cornmeal cranberry muffins




Thanks to all of you for the sweet and warm comments (and all of you that read but not comments I know is not easy)
Special for Christmas make a pray for all the parents and  families of these kids and teachers.


I made these cranberry muffins some days ago but I cannot posted before.
I have to say are really good  especially for  the days after of Christmas with a tea or a coffe:)

Ingredients (12)

1 1/3 cup all purpose flour
3/4 cup of sugar
1/2 cup yellow cornmeal
2 teaspoon baking powder
3/4 cup buttermilk or plain yogurt
1/4 orange juice
3 tablespoon of butter melted
1 egg lightly beaten
1 cup cranberries (fresh or frozen or a jar)

Method
Stir together first 4 ingredients in a large bowl, make a well  in center of mixture.
Add buttermilk or yogurt and orange juice, melted butter,and egg.
Stir just until dry ingredients are moistened.
Fold in cranberries.
Spoon batter evenly into 12 paper lined muffins cups, filling two thirds full.

Preheat oven at 180°.
Bake for 20 minutes or until lightly  browned and a wooden pick inserted in center comes out clean.
Remove muffins from pans to wire racks let cool 15 minutes .
Serve warm at room temperature.

Note: You can freeze these muffins in zip top plastic freezer bags. Traw them at room remperature or  microwave frozen muffins at HIGH 15 to 30  seconds.

Muffins de cranberry (arándanos rojos)





Estos muffins los hice hace una semana y quedaron super buenos y tambien se pueden congelar.
Llevan cranberries que pueden ser congelados o secos (en los supermercados).
Los arándanos rojos son un poco más ácidos que los azules, pero son muy buenos.
Pero tambien se pueden hacer por ejemplo con arándanos .











Ingredientes (12)

1 1/3 taza de harina sin polvos de hornear
3/4 taza de azúcar
1/2 taza de polenta (en supermercados)
2 cucharaditas de polvos de hornear
3/4 taza de buttermilk o yogurt natural
1/4 taza de jugo de naranja
3 cucharadas de mantequilla derretida
1 huevo
1 taza de cranberries (arándanos rojos) pueden ser secos, congelados o en el Lider hay unos que vienen en tarros (Great Value en Líder)

  28. Cranberries are a favorite of mine. I live only minutes away from a cranberry bog. These muffins look and sound delicious. I am so sorry for the loss of your beloved dog. It will get better in time, but so painful in the meantime.
