well magazine and shared these special cupcakes recipes..
This is a vanilla cupcake with a delicious chocolate frosting.
Ingredients (12 cakes)
1 cup whole wheat flour
1 cup cake flour or white flour
1 teaspoon baking soda
1/2 teaspoon of salt
3/4 cup granulated sugar
1/4 cup canola oil
1 teaspoon of vanilla extract
1/2 cup unsweetened apple sauce
(or plain yogurt)
1 large egg
1 yolk egg
1 can evaporated milk divide
(1/2 cup for dough and 2/3 for frosting)
Frosting
1/2 cup all purpose flour
pinch of salt
250 grs. bitter chocolate finely chopped
1 cup confectioner's sugar
2 tablespoon of unsweetened cocoa powder
1 teaspoon vanilla extract
sprinkles or little flowers for garnish
Method
Make the cupcakes
Preheat the oven at 180°c. Line 12 muffin cups with paper liners.
Mix in a bowl whole wheat flour, cake flour, baking soda and salt.
Beat granulated sugar and oil in a large mixing bowl.
with and alectric mixer on medium speed until combined.
Add apple sauce, egg, egg yolk, and vanilla extract and beat until combined.
With the mixer on low, alternately mix in the dry ingredients and 1/2 cup evaporated milk,
starting and ending with dry ingredients until just combined.
Divide the batter among the prepared cups.
Bake the cupcakes until a toothpick inserted into the center comes out clean by 20 to 22 minutes
Let cool completely.
Frosting
Meanwhile whisk 2/3 cup of the remaining evaporated milk, all purpose flour, and a pinch of salt in a small sauce pan until no flour lumps remain.
Cook over medium heat, whisking constantly, util look like a thick, stiff paste. 2 to 5 minutes.
Remove from heat and continue whisking for about 30 seg. to cool.
Whisk in chocolate until completed melted.
Transfer to a medium bowl, add sugar, cocoa and vainilla, and beat until smooth and creamy.
Refrigerate the frosting untilthickned and cold, about 2 hours.
Spread the frosting on the cooled cupcakes and decorate.

Cupcakes de vainilla con glaseado de chocolate
Si ustedes visitan habitualmente mi blog recordarán una receta que hice de cupcakes de arándanos muy saludables y livianos que adapté de la revista Eating Well, una receta de Stacey Fraser, estos cupcakes tambien son de su creación y como los encontré tan buenos que se los comparto,son unos cupcakes de vainilla con una cubierta de chocolate muy buena.
Ingredientes
1 taza de harina integral
1 taza de harina blanca
1 cucharadita de bicarbonato de soda
1/2 cucharadita de sal
3/4 taza de azucar granulada
1/4 taza de aceite de maravilla u otro
1 cucharadita de extracto de vainilla
1/2 taza de salsa de manzanas sin azúcar
(o yogurt simple)
1 huevo grande
1 yema de huevo
1 tarro de leche evporada que se usará parte en la masa y
parte en el frosting
Frosting
1/2 taza de harina normal
1 pizca de sal
250 grs, de chocolate en barra (bitter u otro)
en trozos
1 taza de azucar glass o azúcar en polvo
2 cucharadas de polvo de cocoa
sin azúcar
1 cucharadita de vainilla
mostacillas o flores o frutitas para decorar
Preparación
Los cupcakes
precalentar el horno a 180°c
Preparar una bandeja de muffins para horno con capsulas de papel (12)
En un bol mezclar la harina integral, harina blanca, bicarbonato de soda y la sal, mezclar bien.
Aparte en otro bol batir el aceite, azucar granulada con una batidora eléctrica hasta que esté bien mezclado.
Agregar la salsa de manzana, el huevo, la yema de huevo, y extracto de vainilla y volver a batir hasta que esté bien mezclado.
Poner la batidora en velocidad baja y agregar alternativamente ingredientes secos y 1/2 taza de leche evaporada, mezclar bien terminando de nuevo con los ingredientes secos .
Distribuir el batido en las capsulas de papel que estan en la bandeja de muffins.
Llevar a horno de 20 a 22 minutos.
Hornear hasta que al insertar una palito fino de brocheta salga seco y limpio.
Despues dejar enfriar.
Frosting
En una olla pequeña batir 2/3 de taza de leche evaporada, agregar la harina, y una pizca de sal. Batir bien hatas que no hayan grumos.
Cocinar a fuego mediano por 2 a 5 minutos hasta que la pasta esté lisa y espesa.
Agregar el chocolate en barra y dejar que se disuelva completamente. Revolver bien para mezclar.
Traspasar a un bol mediano, agregar la cocoa en polvo, la vainilla y el azúcar glass.
Llevar al refrigerador hasta que esté espeso y frío.Aproximadamente unas dos horas.
Despues retirar y decorar los cupcakes, adornar con mostacilla o como se quiera.
