Melted chocolate muffins











What can I say about   melted chocolate muffins,  is yummy and delicious to every moment, every time,when you are happy, when you feel blue, when you need something sweet for your life this is you need folks , I made these a day I was  a little sad and need baking, because baking is good for soul .....(me)



This recipe is adapted from "Baking delicious" Parragon books Ltd.


Ingredients (8 servings)

150 grs. all purpose flour
1 teaspoon of baking powder
4 tablespoon of butter or marguerine
150 grs.  confeccioner's sugar
1 egg
3 tablespoon cacao powder
80 grs. dark chocolate  (the best you can get)
Icing sugar for dusting

Method





Prepare 8 paper cups into a muffin pan to bring the oven.

Put in a bowl  margarine or butter, sugar, egg, baking powder and cocoa, beat with mixer or by hand until mixture is smooth.

Then with a spoon, fill each capsule go halfway linear paper only.

With a teaspoon make a  little hole in the center of the muffin. Break the chocolate into 8 pieces and place in the hollow of the muffin.

Preheat oven to 190 ° c.

Finish filling the muffins with remaining dough.

Bake the muffins for 20 minutes until fluffy but firm. Let cool about 2 to 3minutes and  serving warm dusted with icing sugar.

Muffins rellenos con chocolate





















Que se puede decir de unos muffins de chocolate con un pedacito de chocolate en su interior que cuando lo comes tibio está derretido??? que es maravilloso, que es para cualquier momento, cualquier ocasión, si estas un poco triste, si estas contento, etc.cuado necesitas algo dulce para tu vida, esta es la receta!
Los hice en unos días que estaba un poquito triste porque cocinar y especialmente hornear por que cuando cocino al horno es bueno para mi alma.....

Esta receta es de un libro que se llama Baking Delicious e Parragon Ltd.


Ingredientes (8 porciones)

150 grs. de harina
1 cucharadita de polvos de hornear
4 cucharadas de mantequilla o margarina
150 grs. azúcar impalpable o azúcar flor
3  cucharadas de cacao en polvo (sin azúcar)
80 grs. chocolate en barra (el mejor que encuentren)
azúcar glass para espolvorear

Preparación

Preparar 8 cápsulas de papel en un molde para muffins.

En un bol mezclar la mantequilla o margarina, azúcar, el huevo, la harina , polvos de hornear y el cacao en polvo. Batir hasta que la mezcla adquiera una consistencia cremosa y suave.

Con una cuchara repartir la mezcla en las capsulas de papel sólo hasta la mitad, reservar el resto.
Con una cucharita hacer una muesca en cada muffin, partir el chocolate en 8 trozos iguales y colocarlo en cada hueco. Repartir el resto de la mezcla sobre cada muffins.

Precalentar el horno a 190°c y llevar los muffins a horno durante unos 20 minutos hasta que esten esponjosos y firmes al tocarlos.
Dejarlos reposar de 2 a tres minutos y servirlos tibios espolvoreados con el azúcar flor o azúcar glass.

Grapefruit meringue pie (Pie de Pomelo)















Always I wanna make something with grapefruits, I love like smell, but never find a recipe I really love, but I find this in Baking.bites and I think, this is the recipe!! and was....

 Grapefruits are popular when eaten whole (with sugar, usually) and juiced, but they’re rarely included in baking – especially not when you compare them to the popularity of lemons, limes and oranges.

 Grapefruit has a hint of bitterness to it where lemon has a sharp acidity, so the meringue of this pie serves to take the edge off of that just as the meringue does for a lemon pie. The grapefruit curd has a relatively mild flavor and a great creamy texture.

Grapefruit Meringue Pie

Dough

1 pie crust pre baked crust ( a recipe above)
 

Tip
Prepared pie crusts can save you time and effort. Many even come in their own pie tins (one less dish to wash!). Betty Crocker crust pie is absolutely nice!


Filling:


1 cup sugar


3 1/2 tablespoon cornstarch


3 tablespoon  of flour

1/4 tsp salt


1 1/3 cups water


3/4 cup fresh grapefruit juice


1 tablespoon of grapefruit zest


3 large egg yolks (reserve whites for meringue)

2 tablespoon  butter, room temperature


Meringue:


1/2 cup sugar

4 large egg whites, room temperature

1/2 tsp cream of tartar

Method


In a medium saucepan, whisk together sugar, cornstarch, flour, salt and water. Bring to a boil and cook, stirring with a whisk, for 3 minutes, until quite thick. In a small bowl, combine egg yolks with grapefruit juice and zest.

Gradually temper eggs yolks with about 1/2 cup of sugar mixture, drizzling in the hot mixture very slowly. Return saucepan to the heat and, whisking continuously, stream in grapefruit mixture. Add in butter and cook over medium-high heat for another 3 minutes.

Strain into prepared crust.


