Smoke salmon and cream cheese Dip with toasted bread









I love appetizers, specially for holidays, is a relax eat something or wait for something and eat a yummy appetizers with a white wine or other.
This yummy recipe is from Goodhousekeeping from last Christmas, we really enjoyed because the smoked salmon is perfect to mix with cream cheese.Other Christmas recipe specially for you my lovely friends!


The bread I used is simple french bread  toasted in oven. You can use the bread more you like...






The recipe

Tip recipe: Instead of topping each toast with slices of expensive smoked salmon, treat your guest to this flavour  spread.
Prepare the salmon spread up to 1 day ahead (the flavor will have a chance to blend fully) cover and refrigerate.

Ingredients

 1  cream cheese softened (Philadelphia)
1 cup sour cream
4 oz.  smoked salmon chopped
2 tablespoon fresh dill chopped
1 lemon
salt and pepper
1 tbsp capers drained and chopped
2 bagels or other french bread in slices
1/2 red onion thiny sliced
1/2 english cucumber (seedless) thiny sliced
1 tbsp chopped chives



Method

Prepare smoked salmon spread: In large bowl stir cream cheese until light and fluffy.Fold in salmon, sour cream, dill, capers, 1/4 teaspoon salt, and 1/4 teaspoon of ground black pepper
From lemon grated 1 teaspoon of peel and squeeze 1 teaspoon juice stir juice and peel into mixture in bowl.
Transfer to serving bowl.
Cover and refrigerate at least 1 hour .

Preheat the oven at 180°c , Cut french bread sin slices Place in a large cookie  sheet   and bake 8 to 10 minutes. or until golden and crisp.

Transfer to wire rack to cool completely.

Serve  toasts with spread  and onion and cucumber  for topping.

Dip de salmon ahumado y crema de queso
en pan tostado


















Me encantan los aperitivos para servir o picotear (decimos aquí) especialmente para las fiestas, es cuando aún no comes y estás esperando que esté lista la comida, y si lo acompañas de un vino blanco helado, mejor aún.
Me gusta hacer aperitivos distintos para estas fechas (no me gustan las papas fritas o cosas por el estilo) y en pan tostado queda fantástico.
Este dip de salmón ahumado (se encuentra en todas partes) mezclado con queso crema lo adapté de una receta de GoodHousekeeping y nos encantó.


Casi no tienes hambre despues...

TIP: Se puede hacer con anticipación y así la mezcla de sabores queda mejor, si se hace un día antes, cubrir con papel aluminio y dejar en el refrigerador.Sacar un rato antes.
Usé el tipico pan francés pero se puede hacer con otro pan que se corte en tajadas como el baguette.

Ingredientes

1 caja de queso crema (tipo Philadelphia)
4 oz o 1 paquete de salmón ahumado en láminas
1 taza de sour cream o yogurt natural cremoso
2 cucharaditas de tomillo fresco picado
1 limón
sal y pimienta
1 cucharada de alcaparras
2 baguettes o pan francés cortado en torrejas
(mejor si es del día anterior es más fácil para cortarlo)
1/2 cebolla morada o roja cortada en pluma
1 pepino de ensalada cortado en rodajas

Preparación

Preparar el tip  de salmón ahumado, en un bowl batir la crema de queso hasta que esé cremosa y suave, mezclar con el salmón y la souer cream (o yogurt) agregar el tomillo, las alcaparras y la sal y pimienta.
Del limón rallar la cáscar y agregarla a la mezcla de salmón y queso , agregar 1 cucharada de jugo de limon y revolver bien.
Cubrir y refrigerar 1 hora por lo menos antes de servir.
Precalentar el horno a 180°c.
Cortar el pan en rodajas y ponerlas en una bandeja para horno por unos 8 a 10 minutos o hasta que se vean dorados y crujientes.
Retirar y dejar enfriar.
Servir las tostadas con el dip de queso y salmón ahumado acompañado de las cebollas y pepinos.
Acompañar de un vino blanco helado.Pienso en un saugvinon blanc, Nice!..

Lemon walnut biscotti








Always I wanna made Biscotti  they looked so nice, and finally I fin a lovely recipe in Ladies Home Journal and american magazine from December 2002 (Always I look my olds magazines specially from Christmas times)
While not too sweet the biscottis  are delicious and elegant (I serve with Ice Cream too)and  yummy to eat with some coffe or tea,  I keep them in metal boxes and well preserved



Ingredients

1 cup walnuts chopped
3 1/4 cups all purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
3 large eggs
1 cup sugar
1/2 cup butter or margarine melted
1/4 cup vegetable oil
1 teaspoon grated lemon peel
2 tablespoon fresh lemon juice.


Method

Heat the oven at 190°c  with one rack positiened in center and one directly below.
Toast waltnuts just until golden, 4 to 5 minutes.
Cool and chop together on a cutting board.

In a large bowl, whisk together flour , baking powder and salt.
In a separate bowl  whisk together remaining ingredients until smooth.

Stir egg mixture into flour mixturethen stir in nuts.

(Dough will be soft that's OK.

 Divide dough in half, lighty grease a large cookie sheet.
With lighty flored hands shape dough in two logs. Slightly rounded in the center.
Bake on center rack  until firm to the touch.
(30 minutes)
Let cool 20 minutes .Leave oven on.

Transfer logs, gently cut the logs to a cutting board. With a serrate knife gently cut logs in slices.
Lay slices flat on 2 ungreased cookie sheets. Bake until bicotti are lightly browned around edges, by 10 minutes.
Flip biscotti over on cookie sheets , reversing positions  when you put them back in the oven.
Bake 6 minutes more.Transfer biscotti to wire racks to cool.

