Muffins and cupcakes always are so cute and delicious, I made these the last week and the kids loved them.
This decadent, impressive cupcakes that appeals to everyone's and every time.
These muffins I adapted from Better Homes recipes (www.bhg.com/recipe/muffins) and the toping is from http://www.marshmallowfluff.com/ , and I m adding other s'mores recipe.
Ingredients (12 muffins)
(If you like prepare the muffins a day ahead. )
1 1/2 cups all purpose flour
3/4 cup of sugar
1 1/2 teaspoons baking powder
1/4 teaspoon ground nutmeg
1/8 teaspoon salt
1/2 cup of milk
3/4 cup butter or margarine melted
1/2 teaspoon ground cinnamon
1.In a mixing bowl combine flour, the sugar,baking powder,nutmeg , cinnamon and salt.
2.In another bowl beat egg slightly; stir in milk and add melted butter or margarine.Add egg mix to flour mixture. Stir just until moistened (the batter may be lumpy)
Lightly grease muffin cups. Fill cups about two-thirds full with batter. Bak to 190° C. for 20 to 25 minutes or until muffins are golden.
1 cup marshmallow cream Fluff or other
2 eggs white at room temperature
1 cup of sugar
1/2 tablespoon of cream of tartar
1/8 tablespoon salt
1/4 cup of water
1 tablespoon vanilla extract
In double boiler top over hot,not boiling water,combine all ingredients except vanilla.
With hand mixer, beat until soft peaks form.
Remove from heat and continue beating until stiff.
Beat in vanilla.Frost the muffins. With a Bloworch (carefully) golden the muffins top.
Other recipe marshamallow frosting
4 large egg whites
1 cups sugar
1/2 teaspoon cream of tartar
1 teaspoons pure vanilla extract
Place egg whites, sugar, and cream of tartar in the heatproof bowl of an electric mixer. Set over a saucepan with simmering water. Whisk constantly until sugar is dissolved and whites are warm to the touch, 3 to 4 minutes.
Transfer bowl to electric mixer fitted with the whisk attachment, and beat, starting on low speed, gradually increasing to high, until stiff, glossy peaks form, 5 to 7 minutes. Add vanilla, and mix until combined. Use immediately.
