Sweet potatoes yummy dessert and some Awards..














I love sweet potatoes and so when I can I love to make dessert, here we  consume more sweet potatoes for dessert.
 This is a rich texture  and a meringue layer and delicious dessert recipe from Martha Serani, a chef de Chile.

Ingredients

600 grs. sweet potato



thick diced


orange peel for flavoring


3 egg yolks


1 cup cream

1 teaspoon vanilla extract


6 tablespoons sugar


meringue

4 egg whites


1 cup sugar


1 pinch of salt

Cinnamon for sprinkle

method



In a pot boil water with orange peel, add the potatoes peeled and sliced.

Cook until the sweet potatoes are  very soft and tender.

Cook by 25 minutes.

Discard orange peel and grind the potatoes in a food processor.


In a bowl, mix sweet potatoes together with the yolks, cream, sugar and vanilla essence.


Place in a large dish  that can go in the oven.


For the meringue beat egg whites with pinch of salt, prepare a syrup with sugar and put over the beat egg whites, beat until firm.


Spoon the meringue over the mixture of sweet potato and place in the oven to 180 ° c


by 20 to 25 minutes or until top is golden brown.


Remove from oven and sprinkled  with cinnamon and  serve at room temperature or cold .

Postre delicioso de camotes (boniato)















Postre de camotes y algunos premios


Me encanta el camote(boniato) especialmente para postres y pies, para los que conocen a la lúcuma les diré que es muy parecido.
En el Líder y en el Jumbo siempre hay y por supuesto en la Vega pero personalmente me cuesta mucho ir a la vega.
Para un postre con unos 500 o 600 grs les sale un postre para seis personas.
Es absolutamente dleicioso.
Esta receta la adapté  de una de la martita Serani que tiene muy buenas recetas y es chef del suplemento Ya de El mercurio.

Ingredientes

600 grs.de camote (boniato)
picado en cubos gruesos
cáscara de naranja para cocer los camotes
1 cucharadita de esencia de vainilla
3 yemas
1 taza de crema
6 cucharadas de azúcar

Merengue
4 claras
1 taza de azúcar
canela para espolvorear

Preparación

En una olla poner a cocer los camotes pelados y en rodajos con la cáscara de naranja.
Dejar cocer hasta que esten blandos y tiernos por lo menos unos 25 minutos.
Estilar, descartar la cáscara de naranja y moler el camote en una porcesadora.
En un bol junta el puré de camote con las yemas, la crema y el azúcar y la esencia de vainilla.
Poner en una fuente o budinera que pueda ir al horno.
Batir las claras a nieve con una pizca de sal
Para el merengue preparar un almíbar de pelo con el azucar,  y agregar suavemente hasta que se enfríe al merengue batido.
Prender el horno a 180 °c  y vaciar el merengue sobre el camote.Cocinar por unos 20 minutos o hasta que esté dorado.
Retirar del horno espolvorear con canela y servir a temperatura ambiente o frío.

  5. I like sweet potatoes too. Back in my hometown, we cut the sweet potatoes in pieces and deep fry them or my mum will cook them in porridge. I like your version too. ;)

  41. As sweet as I am on these potatoes, I still have not experimented much with putting it in my dessert. I'm sure I'll get to it one day. With a little meringue on top...it certainly is tempting Gloria ;o)
