Today is a new Secret Recipes Club and my assignment for this month’s is Moms Crazy Cooking from Tina I love Tina and have amazing recipes and I choose Banana muffins with lemon icing
a yummy and nice recipe.

Banana Muffins with lemon icing
Ingredients
4 tablespoon of butter
1/2 cup of sugar
1 large egg
1 teaspoon of vanilla extract
2 cups all purpose flour
2 taspoon of baking powder
1 teaspoon of baking soda
1/4 cup of milk
3 bananas mashed
Method
Preheat oven to 180°c
Line muffins pan with paper liners.
Place sugar and butter in a large bowl cream with an electric mixer until light and fluffy.
Add egg and vanilla beat until throughly mixed.
In another large bowl mx together flour , baking powder and baking soda.
Add half of flour mixture to butter mixture, beat weel with mixer . Add milk and remaining flour mixture.
beat until batter is combined and then fold in mashed bananas.
Spoon batter into muffins liners about 3/4 full . Bake by 25 to 30 minutes or until start brown and insert a toothpick inserted on muffins come clean.
Let cool muffins until remove and cool completely before icing.
Lemon icing
1 1/2 cup powdered icing sugar
1 tabespoon of butter softened
2 tablespoon of lemon juice
1 teaspoon lemon zest
some grated lemon to garnish
Combine icing ingredients in a medium bowl, beat until creamy about 2 minutes. Spread the icing over muffins set aside and garnish with grated or curl lemon zest.

Muffins de plátano con crema de limón
Blog de Tina a quien quiero mucho y tiene un blog con estupendas recetas su blog es Moms crazy cooking y las invito a conocerlo porque tiene muy buenas recetas, yo escogí estos Muffins de plátano con icing de limón y sólo adapté pequeñas cosas de la receta y resultó estupendo.
Muffins de plátano con icing de limón
Ingredientes
4 cucharadas de mantequilla
1/2 taza de azúcar
1 huevo grande
1 cucharadita de extracto de vainilla
2 tazas de harina normal sin polvos de hornear}
2 cucharaditas de polvos de hornear
1 cucharadita de bicarbonato
3 plátanos molidos
1/4 taza de leche
Preparación
Precalentar el horno a 180° c y preparar moldes de muffins con cápsulas de papel.
En un bol mezclar el azúcar y la mantequilla y batir con batidora eléctrica hasta que la mezcla esté cremosa y espumosa.
Agregar el huevo y la vainilla y batir un poco más.
En otro bol mezclar la harina, polvos de hornear y bicarbonato, . Añadir la mitad de esta mezcla a el batido de mantequilla, batir bien mezclando.
Ahora agregar los plátanos molidos.Unir bien.
Ahora repartir la mezcla en los moldes de muffins ya preparados, llenarlos 3/4 de su capacidad.
Hornear de 25 a 30 minutos o hasta que los muffins estén dorados y al insertar un palito o brocheta salga seco.
Antes de desmoldar dejar enfriar un poco.
Para cubrir con el icing se deben dejar enfriar completamente.
Icing de limón
Ingredientes
1 1/2 taza de azúcar en polvo o glass sugar
1 cucharada de mantequilla suavizada
2 cucharadas de jugo de limón
1 cucharadita de ralladura de limón
En un bol mediano combinar todos los ingredientes durante 2 a 3 minutos hasta que tenga una consistencia cremosa y espesa, si se quiere más claro poner menos azúcar, pero con esta cantidad queda muy bien como una capita sobre los muffins.
Adornar con ralladura de limón .
