These Banana muffins are so easy to make warm muffins are ideal for a mid morning sweet treat with a cup of tea or coffe:)
This recipe needs ripe bananas  -are more easy to mash and is packed full of sweetness and flavour.
Muffins are best eaten on the day but they freeze well too allow them to cool completely then pop in a freezer bag and you can freeze for up to 2 months.
Defrost at room temperature for about 2 hours and you can warm in a low oven 5-10 min.
 
 
 
 
 
 
Ingredients
 
250 g plain flour
1 tbsp baking powder
1 teaspoon ground cinnamon
130 g  sugar
75 g butter chilled and grated
1 egg
175 ml milk
2 medium sized ripe bananas peeled
 
Method
 
Preheat oven to 180°c
Line a 12 hole muffin tray with paper muffin cases.
Sit the flour baking powder and cinnamon into a large bowl and stir in the sugar and grated butter.
Stir to coat the butter in the flour mixture.
Beat together the egg and milk and stir into the bowl until just blended.
Dont over mix - it should still be lumpy..
Cut 12 slices from pne of the bananas then mashed the remainder with the other banana.
Fold the mashed banana into the mixture and divide the mixture between the paper cases.
Top each with a slice of banana.
Bake for 20 to 25 minutes until risen golden and firm to the touch.
Serve warm or cold.
 
tip: I brush a little with apricot jam over them. (optative)

Estos muffins de banana o plátano son fáciles de hacer y rápidos.
Además quien no tiene plátanos por vencer o muy maduros en la casa?
Siempre me ha parecido curioso que por ejemplo los plátanos son tan baratos comparados con otras frutas que son propias nuestras (peras  manzanas  duraznos etc) en todo caso el plátano es excelente por el potasio y sus vitaminas.
Y a la mayoría de los niños les gustan.
 
Estos muffins son deliciosos recien hechos y tibios pero tambien se pueden congelar sin ningun problema hasta dos mes en el freezer (para colaciones)
Esperar que se enfrien y luevo ponerlos en bolsitas plásticas  y cuando se quieran usar sacar dos horas antes y dejar a temperatura ambiente.
Si se quieren tibios poner al horno unos 5 a 10 minutos (calor bajo)

Ingredientes

250 grs harina sin polvos de hornear
1 cucharada de polvos de hornear
1 cucharadita de canela molida
130 gramos de azúcar
75 grs mantequilla bien fría y en trozos pequeños
1 huevo
175 ml de leche
2 plátanos medianos maduros

  15. mmmm...que rico! los voy a hacer...acá a los hombres les encanta el platano asi que sera genial =)
    te cuento que tengo a mi chancho enfermo en casa...le dio gripe y el doc le dijo que no fuera a clases hasta el lunes..asi que aqui estamos entre aguitas de hierba con limon y miel, remedios y alejandome un pokito para no contagiarme...aunque estoy super bien para todo el tiempo que ha estado aqui conmigo =)
