Fish and prawns soup (Caldillo de pescado con camarones)









There are some meals  that are special are not only delicious because comfort the soul, the kitchen has plenty of inspiration, emotion and love of course. .Is an amalgam of different things, because when one cooks sometimes one is the first surprised when something is really so good.!!

This is the case with this soup. Also I love  seafood.
This recipe is inspired  in  a Pablo Neruda recipe soup!

Ingredients

3 tablespoons of oil
1 onion diced
2 garlic cloves
1/2 teaspoon of paprika
1/2 carrot peel and chopped
1 red pepper in cubes
2 medium tomatos peel
without seeds
1 liter fish soup (I use salmon
1 piece but you can use other fish)
3/4 cup og white wine
3 -4 pieces of salmon or other fish
300 grs. prawns (fresh or freeze)
2 yolks egg
1 bay laurel leaf
1 cup of  cream
1/3 cup of parsley
chopped to powder
salt and pepper

Method  (5-6 servings)

In a  large pot  heat the oil over medium heat, add onion and garlic and cook 5 minutes or until onion is lightly browned, add paprika powder, carrot , red pepper and tomates. Empty the fish stock and white wine (I did well in broth, cooked them for a while a piece of salmon with salt and pepper)Blend well and dont  boil because  bremember you added  theyolks with   heavy cream.

Reduce heat and cook about 6 to 7 minutes
add laurel an d salmon and  continue t cook 7 minutes.

Add the yolks  dissolved in heavy cream. Add the prawns .Cook slow heat.


Season with salt and pepper.
Remove from heat and serve sprinkled with parsley.

Caldillo de pescado con camarones (o gambas)





Hay comidas que no solo son deliciosas sino que además confortan el alma. Esta es una de ellas, además a veces como cocinar es un misterio mágico (así pienso) es una amalgama de amor, condimentos y receta, al final  el resultado es asombroso para la propia cocinera en este caso.
Supera las expectativas.
Esta receta está inspirada en un poema de Pablo Neruda en una Oda al Caldillo de congrio, digo está inspirado porque mi caldillo es  de  salmón.
Buen apetito!

Ingredientes (5  a 6 porciones)

3 cucharadas de aceite vegetal
1 cebolla cortada en pluma fina
2 dientes de ajo picado fino
1/2 cucharadita de pimenton molido o paprika
1/2 zanahoria pelada y rallada
1/2 pimentón rojo sin semillas
2 tomates pelados y sin semillas
cortados en cubos
1 litro de caldo de pescado (lo hice con dos trozos de salmon)
3/4 taza de vino blanco
1 hoja de laurel
4 trozos de salmon (fresco o congelado)
300 grs. de camarones o gambas
2 yemas de huevo disueltas en
1 taza de crema
sal y pimiena
1/3 taza de perejil picado para espolvorear

En una olla grande calentar el aceite a fuego medio, agregar la cebolla y el ajo, cocinar de 5 a 7 minutos, hasta que la cebolla esté dorada, añadir la paprika o pimentón molido, zanahoria pimenón y tomates en cubos.
Verter el caldo y el vino blanco. Llevar a ebullición. Reducir el calor a fuego suave por 7 minutos e incorporar el laurel y el pescado cocinar durante 7 minutos más.

Agregar los camarones y verter de apoco la yemas disueltas en la crema hasta incorporar bien,cocinar sin hervir porque cuando ya tiene incorporada la crema y las yemas se puede cortar,
sazonar con sal y pimienta.
Retirar del fuego y servir espolvoreado con perejil.

Corn and lemon muffins







These corn and lemon muffins are smooth and yummy and are adapted from a recipe of Platos y Copas "Chile Gourmet" año 2010.

To these lemon muffins I use ramekins but you can use  the normal muffins pan. These muffins in ramekins are a little bigger than others.
But are lovely for breakfast or lunch.Love the texture.

Ingredients

5 tablespoons of flour
4 tablespoon of corn flour
2 teaspoon of baking powder
1 pinch of salt
120 grs, soft butter
1 cup of sugar (or  splenda)
1 lemon the  juice and peel grated
2 eggs
1 cup of milk
1 tablespoon of  olive oil

Ramekins (I used 6)
or normal muffins pan

Method

1. Preheat the oven at 180° C (medium)  Butter the ramekins  and podwer with flour.
Set aside.

2. In a bowl mix the normal flour and corn flour, add the pinch of salt and baking powder.
   In other bowl beat the butter with the sugar until incorporated. Add 1 egg beat and add the other.
   Join  the two mix.


3. Add the milk the grated peel and juice lemon, and the oil.
Join all carefully and mix well.
Distribute the batter on the ramekins or others pan muffins.
Bake at oven  by 20 to 30 minutes until are little golden and dry.
Set aside and podwer with caster sugar.

serve with Tea or Coffe.

Muffins de limón y harina de maiz










Estos muffins los hice el otro día y quedaron muy buenos. Su masa suave y esponjosa  es en parte por la harina de maiz que es más suave que la harina  normal.

También los  preparé en estos bowl ceramicos pero perfectamente se pueden hacer en los típicos moldes de muffins.
Son muy buenos para el desayuno o para el lunch.

Ingredientes

5 cucharadas de harina
4 cucharadas de harina de maiz o maicena
2 cucharaditas de polvos de hornear
1 pizca de sal 120 grs. de manequilla
1 taza de azúcar
1 limón (su jugo y ralladura)
2 huevos
1 taza de leche
1 cucharada de aceite de oliva

Preparación

1. Precalentar el horno a 180° c  (temperatura media)
Enmantequillar y enharinar los cuencos de cerámica o los moldes para muffins.

2.En un bol mezclar las harinas (la normal y la de maiz) más los polvos de hornear y la sal.

3. En otro recipiente batir la mantequilla con 1 tazas de azúcar hasta incorporar. Añadir los huevos de a uno.

4.Adicionar la leche, la rraladura de limón y jugo y el aceite de oliva.
Unir todo bien mezclando.

Vaciar la mezcla a los moldes cerámicos o los moldes de muffins.
Hornear de 20 a 30 minutos o hasta que los muffins esten ligeramente dorados.
