Always when I cook and especially cupcakes I try to keep the ingredients as healthy as possible.
Especially I love when is used natural flavours and I find this lovely and nice recipe in Eating Well and when I try I was so glad with it!! This recipe is adapted from Stacy Fraser from Eating Well.
The recipe
Ingredients (12 cupcakes)
1 large gold potato peeled and cut into small chunks (yeah)
3/4 whole wheat pastry flour
3/4 cup cake flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon of salt
3/4 cup granulated sugar
1/4 cup canola oil
1 large egg
1/2 teaspoon vanilla extract
1/2 cup of plain yogurt or buttermilk
1 cup blueberries frozen blueberries
and others to garnish.
Frosting
3/4 cup granulated sugar
3 tablespoon of water
2 egg whites or 4 teaspoon dried egg whites)
1/2 teaspoon of cream of tartar
pinch of salt
2-3 tablespoon of blueberry jam
Preheat oven at 180°c Line 12 muffins cups with papers liners.
Place potato in a saucepan and cook with water until is tender , about 8 to 10 minutes.
Drain and mash until very smooth. Measure out 3/4 cup and let cool slightly.
Whisk whole wheat flour, cake flour ,baking powder, salt and baking soda.
Beat granulated sugar and oil in a large bowl with an electric mixer on medium speed until combined.Beat in egg, the mashed potatoes and vanilla extract.
With the mixer in low speed alternately mix in the dry ingredients and add the plain yogurt, starting and ending with dry ingredients and scraping the sides of the bowl, until just combined.
Add a cup of blueberries.
Divide the batter among the prepared cups (they will be full)
Bake the cupcakes until a toohpick inserted in the center comes out clean.
Bake by 20 to 24 minutes.
Let cool completely.
Frosting
Place in a sauce pan water to a simmer in the bottom of a double boiler.
Combine 3/4 sugar and 3 tablespoon of water in the top of double boiler.
Heat and stirring until the sugar is melted.About 2 to 3 minutes.
In other bowl beat the whites with a pinch of salt with an electric mixer
on high speed, add cream of tartar.Add the melted sugar.
Continue beating until the mixture is glossy, thick frosting 5 to 7 minutes.
Add 2 or 3 tablespoon of blueberry jam.and beat on low until is combined.
Spread or pípe the frosting on the cooled cupcakes and decorate with bluberries on top.

Cupcakes de arándanos
Siempre cuando cocino trato de cocinar lo más saludable dentro de lo que se puede, especialmente en el caso de los cupcakes que me encantan pero es un hecho que toda esa cremita encima ... ya saben. Bueno a veces no hay caso(hay recetas que no se pueden modificar) pero encontré esta receta que fue una sorpresa porque además quedan super buenos.
Está adaptada de una receta de Eating Well que tiene muy buenas recetas, y la receta es de Stacy Fraser de Eating Well. Ella tiene niños pequeños y adoran los cupcakes así que se esfuerza por que sean deliciosos y saludables.
Ingredientes
(12 cupcakes)
1 papa grande pelada y cortada en
trozos pequeños. (si! papa ni se nota)
3/4 taza harina integral
3/4 taza harina normal sin polvos de hornear
1 1/2 cucharadita polvos de hornear
1/2 cucharadita de bicarbonato
1/2 cucharadita de sal
3/4 taza de azúcar granulada
1/4 taza aceite vegetal
1 huevo grande
1/2 cucharadita extracto de vainilla
1/2 taza de yogurt natural
1 taza de arándanos congelados
y otros para adornar.
Merengue (frosting)
3/4 taza de azúcar granulada
3 cucharadas de agua
2 claras de huevos (o 4 cucaraditas de claras
deshidratadas)
1/2 cucaradita de cremor tártaro
pizca de sal
2 o 3 cucharadas de mermelada de arándanos
Preparación
Precalentar el horno a 180°c
Preparar un molde para muffins con 12 capsulas de papel.
Cocinar la papa (cortada en cuadritos) en una olla medina ahasta que esté tierna, cerca de 8 a 10 minutos.
Colar y moler bien hasta que tenga una textura suave.
Llenar con esta masa de papa 3/4 de una taza y reservar.
En un bol mezclar la harina integral, la harina normal, el bicarbonato, la pizca de sal y los polvos de hornear.
Batir el azúcar y el aceite en un bol batiendo con una batidora, a velocidad media hasta mezclar bien.Agregar la papa molida,el extracto de vainilla y el huevo. Integrar bien.
Con la batidora en velocidad baja mezclar alternando los ingredientes secos con los húmedos.
Mezclar bien.
Agregar los arándanos mezclar en forma suave.
Dividir la mezcla entre las cápsulas de papel.(deben quedar llenos)
Cocinar los cupcakes por unos 20 a 24 minutos o hasta que esten secos insertando un palito o mondadientes y salga seco.
Dejar enfriar completamente.
Merengue para frosting
En una olla poner agua y colocar encima otra ollita (a baño maría)
en la olla que está encima colocar el azúcar y el agua.
Calentar y revolver durante unos 2 a tres minutos hasta disolver bien el azúcar.
En otro bol batir las claras con la pizca de sal hasta que esten brillantes y firmes, agregar el cremor tártaro y batir bien, agregar el azúcar ya disuelta e incorporar bien.
Continuar batiendo hasta que este espesa y brillante.Batir durante unos 5 a 7 minutos.
Agregar la mermelada de arándanos.
Batir incorporando bien.
Esparcir o decorar sobre los cupcakes la mezcla de frosting y arándanos y adornar con arándanos.

ReplyDeleteI have never seen a list of cupcake ingredients including a potato! I imagine that it works pretty well though - and there are some German sweet fruity dumpling recipes that use mash potato too.
