Chocolate Mousse













Always is nice try a chocolate mousse!!






Ingredients ( 6 servings)

250 grs. dark chocolate
15 grs. butter unsalted
2 tablespoon of glucose
3 tablespoon of fresh orange juice
3 eggs
whites and yolks separated
200 ml of double cream





Method

Make some  chocolate chips with a potato peeler. If I was a bit hard soften in the microwave.

(Only about 10 seconds)
Make chips to decorate 6 desserts.
Melt the rest of the chocolate  in double boiler.
Add the butter and sugar to melted chocolate.
And then the orange juice, finally adding the yolks and mix well.
Heat all in a double boiler until will be  thick, creamy consistency.
Remove from heat and let cool.
Beat the egg whites until stiff.
Whipp also double cream and add the cream to the chocolate mixture.
and then add the egg whites.
Freeze for about 4 hours until the mousse is solid.
Garnish with chocolate chips

Mousse de Chocolate
















Siempre es rico probar una nueva receta de Mousse de chocolate!




Ingredientes( 6 postres)

250 grs. de chocolate en barra
15 grs. de mantequilla sin sal
2 cucharadas de glucosa líquida
3 cucharadas de zumo de naranja
3 huevos con yemas y claras separadas
200 ml de  crema para batir

Preparación

Primero hacer virutas de chocolate con un pelador de papas.
Si está muy duro calentar un poco en el microondas (unos 10 segundos)
hasta que se le pueda dar forma.
El resto del chocolate ponerlo en una ollita a baño maría y derretir.

Añadir la mantequilla y la glucosa al chocolate y despues el zumo de
naranja. Incorporar las yemas de huevo de a uno batiendo hasta que la mezcla quede homogénea.
Sacar del fuego y dejar enfriar.
Montar las claras a punto de nieve . Aparte batir la crema firme.
Primero incorporar la crema batida a la mezcla de chocolate y despues las claras
batidas a punto de merengue.
Repartir la mezcla en seis pocillos o copas. Congelar durante 4 horas y despues adornar con
las virutas de chocolate.

Calzone de mozarella












Calzone is an amazing and lovely italian  food.  like a pizza (the dough) but is like a sandwich too, and you can fill with the things you like (spinachs, zucchini, meat, ham, mushrooms etc.)



This is a calzone with mozzarella and tomatos , red and green peppers and ham.


It is nice  occasionally instead of pizza, and dough is delicious.
This dough is amazing for pizza or quiches too.
This type of recipe I adore.

 Is adapted from one of Noelle Haddad a chef  and writer cook from Chile

Ingredients (6 servings)


dough

2 cups all purpose flour
2 teaspoon baking powder
1 teaspoon of salt
2/3 cup of warm water
1/4 cup of sunflower oil or similar

100grs. of ham (optative)
200 grs. mozzarella cheese grated or in slice
1 cup of cherry tomatos
1/2 cup chopped waltnuts
1 tablespoon of red pepper chopped
1 tablespoon green pepper chopped



method


 In a bowl mix the flour, salt and baking powder. Add oil and water and mix well.
Knead by a time and make a ball. Set aside for 20 minutes.

After that  extend the dough with a roll pin and brush with oil-
Place over dough the grated cheese, ham, cherry tomatos (I cut in two parts) chopped
waltnuts and red pepper  and green pepper chopped.

Roll this dough and close like a big empanada.
Over them brush with oil  and  powder with  some sea salt.
Preheast oven at 190° c.
Bake by  20 to 25 minutes or util is golden..
Serve hot and add some tomatos sauce if you like.

Calzone de mozzarella

Esta receta me encantó por lo fácil y deliciosa. El calzone es muy parecido a la pizza pero va en rollado y uno le puede echar muchas cosas aparte de tomates y queso, nueces, jamón, calabacines, champiñones o pimientos morrones. En fin las cosas que una le echaría a una pizza.

Esta masa que es muy buena porque tambien es para pizzas o quiches.

Esta receta está adaptada de una de Noelle Haddad que sienmpre publica en a la revista Ya del Mercurio.














