Quesadillas with cheese,beef meat and guacamole(quesadillas con queso y guacamole)


This popular mexican dish make filling with differents things and serve how and appetizer, entrèe or simple lunch.


Now the mexican food is absolutely international, in everywhere you talk about, tacos or fajitas the people know about what we are talking.


In our country ten years ago don't were knowing how now and today you may find tacos in all supermarkets.













Really I prefer Tortillas to made food and differents dishes, are light and easy to handle and will so good with salads and to make to the night or the lunch.










I dont know if in english you said other word for quesadillas, so I put a pictures of the tortillas that normally I use. And you may use the normal or large.




When I use the big tortillas I cut them in triangles so is more easy to eat with guacamole, but the other only have to double when is filling.

Ingredients guacamole

2 or three mashed avocados

2 green onions cut in slices

2 tomatoes peel and chopped

1/3 of cup chopped parsley

1 teaspoon of vinegar

2 spoonfuls of oil (corn or oliva)

salt

pepper




To filling quesadillas

6 or 8 tortillas (normal or large)

1 cup and half of grated cheese or in slices

(gouda, or cheddar)

300 grs. roast beef meat in slices or other

meat in slices

1 onion cut in slices


















































































Guacamole recipe


In a bowl mashed the avocados and add the green onions in slices, the tomatoes and parsley.

Mix well.Season with vinegar and oil salt and pepper.

Refrigerate by a while.

Preheat the oven to medium heat and place the tortillas in the oven tray.

Brush with oil the tortillas and in the center place the cheese, meat and onions.

Season and holder in half, and place in the oven until the cheese is melted and the tortillas look little golden.

Take out and places the quesadillas in dishes or in a wood board and serve with the guacamole. You may serve too with chopped chile or ajì.

You may eat with a fresh white wine (sauvignon or chardonnay) or if you prefer beer.

Este popular plato mexicano puede ser rellenado con diferentes cosas y servirse como un aperitivo, entrada o lunch.





La comida mexicana es absolutamente internacional, cuando uno habla de tacos, todo el mundo sabe de que estamos hablando.





Yo prefiero las tortillas porque son màs manejables, adaptables y van bien con todo tipo de ensaladas.





Si se usan las tortillas grandes se hace como un sandwich y se cortan en triangulos para servir con el guacamole. Las normales como en este caso simplemente se rellenan y se doblan en dos.




Preparar GUACAMOLE


2 o 3 aguacates o paltas molidas como purè.





2 cebollines o cebollas verdes en rodajas finas.





2 tomates pelados y en cubos pequeños.





1 cucharadita de vinagre





2 cucharadas de aceite (Oliva o de maiz o girasol)





Para las quesadillas





Aceite





6 u 8 tortillas grandes o normales





1 y 1/2 taza de queso mantecoso rallado o en lonjas (gouda o cheddar)





300 grs. carne tipo roast beef u otra cortada en lonjas delgadas. (puede ser pollo tambièn)





1 cebolla cortada tipo pluma o en pedazos a lo largo.






Preparaciòn



Para preparar el guacamole en un bowl mezclar los aguacates molidos, cebollines,tomates y perejil, mezclar bien y agregar el vinagre y el aceite, sazonar con sal y pimienta y refrigerar por un rato.





Precalentar el horno a temperatura media. Ponga las tortillas en la bandeja del horno y pince con aceite cada una. Distribuya en el centro de cada una el queso rallado o enlonjas, carne y cebolla, sazonar. Doble cada tortilla en dos y si son grandes tapelas como un sandwhich y despues se cortan en triangulos.





Coloquelas al horno y dore ligeramente hasta que el queso estè derretido.





Servir en una tabla de madera o en platos acompañado del guacamole.Si se quiere se puede servir tambièn con ajì o chile picado.






Se puede servir con vino blanco frìo (chardonnay o saugvignon blanc) o cerveza.

Potatoes's stuffed pudding (Pastel de Papas)


This recipe I made always at home, and is typical from Chile.

The recipe that I will post is stuffed with mashed meat but you may filling with cheese too.My daugther is veggi (sometimes) and when I make this a part I filling with cheese and the rest with the mashed meat .



Ingredients
1Kg. and half of potatoes (peel and boiled)
1/2 cup of warm whole milk
2 eggs
salt

Filling
1/2 kg. mashed beef meat
1 finaly chopped onion
2 spoonfuls of unsaborized oil
salt
pepper
cummin
2 eggs boiled and peel
1 yolk and milk
2 spoonfuls of granulated sugar


Method

Peel the potatoes and boiled with a pinch of salt, how to make puree, when are ready mashed them and add the warm milk and the eggs, mix well and add salt if is necessary.Reserve.
To the filling in a sauce pan place the oil and add the chopped onion, fry a little and when is little golden add the beef meat, salt, pepper and cummin.

In a large Pyrex or similar spread one layer of the puree and over this empty the mashed meat filling, cut in slice the eggs boiled and cover the mix.
Now place other layer of puree over the meat.
Mix a yolk with milk and brush over the puree pudding and podwer with sugar over it.
This make the pudding have a golden colour.
(if you wanted only with cheese make the same one cape of puree, cheese in slices and cover with the puree again.)

Take to the oven by 20 minutes until be golden. We serve this with tomatoes salad or other salad.

Pastel de Patatas o de Papas

Esta receta la hago siempre en la casa y es tìpica de nuestro pais, Pastel de patatas o papas , a todos les gusta eso es lo bueno.

La receta que les estoy dando es con carne molida o picada pero tambièn se puede rellenar con queso en làminas. Mi hija es vegetariana (la mayor parte del tiempo) asì que cuando hago este plato una parte la relleno con carne y la otra con queso y como dicen mis amigas españolas, todos felices.

Ingredientes

1 Kig. y medio de patatas ( peladas y cocidas)

1/2 taza de leche entera tibia

2 huevos

sal

Relleno

1/2 kg. de carne molida o picada

1 cebolla picada fina

2 cucharadas de aceite sin sabor ( puede ser aceite de oliva en este caso)

sal,pimienta y comino

2 huevos hervidos

1 yema, leche y 2 cucharadas de azùcar para dorar

Mètodo

Pelar y hervir las papas como para hacer un purè, cuando estàn listas, molerlas, agregarle los 1/2 taza de leche tibia y los huevos uno a uno, mezclar bien y reservar.

Para el relleno, calentar en un sartèn el aceite, agregar la cebolla picada, cuando estè dora agregar la carne molida, la sal, pimienta y comino a gusto.

En una Pyrex grande cuadrangular poner primero una capa de pure y luego la mezcla de carne, encima los huevos duros cortados en lonjas y luego otra capa de purè. Batir una yema con un poco de leche y pinte el pudding o pastel y espolvoree encima con el azùcar granulada.

Esto harà que el pastel quede màs dorado. Llevar a horno por 20 minutos màs o menos, hasta que estè dorado.

Generalmente lo servimos con tomates en rodajas u otras ensaladas.

Es una comida sencilla pero rica y saca de apuro.

Si no se quiere con carne, simplemente se le coloca queso en tajadas entre las dos capas de purè.
