Little alfajores with Dulce de Leche(Chilean recipe)

When I begin the Blog I post other Alfajores recipe, these are so mini and we make to parties and Coktails.

Are so smooth and easy to make and of course all natural ingredients.

I put again a recipe to make Dulce de Leche but I have others in Labels with Dulce de Leche that you may see.

I made these because to Festa Italiana I occuped only whites and I had the yellows that is so important to alfajores.

Ingredients



6 yellows eggs

300 grs.plain flour

15 ml of Pisco (liqueur from Chile) or whisky orBrandy

1/4 teaspoonful of baking powder

Dulce de Leche (1 can boiled or other recipe) to filling

Method

Beat the yellows and add the liqueur (Pisco, Brandy or whisky)

and mix well with flour and the baking powder.
Place the dough in a table and roll up with a floured rolling pin so thin and cut the alfajores round with a mold or a little glass.

Prink the center of the alfajores with a fork.

Place in the tray oven (Cover first with a parchment paper) and preheat the oven to medium heat. Let at the oven about 8 minutes (are so fast)

When are little golden are ready. Take out with an spatula. Let cool in a basket with a towel kitchen.





Take one alfajor fill with dulce de leche and cover with other how a little sandwhich.

To make dulce de leche: Have some recipes in the labels "Dulce de Leche" but I will post other here.

In a pressure cooker (if you have) fill with cold water to cover the condensed milk can inside.Place the cooker on the stove top and when start to boil put the heat slow and count 45 min. aprox . Let it cool completely, is so dangerous open the can when the caramel is hot.If you want the Dulce more solid let at the refrigerator for a while and fill the alfajores later.

Mini alfajores rellenos con Dulce de Leche

(receta chilena)

Hace meses cuando empezè el Blog puse una receta de alfajores, pero estos son pequeños para fiestas o coktails como sea se necesite.

Son muy suaves y absolutamente naturales, digo esto porque estoy impresionada la cantidad de alfajores que se venden en el mercado, pero la masa no tiene nada que ver con esto que se hace en casa, son muy livianos y no tienen compuestos quìmicos.

Ingredientes


6 yemas

300 gramos de harina normal

20 ml de pisco (licor de Chile) o tambien puede ser brandy o whisky.

1/4 de cucharadita de polvos de hornear.

Dulce de leche para rellenar (1 lata u otro tipo)

Mètodo

Batir las yemas y agregare el licor elegido, mezclar bien y agregar la harina y los polvos de hornear, mezclar bien, para tener una masa suave y buena para pasarle el rodillo.

Colocar la masa en una mesa de cocina y uslerear con el rodillo logrando una textura màs o menos fina, cortar con un molde pequeño o con un vaso.

Pinchar los alfajores en el centro de cada uno con un tenedor. Colocarlos en la bandeja del horno a la que se le coloca un papel engrasado o de mantequilla.

Llevar a horno medio/alto por 8 minutos, son muy ràpidos.Estaràn listos cuando esten ligeramente dorados. Retirar con una espàtula y colocar a enfriar en un canasto con un paño de cocina.

Para hacer los alfajores unir con el dulce de leche de a dos como un sandwhich e ir colocando en un plato.

Para hacer Dulce de Leche he dado varias recetas que estàn en el Label"Dulce de Leche" pero de todas maneras doy otra.

En Una olla a presiòn llenar con agua frìa cubriendo el bote de leche condensada que ya està dentro. Ponerlo al fuego cuando empieze a hervir bajar un poco y dejar 45 min. aprox.Dejar enfriar completamente el bote antes de abrir porque es muy peligroso abrirlo caliente. Si se quiere màs sòlido cuando estè frìo dejarlo un rato en el refrigerador.
