I love some french sites because always find lovely recipes like Elle a la table.
This white chocolate mousse is adapted from Elle magazine.
I dedicate this dessert to my lovely niece María de los Angeles that made this lovely pink tray..
Ingredients (6 servings)
Mousse
300 grs. white chocolate
3 tablespoon unsaborized gelatine
5 whites eggs1 cup of whipped cream
1 teaspoon of vanilla extrac
Soften the gelatine in cold water. Melt the chocolate bainmarie or in microwave oven (3 min at full power). Smooth it with a spatula and add the gelatine, after having drained: They melt immediately on contact with hot chocolate. Mix and let cool.
Beat egg whites until stiff. Whip cream incorporating vanilla until it forms peaks between the branches of the whip. Mix gently with a flexible spatula, egg whites and whipped cream, then add the chocolate mixture. Pour the mousse into a bowl or divide it into six glasses..
Place in fridge by two hours.
Prepare the raspberry sauce:
Put the raspberries and sugar in a pan and cook over high heat, about 3 minutes, until fruit is reduced to a thick sauce. Remove from heat, let cool and refrigerate.
Spread raspberry sauce on the white chocolate mousse and serve with some cookies if you like and garnish with some mint leaves.

Mousse de chocolate blanco con salsa de frambuesas
Esta receta está adaptada de la revista Elle de Francia.
Dedico este postre a mi sobrina María de los Angeles (Goyito) que me hizo esta bandeja preciosa.
Ingredientes (6 porciones)
Mousse
300 grs. chocolate blanco
3 cucharadita de jalea sin sabor
5 claras de huevo
1 taza de crema
1 cucharadita de extracto de vainilla
Compota de frambuesas
3 tazas de frambuesas
100 grs. de azúcar para mermelada
Preparación
Disolver la gelatina en agua fría.
Fundir el chocolate blanco a baño maría, o en microondas ( sólo unos tres minutos) suavizar con una espátula revolviendo suavemente.
Agregar la jalea ya disuelta. Mezclar bien hasta formar una crema y dejar enfriar.
Batir las claras como para un merengue, firmes, agregar la crema con la jalea y el chocolate blanco.
Suavemente unir las claras batidas con la crema de chocolate uniendo bien.
Repartir en copas (6)
Llevar al refrigerador por unas dos horas.
Mientras preparar la compota de frambuesas.
En una olla poner las frambuesas y el azúcar y cocinar por unos tres minutos revolviendo siempre hasta tener una especie de mermelada espesa.Reservar en el refrigerador.
Repartir la mermelada de frambuesas sobre los mousses ya preparados.
Se puede servir con galletas y adornar con hojas de menta..
