I think I love lemon more than chocolate, really! lemon Pie is my favorite and all lemon desserts so I begin a new Label with : lemon recipes, I will adding other lemon recipes.
Well to all of you love lemon like me here is a stunning recipe, Lemon meringue bread pudding
I find this delicious lemon dessert in Desserts Magazine
(This was a specialty of Marie Smith leonard, she adapted from a book called Joy of cooking in 1943)
Ingredients
6 servings
2 cups whole milk
2 cups fresh white bread crumbs
3 tablespoon unsalted butter softened
1/2 cup granulated sugar or splenda
4 large egg yolks (save the whites for the meringue)
2 teaspoons finely grated lemon zest
3 tablespoons strained lemon juice
Meringue
4 large whites
pinch od salt
3/4 cup granulated sugar or splenda or similar
Set a rack in the middle level of the oven and preheat at 180°c.
Warm the milk only a little, and pour the over the breadcrumbs in a small bowl.
Dont stir only let the moistened crumbs cool while you prepare the rest of the ingredients.
In a medium mixing bowl, use a rubber spatula to beat the butter and sugar together. Beat in the egg yolks one at a time, beating untilsmooth after each.
Switch to a whisk and mix in the lemon zest and juice.
When the crumb mixture is completely cooled or the milk will curdle when it meets the lemon juice. Use the rubber spatula to gently fold in the crumb mixture.
Scrape the pudding mixture into the prepared baking dish until set about 30 minutes.
Cool to room temperature on a rack before making the meringue - if you put the meringue on a warm pudding a watery layer of condensation will develop and leak out when you cut the pudding.
When you are ready to make the meringue preheat the oven at 170°c.
In a bowl whisk the whites with the pinch of salt and beat with a electric mixer on medium speed until soft peaks form. Gradually beat in remaining sugar, 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved about 3 minutes.
Scrape the meringue onto the cooled pudding and spread. Make sure the meringue touches the edge of the baking dish all around or it might slide off after it's baked.
Bake the pudding again until the meringue is set and light golden about 15 minutes.
Cool an serve at room temperature-
I garnish with grated lemon zest.

Budin de pan con crema de limón
Adoro el limón y especialmente los postres de limón, me gustan más que el chocolate.
Y este budín de limón cuando lo encontré pensé que sería delicioso y así fue.
Es realmente bueno como un pie de limón pero casi mejor!
(Espero ponerme al día con las traducciones, ya expliqué que este tiempo mi mamá estuvo muy enferma asi que tenía poco tiempo pero gracias a Dios está un poco mejor, gracias por los mails, saludos y oraciones, sigan rezando, gracias)
Ingredientes
6 porciones
2 tazas de leche entera
o semi descremada
2 tazas de pan de molde blanco fresco
cortado en cuadritos
3 cucharadas de mantequilla temperatura ambiente
1/2 taza de azúcar o sugarfor o splenda
4 yemas de huevo (reservar las claras para el merengue)
2 cucharaditas de ralladura de limon
(los mejores que encuentren, estos limones salieron preciosos
y el color es natural, no le puse nada)
3 cucharadas de jugo de limón fresco
Merengue
4 claras
pizca de sal
3/4 taza de azúcar o splenda o azucar light Iansa
Preparación
Precalentar el horno a 180°c.
Aparte en un bol u ollita calentar la leche sólo un poco y colocar dentro el pan de molde ya cortado en cuadritos.
No revolver aún, dejar sólo un rato para que se humedezca y se vaya deshaciendo.
Mientras preparar los otros ingredientes.
En un bol mediano batir la mantequilla con el azucar. Agregar de a poco las yemas de huevo incorporando de a una.
Batiendo suavemente.
Agregar el jugo de limón y la ralladura de limón.
El pan remojado debe estar frio cuando se vaya a agregar.
Con una espátula unir suavemente el pan remojado con la crema de limón ya lista.
Batir suavemente para deshacer algún grumo y unir bien la mezcla.
Preparar un molde o fuente de cerámica para colocar la mezcla. primero enmantequillar y luego vaciar.
llevar a horno unos 30 minutos.
Despues dejar enfriar antes de cubrir con el merengue.
Preparar el merengue
En un bol grande batir las claras(con batidora elétrica) con una pizca de sal hasta que tenga una buena textura suave y de ahí agregar de a poco el azucar, continuar batiendo hasta que se formen picos suaves y firmes.
Esparcir el merengue sobre la crema de limón ya casi fria y llevar a horno suave por unos 15 minutos (estar viendo es rápido) despues retirar y dejar enfriar, se puede servir frio o temperatura ambiente igual es delicioso para los que nos gusta el limón.
Este postre queda precioso tambien haciendo en moldes de cerámica pequeños (por ejemplo para una comida) y se hace todo igual solo se distribuye la crema de limon y despues el merengue y se pone al horno.

Interesting origin. I have a later edition of the Joy of Cooking (it's my go to cook book which my mom used too). There is a recipe for meringue but not with lemon. I do love lemon to cut the sweetness and meringue is a dessert that I can enjoy without lactose issues. I could eat the topping.
