Blueberry Breakfast bread












In secret recipe club I had other assignment, so for this month I have to post two recipes, my other assignement is  Good Times &Good food  blog  and find nice and lovely recipes.
Finally I choose this Blueberry Breakfast bread
that really is like a cake too and you eat every time not only at breakfast.

Ingredients

1/2 cup unsalted butter at room temperature
2 tablespoon of lemon  zest from a large lemon
1 cup of sugar  + 1 tablespoon of sugar(or splenda)
1 egg room temperature
1 teaspoon of vanilla
1 teaspoon of lemon juice
2 cups all purpose flour
2 teaspoon baking powder
1/2 teaspoon of salt
2 cups fresh or freeze blueberries
1/2 cup buttermilk or natural yogurt







Method

Preheat the oven at 180 C
and lightly grease a 9x9 cake pan .
In the bowl with and electric mixer , cream butter with lemon zest
and cup of sugar until light and fluffy, 2 to 3 minutes,
Scrape down the bowl. Add the egg, vanilla, and lemon juice and mix until combined.
In a medium bowl  toss the blueberries with 1/4 cup of flour.
Set aside.
In another medium bowl whisk together the remaining flour, baking powder and salt.
Add the flour mixture to the batter in 3 additions, alternating with the buttermilk or plain yogurt.
Fold in the blueberries.
Spread the batter in the prepared pan.
Sprinkle batter with remaining tablespoon of sugar.
Bake for 40 minutes.Check with a testerfor doneness if is necessary
return pan for 5 to 10 minutes.
Let cool at least 15 minutes before serving.

Pan de arándanos













Hice una segunda receta para Secreta Recipe Club  y aqui esrá.
Es del blog Good times& Good food y me encantaron sus recetas, de muchas que ví elegí este Pan de Arándanos que puede ser un Cake o lo que sea es delicioso y ya lo probamos al desayuno.
Agradezco a mi cuñadita, la Ñoca que me trajo montones de arándanos y que estoy feliz de poder hacer recetas con arándanos.
PD: Lo pasamos bien ese dia Ñoca siempre nos haces reir:)


Ingredientes
1/2 taza de mantequilla sin sal
2 cucharaditas de ralladura de limón
1  taza + 1 cucharada de azúcar
1 huevo
1 cucharadita de vainilla
1 cucharada de jugo de limón
2 tazas de harina sin polvos de hornear
2 cucharaditas de polvos de hornear
 1/2 cucharadita de sal
2 taza de arándanos frescos o congelados
1/2 taza de buttermilk o yougurt sin sabor

Preparación
Precalentar el horno a 180°c.
Preparar un molde extendido como para pan y enmantequillar.

    1. Of course you can use frozen blueberries, that I made with this recipe, we have hots days here (summer end) and have to freeze all, raspberries and blueberries.:)

    1. Mira Pilar fue pura suerte porque mi cuñada encontró a buen precio, acá estan carísimos, y es verdad que son dulces. tengo el congelador lleno pero la verdad es que siempre me gusta congelar berries, porque hago cosas todo el año.