Biscottis de limón con nueces





















Siempre había querido hacer biscottis (me encantan), ya saben que son un tipo de galleta de Italia en que se hornean dos veces, quedan deliciosos.
El biscotti no es muy dulce y son hermosos y ricos.
Especiales  para un café on un té. .Y tambien los serví el otro día con helados, queda muy bien.
Esta receta está adaptada de la revista Ladies Home Journal de la Navidad del 2002.


Ingredientes

1 taza de nueces picadas
3 1/4 taza de harina normal sin polvos de hornear
2 y 1/2 cucharaditas de polvos de hornear
1/2 cucharadita de sal
3 huevos
1 taza de azúcar
1/2 taza de mantequilla o margarina derretida
1/4 taza de aceite
1 cucharadita de ralladura de limón
2 cucharadas de jugo de limón

Preparación

Calentar el horno a 190 ° C y tostar las nueces por unos 4 a 5 minutos.
Dejar enfriar y cortar fino en una tabla de cortar.

En un bowl grande mezclar la harina, los polvos de hornear y la sal.
En otro bowl unir los ingredientes restantes (huevos, ralladura de limón,mantequilla,aceite etc.
Unir las dos mezclas la de harina y la de huevo.
Agregar la nueces picadas.
Si la masa está suave está bien.
Dividir la masa en dos porciones.
Engrasar una bandeja para horno. Con las manos enharinadas hacer dos panes medianos (más grandes al centro) y colocar sobre la bandeja de horno.
Cocinar por 30 minutos.Deben estar firmes al tocarlos.
Retirar y dejar enfriar unos 20 minutos. Dejar el horno prendido.
Con un cuchillo con sierra cortar cuidadosamente los biscottis formando unas lonjas largas.
Colocarlas en una bandeja de horno y llevarlas a horno por unos 10 minutos o hasta que las orillas estén doradas.
Dar vuelta los biscottis y colocar unos 6  minutos más.(que esten dorados)
Dejar enfriar antes de guardar.
Duran bien una semana.

Strawberries Ice Cream for Christmas















Strawberries Ice Cream for Christmas why not?? This delicious Christmas dessert  was made with greek yogurt, strawberries and splenda (or other sugar sustitute) and you can use freeze strawberries, look nice for Christmas by the colour and in the North maybe a chocolate sauce will be nice...




Ingredients (5-6 servings)

300 grs. freeze strawberries or fresh strawberries
500 grs. greek yogurt or other nice
plain yogurt
4 tablespoon of splenda (or other sugar sustitute)
or normal sugar
2 tablespoon of double cream
1 tablespoon orange zest
2 tablespoon of orange juice
mint leaves for  garnish

Method

In a processor or blender make a puree with the strawberries and the orange zest and orange juice.
In a bowl mix the greek yogurt, splenda (or sugar) and add  the strawberries puree with orange juice and the double cream. Mix well..
Place the Ice cream in a metal container by 2 hours in the freeze.
Then take out the container and mix slowly, freeze again by two hours more.
To serve with a scoop ice cream place in glasses and garnish with strawberries and mint leaves.
Keep in freeze until you will serve.


Chocolate sauce:
heat in a little pot at bain Marie 100 grs. of hard chocolate and add 2 tablespoon of cream and 1 tablespoon of sugar. Heat until is thicker .Set aside and serve with Strawberries Ice Cream.

Helado de frutillas o fresas para Navidad












Helado de frutillas para Navidad? Por supuesto pero lo que quizas es obvio aquí en Sud América en el Norte ni en Europa no es tanto (aunque siempre se encuentran recetas de helados en todo tiempo)
Recomiendo este helado porque es una pasusa refrescante (en medio de comida más pesada)
es delicioso, fáicl y saludable. Está hecho de yogurt natural (o yogurt griego) frutillas, zumo de naranjas y lleva splenda (o algun subtituto similar. A mí me encnatan los helados en cualquier tiempo y se me ha dado la idea que es algo delicioso para Navidad.
Tambien se puede acompañar de una salsa de chocolate tibia y queda delicioso.




Ingredientes

300 grs. fresas congeladas (hay todo el año)
o 300 grs. de fresas o frutillas frescas, lavadas y secas
500 grs. yogurt natural o griego (En Chile usé el siempre fiel Soprole natural (4))
(Soprole  me debería auspiciar)
4 cucharadas de Splenda (u otro substituto de azúcar)
2 cucharadas de crema espesa
1 c ucharada de ralladura de naranja
2 cucharadas de jugo de naranja natural
hojas de menta para adornar

Preparación

Moler las frutillas en una licuadora o en el procesador con el jugo y la ralladura de naranja.
En un bol mezclar el yogurt,la crema, y el azúcar splenda (u otro), y luego agregar las frutillas ya hechas puré con el jugo de naranja. Mezclar bien.
Vaciar a un recipiente de metal y llevar  al Congelador o freezer por dos horas.
Luego retirar y batir suavemente, volver a llevar al congelador y dejar otras doas.
Servir con una cuchara especial para helado y colocar en copas,
Adornar con hojas de menta y frutillas.


Si se quiere salsa de chocolate hacer lo siguiente:

En una ollita pequeña calentar 100 grs. de chocolate en barra, colocar sobre otra olla a baño maría, agregarle al chocolate dos cucharadas de crema y una cucharada de azúcar, derretir y revolver suavemente hasta que esté espeso. Dejar enfriar un poco y servir con el helado de fresas.
