These Cranberry Upside Down are adapted from Joy of Baking . and were yumm!!
Here goes the recipe I made:
Ingredients
1 1/2 cups fresh or frozen cranberries (I used a cranberries jelly tin)
3/4 cup granulated sugar
1 tablespoon orange juice or water
1 tablespoon grated orange zest
(outer orange skin of orange)
Muffin batter
2 cups all purpose flour
3/4 cup granulated sugar
1 1/4 teaspoon baking powder
1/2 teaspoon salt
1 cup milk
1 large egg lightly beaten
1 teaspoon vanilla extract
4 tamblespoon unsalted butter
melted and cooled
Method
Preheat the oven at 190°c
Place the rack in the middle of the oven.
Butter 12 muffins tins.
Cranberry sauce:
In a medium saucepan place the cranberries, sugar,orange juice
and orange zest.
Cook over medium heat stirring frequently. until the sugar dissolves.
Cook about 10 minutes.
Remove from heat and set aside to cool slightly while you make the batter.
Muffin batter
In a large mixing bowl combine the flour, sugar, baking powder and salt.
In other bowl mix the milk, egg, vainilla extract and melted and cooled buttre.
Add the milk and egg mixture to the flour mixture.Stir just until combined. Do not over
mix the batter or the muffins will be tough when baked.
Divide the cranberry mixture among the 12 well greased muffins cups and then evenly spoon the batter over the cranberry sauce .
Place in the preheated oven and bake for about 20 minutes, or until are lightly browned and a toothpick inserted in the center comes out clean.
Let cool about 3 minutes and then invert them onto in a rack so the cranberry topping is face up.

1 y 1/2 tazas cranberries en lata o congeladas
(El lider vende unos tarros de jalea de cranberry de la marca americana Great value)
3/4 taza de azúcar granulada
1 cucharada de jugo de naranja
1 cucharada de ralladura de naranja
Ingredientes muffins
2 taza de harina sin polvos de hornear
3/4 taza de azúcar granulada
2 1/4 cucharadira polvos de hornear
1/2 cucharadita de sal
1 taza de leche
1 huevo batido
1 cucharadita de extracto de vainilla
4 cucharadas de mantequilla sin sal. derretida y enfriada
Preparación
Precalentar el horno a 190°c.
Enmantequillar una lata de 12 muffins.
Salsa de cranberry
En una olla mediana mezclar los cranberries, azúcar, jugo de naranja y cáscara de naranja.
Cocinar a fuego mediano revolviendo constantemente hasta que se disuelta -
Cocinar unos 10 minutos, luego dejar enfriar mientras e prepara el batido.
Batido para muffins
En un bol mezclar la harina, azúcar, polvos de hornear y sal.
En otro bol mezclar la leche, huevo, extracto de vainilla y mantequilla derretida y ya fría.
Agregar la mezcla de leche a la mezcla de harina y azúcar, mezclar bien .
Divir la mezcla de cranberry en los diferentes moldes de muffins y repartir el batido sobre la salsa de cranberry.
llevar a horno de 15 a 20 minutos o hasta que estén liugeramente dorados y al pinchar con una brocheta o palito salga seco.
Poner a enfriar por unos 3 a 4 minutos y luego desmoldar con cuidado dejando hacia arriba la parte de la salsa de cranberries.

These muffins are a triumph Gloria - I evilly want to lick the cranberry sauce off the top of them. Yum!
