raspberries brownies








I love brownies and I love this raspberries brownies recipe.
I find it in old   Goodhousekeeping  magazine.
Is lovely the mix Chocolate/raspberries.... enjoy!


Raspberries brownies

Ingredients

1 1/2 cup of all purpose flour
3/4 cup unsweetened cocoa
1 teaspoon baking powder
1/2 teaspoon salt
1 cup of butter
1 1/2 cups sugar
4 eggs
1 cup raspberries fresh or freeze
2 teaspoon vanilla extract

For drizzle

1/2 cup dark chocolate chips melted
1 tablespoon of double cream

Heat the chocolate in a saucepan at bain marie and finally when is melted
add a tablespoon of double cream. Set aside before drizzle.


Method

Preheat oven at 200°c  and greased metal baking pan.

In a bowl combine flour, cocoa, baking powder and salt.
In a saucepan melt butter over medium low heat.

Remove saucepan from heat; with wire whisk, stir in sugar.
Add eggs, 1 at a time, beating well after each addition. 
Add vanilla, beating until mixed. 

With spoon stir flour mixture into chocolate mixture just until blended. 
Finally add the raspberries slowly. Spread this  batter in pan.

Bake brownie 30 to 35 minutes or until toothpick inserted 2 inches from edge comes out almost clean.
Cool in pan on wire rack.

When cool,   drizzle the brownies with melted chocolate   and refrigerate until set then
 cut brownies into pieces and serve..


TIP:  You can change de sugar by Splenda or other.

Brownies con frambuesas


En una de mis antiguas revistas de Good Housekeeping (y que guardo como oro en paño como dice mi  amiga Juani)  que ya les he comentado encontré esta receta de brownies que originalmente eran con mermelada de frambuesas, peor yo la hice con frambuesas congeladas y quedaron maravillosos.

La combinación chocolate-frambuesa es deliciosa. les dejo la receta.

Ingredientes

1 y 1/2 taza de harina
1 cucharadita de polvos de hornear
3/4 taza de cocoa sin azúcar
1/2 cucharadita de sal
1 taza de mantequilla
1 y 1/2 taza de azúcar
4 huevos
1 taza de frambuesas congeladas o frescas
2 cucharaditas de extracto de vainilla


Para el glacé de chocolate

1 taza de chocolate en barra o chips de chocolate
1 cucharada de crema

Para el glacé derretir en una ollita el chocolate a baño maria y finalmente
agregar 1 cucharad de crema, mezclar y reservar. (si se enfria solo hay que volver a calentarlo a baño maría, el agua no debe hervir)

Preparación

1. Precalentar el horno a 200° c-
  Engrasar con mantequilla una fuente de metal extendida para horno.

2. En un bol mezclar la harina,cocoa,polvos de hornear y sal.
En una olla  derretir la mantequilla a fuego suave.
Retirar del calor,  en un bol agregar el azúcar batiendo hasta mezclar bien.
Agregar los huevos de  a uno  batiendo despues de cada huevo que se grega.
Agregar la  vanilla hasta mezclar bien.

3.Con una cuchara agregar la harina (que ya está con polvos de hornear) mezclando bien.
Agregar finalmnete la taza de frambuesas y mezclar en forma suave.
Cuando esté listo distribuir  en la fuente metálica de horno.

Llevar a horno de 30 a 35 minutos hasta que esté listo.
El brownie siempre es un poco húmedo.(esa es la idea)
Se puede probar con una brocheta fina si está seco está listo.
Dejar enfriar y entonces hacer dibujos sobre el brownie con el chocolate derretido.
Dejar un rato en el refrigerador. Despues servir con algunas frambuesas.

Tip: si quieren puedden colocarle solo 1 taza de azúcar yo no quise variasr eso porque a veces las frambuesas son un poco ácidas. Es cosa de gusto
Tambien se puede reemplazar por Splenda o sucralosa.

Persimmon little pudding









As you know we are in Autumn and the most of  you in Spring/summer  but  made the other day this persimmon recipe the other day and sincerely was amazing, so you can reserve for your Autumn but is believe me is really nice.

First Cultivated way back in the eighth century by the Japanese, the persimmon had long been an autumnal delight in China

Resembling a glowing lantern, the leaves of the persimmon mimics its fruit by changing in colour, as the cold progresses, to a golden orange. It is a shame that this rather unique fruit is not more commonly enjoyed and as eagerly anticipated as other autumn fruits.

With delicate overtones of honey and apricot, the persimmon can be slow to ripen, taking anywhere from five days to two weeks to reach the point where the astringent tannins have turned into sweet sugars.

I adapted this recipe from Nestlé baking.The original recipe was with Lúcuma fruit  but I know in others countries you dont have and I knew with persimmon will be nice and was.


Ingredients (6 servings)

1 tin Sweetened Condensed Milk
2 teaspoon of vanilla extract
4 eggs (separated yolks from whites)
2 tablespoon of cornstarch
4 ripe persimmon
250  grs lady fingers cookies
5 tablespoon of icing sugar

Method

In a saucepan mix the condensed milk, 2 and half cans water (use the same container), mix well, add cornstarch, vanilla and egg yolks (reserve whites).