Allow to cool to room temperature.

One filling is cooled, preheat oven to 190°c. (Note: browning the meringue can be done with a kitchen torch, instead of putting the pie in the oven)

In a small saucepan, combine sugar and water. Bring to a boil and turn heat to low.


In a large bowl, beat egg whites until frothy. Beat in cream of tartar and beat at high speed until egg whites reach soft peaks. Carefully and very slowly, with the mixer turned to medium, stream in sugar syrup and beat egg whites to stiff peaks.

Spoon meringue onto pie filling and make sure to completely seal the edges or the meringue with the crust, leaving no filling exposed.

Bake for 8-10 minutes, until meringue is lightly browned.



Dough pie 

1 cup + 2tbsp all purpose flour


1/4 tsp salt


1 tablespoon sugar


6  tbsp butter, chilled

3-4 tbsp ice water


Whisk together flour, salt and sugar in a large bowl. Rub in butter in with your fingertips until mixture is very coarse, but no pieces larger than a large pea remain. Using a fork, stir in ice water until dough almost comes together into a ball. Press dough into a ball with your hands and wrap in plastic. Chill for at least 30 to 40 minutes before using.

To prebake, preheat oven to 180°. Roll dough out to pie pan and trim the crust. Prick the bottom with a fork a few times. Line the inside of the crust with aluminum foil, not covering the edges, and fill with pie weights or about 2 cups of dried beans. Bake for 20 minutes, until very lightly browned. Remove foil and weights and bake for an additional 5 minutes, until medium brown at the edges.

Nunca  había preparado nada con pomelos salvo jugos o comerlos como frutas, pero siempre me ha fascinado el olor a pomelo incluso cuando uno pasa al lado de ellos te llaman .. por el olor.
Finalmente encontré una receta que me encantó es básicamente parecido a un pie de limón pero algo diferente (ya tengo la receta del pie de limón aquí) y un Lemon pie con salsa de  frambuesas aquí
Los pomelos son de la misma familia de las naranjas, mandarina y limones pero para cocinar con ellos no son tan copnocidos.

Pie de Pomelo


Una masa para Pie ya hecha
(igual pongo una receta más abajo por si no encuentran)
Hay unas que vienen en caja para preparar y otras listas.

Relleno Pie de Pomelo
1 taza de azúcar
3 1/2 cucharadas de maicena
3 cucharadas de harina
Pizca de sal
1 taza 1/3 agua
3/4 taza de jugo de pomelo
(de cualquier tipo)
1 cucharada de ralladura de cáscara de pomelo
3 yemas de huevo (reservar las claras para el merengue)
2 cucharadas de mantequilla temperatura ambiente

Merengue

1/2 taza de azúcar
4 claras a temperatura ambiente
1/2 cucharadita cremor´tártaro

Preparación

En una ollita mediana mezclar  el azúcar, maicena, harina, sal y agua, mezclar bien.
calentar a fuego medio, batiendo con un batidor por unos tres minutos.
Hasta que se espese.
En un bol pequeño mezclar las yemas, el jugo de pomelo y la ralladura.
Gradualmente mezclar las yemas de huevo con la mezcla de azúcar y maicena.
Mezclando suavemente. Unir todo en la olla y llevar afuego bajo sólo por unos minutos, unir bien, agregar la mantequilla y cocinar por unos 3 minutos. Reservar.
Dejar entibiar, cuando esté más tibio vaciar en el molde de pie ya listo.
Dejar por un rato.

Precalentar el horno a 190°c.
Para preparar el merengue, calentar el agua y azúcar a fuego bajo. Esperar que tenga un hervor.
En un bol batir las claras hasta que estén espumosas.
Agregar el cremor tártaro.
Batir hasta tener un merengue firme. Agregar con cuidado el almíbar de azúcar y batir.
Repartir el merengue sobre el pie.
Hornear unos 8 a  10 minutos hasta que el pie esté ligeramente dorado-
Retirar y dejar enfriar.

Masa para pie


1 taza más 1 cucharada de harina
1/4 cucharadita de sal
1 cucharada de azúcar
6 cucharadas de mantequilla fría
3 a 4 cucharadas de agua fría

Preparación

En un bol unir la harina,sal y azúcar.Con un tenedor agregar la mantequilla uniendo bien.
Despues agregar de a poco el agua formando una bola con la masa.
Envolver en un plástico y dejar reposar de 30 a 40 minutos en el refrigerador.

Precalentar el horno a 180°c.
Extender con un rodillo la masa acomodandola en un molde de tarta o pie.
Pinchar el fondo con un tenedor.
Colocarle un peso como arroz o porotos para que no se levante la masa.
Llevar a horno y cocinar por unos 20 minutos hasta que esté ligeramente dorado.
Retirar el arroz o los porotos y dejar unos 5 minutos más.
