Love soups we eat around the year not matter weather is, I love especially at night, the only thing when you make soups at home you have to think BEFORE to cook the veggies, sometimes I wanna soup but I forget cook the veggies:(
This soup come from Vietnam food, a place that really I enjoy a lot of recipes. The coconut in the soup is so tasty and we love here!
INGREDIENTS
1 onion cut in slices
2 tablespoon of butter
1 1/2 teaspoon of ginger
1 garlic clove
2 cups of carrots peel and cut
1 green apple peel in cubes
1 cup of coconut milk
salt
Method
Saute onions in butter. When they are translucent, add the ginger and garlic, cook for about two minutes and then add carrots, chopped apple and salt.
Cover with water and cook medium heat about 40 minutes.
When the carrots are really tender drain and save the water cooking.
Grind in a blender with coconut milk and cooking water you want to add.
Serve with green onion into pieces.

Crema de zanahorias, coco y jengibre
Me gustan las sopas todo el año sobre todo de verduras, y el otro dia hice esta de zenahorias y leche de coco, queda muy buena y es rica para cualquier época.
Ingredientes
1 cebolla corta en pluma
2 cucharadas de mantequilla
1 1/2 cucharadita de jengibre
1 diente de ajo
sal a gusto
2 tazas de zanahorias peladas y en trozos
1 manzana verde picada
1 taza de leche de coco
cebollin en trozos para servir
Preparación
Saltear las cebollas en mantequilla.
Cuando ya estén traslúcidas agregar el jengibre y el ajo , cocinar por unos dos minutos luego añadir las zanahorias y la manzana.
Aliñar con sal.
Tapar con agua y cocinar por unos 40 minutos.
Cuando las zanahorias esten blandas colar reservando el agua de la cocción.
Luego moler en la juguera con la leche de coco y el agua de cocción que necesaria.
Servir con un poco de cebollin picado o en trozos.
También me encantan las sopas en todas las épocas del año. Nunca la he probado con leche de coco. Besos.