Bring this mixture over medium heat stirring all the time until thickened.
Let chill by a while.
Make a purée with the persimmons and add a cup of this  a vanilla  cream .
Reserve the remaining cream.
Beat the egg whites  with a pinch of salt, and add  icing sugar in tablespoon , incorporating well. There should be a firm meringue.
Crush cookies into little chunks and distributing into the ceramics bowls.
 Distribute the vanilla cream over the cookies., and  then other layers of chunk cookies and finally spread the cream with the mashed persimmons.Finally  decorate with meringue in each bowl.
Place the ramekins in the oven until will be golden.
Allow to cool.
 Refrigerate until serving time.

Esta receta e historia es acerca de caquis Déjenme decirles que no tengo arboles de caquis pero en este tiempo se encuentran en abundancia, hace años una amiga muy querida para mí, la Koka (que no creo que lea mi blog tiene 7 niños) nos regaló caquis bien maduros y ella me enseñó la primera receta que hice con caquis (aquí normalmente la gente se come los caquis con una cucharita cuando están maduros) bueno el postre de la Koka era una especie de mousse que igual hago siempre, queda muy bueno.
Despues como he ido investigando e incursionando he descubierto nuevas y deliciosas recetas, esta es de Nestlé pero en principio estaba pensada para lúcumas (maravillosas) y yo la adapté asi que se puede hacer con lúcumas tambien.

Me encantó saber que los primeros caquis se cultivaron en Japón en el siglo 18 y despues en China, acá no se como llegaron pero desde que soy chica he visto caquis.  Es muy típico que en Chile hayan árboles de caqui en las casas, debe ser por su color.

Ingredientes

1 tarro de leche condensada
2 cucharaditas esencia de vainilla
4 huevos
(separados las claras de las yemas)
4 caquis bien maduros
2 cucharadas de maicena
o harina de maiz
250 grs. galletas de champaña o bizcochos de soletilla
o dedos de dama (todas son lo mismo)
5 cucharadas de azúcar glass

Preparación

1. En una olla mediana mezclar la leche condensada con dos tarros y 1/2 de agua (usar el mismo envase), la maicena, vainilla y las yemas. Cocinar a fuego moderado  batiendo constantemente hasta que espese.

2. Mezclar los caquis hechos puré ( si estan bien maduros moler con un tenedor sino en la licuadora) y añadirles a este puré una taza de crema de vainilla cuando esté tibia.

3. Batir las claras  con una pizca de sal a punto de nieve e ir agregando de a poco el azúcar glass (o azúcar flor)  y continuar batiendo hasta que se incorpore bien.

4. Distribuir las galletas en pocillos de cerámicas, cortadas en pedazos, ponerlas en el fondo de los pocillos, sobre esto colocar  crema de vainilla  de nuevo otra capa de galletas y sobre estas la crema de caqui, finalmente repartir el merengue y llevar a dorar al horno .
Dejar enfriar antes de servir.

Figs and honey with ricotta






This is my favorite type of dessert, delicious, creamy, with fruit, so good after any meal or even be delicious for breakfast.



What did I love figs but I imagine that would also delicious with strawberries or raspberries.


I say this because in the Northern Hemisphere (lucky you) are in the lovely  strawberry season.


This recipe is adapted from Michele Guiliano who  has written some  interesting books "French Woman Do not fat" she has healthy and delicious recipes and really enjoy food and life, Other recipe of her in my blog : Pain baguette








Ingredients (4  serves)

4 tablespoon of honey
4 pieces of orangestrips
8 fresh figs
1 tablespoon of grated orange peel
1  1/2 cup of ricotta cheese
2 tablespoon of heavy cream

Method

1. In a medium saucepan, mix 1 / 2 cup water with honey, add the orange strips and boil this mixture for two minutes over medium heat, stirring until honey dissolves.



Simmer the mixture and leave for about 5 minutes until the syrup has reduced and thickened.

2.Remove from fire. Add the figs gently and cover them with the honey syrup.


3. Beat slightly with an tablespoon of  cream and divide into bowls or cups, place  two figs over the ricotta cream- and cover with syrup.


You can garnish with mint leaves.

Higos miel y ricotta


Este es mi tipo de postre favoritos, suave, cremoso y con frutas.
Delicioso despues de comidas o perfecto para el desayuno.
Si no tienen higos (por la época) pienso que debe quedar delicioso con frambuesas o frutillas.
Esta receta está adaptada de un libro de Mirielle Guiliano que es una francesa que sabe comer, cuidarse y gozar la vida.
De ella tambien es una receta de Pain baguette que ya publiqué.
Me gusta como es Mireille sus recetas son sencillas y deliciosas.

Receta

Ingredientes (4 porciones)

4 cucharadas de miel
4 tiras de corteza de naranja
8 higos frescos
1 1/2 taza de ricotta
2 cucharadas de crema
hojas de menta pata adornar


Preparación

1. Mezclar en una olla mediana 1/2 taza de agua con la miel, las tiras de cáscara de naranjas,
poner a cocer la mezcla durante 2 minutos a fuego medio, revolviendo hasta que la miel se disuelva.
Llevar la mezcla a ebullición y dejar por unos 5 minutos hasta que el sirope se haya reducido y espesado.
Retirar del fuego.
Bañar en este sirope los higos.
Repartir la ricotta mezclada con dos cucharadas de crema, en copas o bols, colocar encioma en cada copa dos higos y bañar con un poco del jugo de naranja.
Adornar con unas hojas de menta y servir.