Ingredientes

Masa
2 tazas de harina
2 cucharaditas polvos de hornear
1 cucharadita de sal
2/3 taza de agua tibia
1/4 taza de aceite

Relleno
100 grs. de jamón (optativo)
200 grs. de queso mozzarela rallado o en trozos
1 taza de tomates cherry
1/2 taza de nueces picadas
1 cucharada de pimentón rojo picado
1 cucharada de pimentón verde picado

Preparación

Masa
En un bol mezclar las dos tazas de harina sal y polvos de hornear, agregar el aceite y de a poco el agua, formar una masa amasando formar una bolsa, dejar reposar unos 20 minutos.

Precalentar el horno a 190°c.
Extender la masa y pintar con un poco de aceite.
rellenar con el queso, las nueces los pimientos picados, el jamón en trozos, y los tomates cherry que se pueden picar en dos o tres partes.
Enrollar y cerrar los bordes, y doblar los costados, queda como un rollo alargado.
Pintar con aceite y si se quiere espolvorear con un poco de sal de amr.
Hornear de 20 a 25 minutos
Servir caliente y si se quiere se puede acompañar de salsa de tomate o solo.
Delicioso para hacer en la noche o como merienda.

Blackberries soufflé












I love soufflés because are so light and yummy! I made this soufflé with blackberries and apple. And really we enjoyed it!!


Ingredients (4 servings)

 3/4 cups of powdered sugar or icing sugar
 2 cups of blackberries frozen or fresh
1 large apple peel and pitted in slices or cubes
1 orange the juice and the grated peel
4 white eggs
 pinch of salt
icing sugar to powder

 Method

Preheat oven to 180 ° c. Grease with a little butter on porcelain ramekins or bowls and sprinkle with sugar.

Prepare a cookie sheet.
In a medium saucepan cook the berries put a little water, sliced apples and ​​and grated orange, cook about 10 minutes until reduced to a pulp, stir it long over low heat .
Pass the mixture through a colander,  stirring with a wooden spoon. 
Reserve the  syrup and  add 1 / 4 sugar cup sugar and orange juice .
 let cool  mix and leave for a while.
 Apart beat with an electric machine whisk the egg whites with a pinch of salt still they are firm and add the remaining sugar to the mix and have a glossy and thick texture
 Stir in syrup and and  mix well .

Sprinkle with icing sugar and serve to normal temperature.
 I place one in the fridge and was OK

. When souffles cool, they begin to collapse a little. Don't worry, it's perfectly normal.
 ALL crepes start to fall the moment they are pulled out of the oven.

EN ESPAÑOL

 Soufflées  de moras









Me encantan los soufflés y de pequeña mi mamá los hacía mucho sobre todo el de queso pero me
ha encantado que se pueden hacer de tantas cosas y quedan deliciosos, de chocolate, de frutas, de zapallo o calabaza en fin  es impresionante todo lo que se puede hacer .
Este es especialmente liviano porque lleva solamente claras  batidas, azúcar y las moras.



Ingredientes
(4 pociones)
3/4 taza de azúcar fina o glass
2 tazas de moras congeladas o frescas
1 manzana grande pelada y cortada en trozos
1 naranja (la cáscara rallada fina y el jugo)
4 claras de huevo
azúcar glass para espolvorear


Preparación
Precalentar el horno a 180° c
Enmantequillar cuatro ramekins o cuencos de cerámica tipo soufflé (son un poco más altos)
y espolvorear con azúcar glass.
En una olla mediana cocinar las moras, un poco de agua , la manzana pelada y en trozos, y la ralladura de naranja, cocinar por unos 10 minutos o hasta que se haya reducido a una pulpa más espesa.
Pasar por un colador revolviendo con una cuchara de madera, agregar 1/4 de taza de azúcar,  el jugo de naranja , y la ralladura, revolver y dejar enfriar (el jarabe).

Aparte batir las claras a con la pizca de sal a punto de merengue, bien firme, agregar el resto del azúcar y y de a poco el jarabe de moras, debe quedar un merengue lustroso y espeso.

Rellenar con el merengue los ramekins o cuencos, pasar un cuchillo por encima (para que queden parejos) y luego pasar un cuchillo de mesa por dentro del borde, por la orilla de los souflés.
Llevar a hornos por unos 15 minutos o hasta que esté dorados y hayan subido.

Espolvorear con azúcar glass al retirarlos del horno.
Es normal que los souflées se bajen un poco al retirarlos del horno.pero estos no bajan demasiado.
Servir a temperatura ambiente.
Tambien se pueden hacer con frambuesas o arándanos, pero agregar la manzana picada porque tiene pectina y le da más firmeza al souflée.
