Thanks God Im here!! Sorry I wanted post about Easter before but I didn't, but finally we have here a delicious Easter Carrot Cake .
This rich and moist spice grated carrot and toasted nuts, has great flavor. I adapted this recipe from Joy of Baking one of my favorites recipes sites. Enjoy!
THE RECIPE
Ingredients
2 1/2 cups finely grated carrots
1 cup waltnuts toasted and chopped
2 cups all purpose flour
1 teaspoon baking soda
1 y 1/2 teaspoon baking powder
1/2 teaspoon of salt
1 1/2 teaspoon ground cinnamon
4 large eggs
1 cup of granulate sugar
1 cup of canola oil
1 teaspoon of vanilla
Creme Cheese frostig
227 cream cheese room temperature
1/4 cup butter unsalted room temperature
1/2 cup double cream
250 grs. powdered or icing sugar
1 teaspoon grated lemon zest
1/3 cup of lemon juice
garnish some mints leaves and little marzipan carrots or
others Easter garnish
Carrot Cake
Preheat oven at 180° C and place rack in center of oven.
Butter a Cake a Cake pan about 24 cm.
or two pans of 24 x 5 cm.(I used only one pan of 24 cm and divide the cake in two pieces)
Toast the waltnuts for about 5 minutes or until lightly browned and fragant.Let cool and then chop coarsely.
Peel and finely grate the carrots.Set aside.
In a separate bowl whisk together the flour, baking soda, baking powder,salt and ground cinnamon.
Set aside.
Beat the eggs (handly or with electric mixer) until frothy. Gradually add the sugar and beat until the batter is sick and light colored.(about 3 minutes) Add the oil in a steady stream and then beat in the vanilla extract.
Add the flour mixture and beat just until incorporated.With a rubber spatula fold in the grated carrots and chopped nuts
Empty the batter in the pan and bake by 25to 30 minutes or until a toothpick inserted in the center comes out clean.
Remove from the oven and let cool in a wire rack. Cool completely before frosting.
Frosting
Beat the cream cheese and butter, on low speed, just until blended with no lumps.Gradually add the sifted powdered sugar and beat, until fully incoporporated and smooth.Add the cream and lemon juice and zest.
To assemble:
Divide the cake in two layers.
Spread withabout one third of the frosting.Gently place the other cake , top of cake facing down onto the frosting and spread the rest of the frosting over the top on the sides of the cake and decorated with marzipan carrots. Cover and refrigerate before serving.

Tarta de zanahorias de Pascua
Por fin estoy aquí. Hoy Jueves Santo, preludio de Domingo de Pascua, he estado un poco alcanzada de tiempo y me daba vueltas que hacer. Finalmente antes de ayer encontré esta receta de Tarta de Zanahorias en Joy of Baking del cual he hecho varias recetas, me gustan porque son bastante exactas y quedan muy bien. Aqui va la receta. Feliz Pascua pata todos!
Ingredientes
2 y 1/2 tazas de zanahorias peladas y ralladas
1 tza de nueces picadas
2 tazas harina normal
1 cucharadita de polvos de bicarbonato
1 y 1/2 cucharadita de Polvos de hornear
1/2 cucharadita de sal
1 y 1/2 cucharadita de canela
4 huevos
1 taza de aceite de maiz o girasol
1 taza de azúcar
1 cucharadita de vainilla
Glaseado
1 paquete de crema de queso tipo Philadelphia
1/4 taza de mantequilla sin sal
1/2 taza de crema o nata
1 taza de azúcar impalpable o azúcar glass
ralladura de limón
1/3 taza de jugo de limón
Preparación
Precalentar el horno a 180° C con el calor al centro del horno.
Enmantequillar un molde de unos 24 cm. para el cake.
Tostar las nueces por unos 5 minutos para que esten fragantes.
Dejar enfriar y cortar fino.
Pelar y rallar las zanahorias.
En un bol colocar la harina, los polvos de hornear, polvos de bicarbonato de soda, y canela en polvo, y sal. Mezclar bien. Reservar.
En otro bol batir los huevos con máquina o con batidora manual,gradualmente agregar el azúcar, y batir hasta que este espeso (unos 4 minutos) .Agregar el aceite uniendo bien, y la vainilla.
Agregar la mezcla de harina e incorporar y unir bien.Con una espátula de goma agregar y mezclar las nueces picadas y las zanahorias ralladas.
Llevar al molde enmantequillado y cocinar por unos 25 a 30 minutos a fuego medio. Con un palito o mondadientes probar si la textura está bien, debe estar húmedo pero no pegajoso.

Retirar el horno y dejar enfriar completamente.
Cuando esté frío dividir la torta en dos capas. y colocar una en un plato y con la mezcla de crema queso formar una capa. Colocar arriba la otra capa y cubrir con el resto de la crema de queso.
Adornar con zanahorias de mazapán y hojas de mentas o con otro adorno de Pascua.
Preparar el glaseado
En un bol batir la Crema de queso a temperatura ambiente, agregar la crema y la mantequilla, unir bien, hasta que tenga una consistencia cremosa, agregar la ralladura d elimón y el jugo de limón, finalmente agregar el azúcar impalpable o azúcar glass y unir bien con esta crema rellenar la tarta y cubrirla.
Refrigerar hasta servir.
