Potato Gnocchi with tomatoes sauce (Mom's recipe)




Mom like to cook italian food ever, I remember gnocchi when I was a child and we loved them, and she went with us (me and my brother and sister) to lovely italian restaurant to eat lovely pizza (not fast food) and spaguettis!!

Well the other day she was here and said : Do you want I make gnocchi? and I said Yes, I only help her and María Esperanza too.

She (M. Espe) made the little balls so well, so Im only take the pictures!!

Ingredients to Gnocchi

1 Kg. and half of boiled potatoes (peel)

2 eggs

1 cup and half of flour

salt

Ingredients Tomato sauce

1 spoonful of vegetal oil

300 grs. grinded beef meat

1 onion chopped

1 clove garlic

laurel leaves

200grs, tomato sauce

1/2 teaspoon of sugar

1 fresh tomato chopped

pepper and salt

Method Gnocchi

Boiled the potatoes with salt (without peel) , ans mashed how puree, add the eggs and join well. Add the flour making a dough like a ball.

Place in the kitchen table (the dough dont be stick at hands) if you think is needed add a little flour more to work the dough.

Take a piece of dough and roll it out gently with your hands about 3/4 inch of diameter. Gently roll the dough with the fingers. Cute the tubes of dough making little balls and with your firgertip press again a piece of dough and roll to form the rolls.

When the gnocchi are made place in a tray for a while

Boiled water with salt in a saucepan, gently drop the gnocchi, a few at a time, into the water.As soon as they rise to the surface, remove them with a slotted spoon, draining well. Arrange on a warm serving dish.Continue cooking in the same manner.

Method to tomato sauce

In a frying pan place the oil and heat to medium fire, add the chopped onion and cook for a while until is fragant.Add the grind beef meat and cook for a while. Stir tomato sauce, fresh tomato,clove garlic,salt and pepper, and 1/2 teaspoon of sugar,Cook by 10 minutes until the liquid is evaporated and rest for a while.

In a large dish or pyrex dish place a layer of gnocchi and a layer of tomato sauce and powder with grated cheese, place other layer of gnocchi and again place tomato sauce and grated cheese until to finish, place in the oven to gratined by 10 minutes and serve.

Note: This sauce is the Mom always made but you may make with others sauce (white sauce, pesto, basil sauce, ricotta sauce etc.)

Ñoquis de papas con Salsa de tomates

(Receta de Mamá)

A mi mamá le ha gustado la cocina italiana siempre, y recuerdo los ñoquis desde muy chica por que los hacía siempre, de hecho cuando me casé los hacía cuando invitaba a comer pero los dejé por un tiempo porque la gente se espantaba porque hiciera los ñoquis (era una época que no era glamoroso cocinar y la mayoría de mis amigas no cocinaba)

Bueno mi mamá nos llevaba a comer a veces a restaurants italianos (en el sur hay muy buenos) en que el dueño venía a la mesa y nos enseñaba como debiamos comer los fideos etc. y comíamos pizza, (no de comida rápida) y spaguettis etc. por lo que ella siempre en sus clases hacía algunas comidas italianas. De hecho los de ella son los mejores ñoquis que he comido.

El otro día hizo yo me limité ayudar, más bien a sacar fotos por que la que la ayudó más fue la María Esperanza que le encanta ayudar a mi mamá.

Tengo hace días las fotos y todo pero no había tenido tiempo de traducir la receta al ingles, bueno por fin lo hice.

Ingredientes para la masa de ñoquis

1 kilo 1/2 de papas cocidas como para puré (sin cáscara)

2 huevos

sal

1 taza 1/2 de harina

INGREDIENTES SALSA DE TOMATES

1 cucharada de aceite vegetal

300 grs. de carne molida

1 cebolla picada fina

1 diente de ajo

hojas de laurel

sal y pimienta

1/2 cucharadita de azúcar

queso parmesano rallado

Método para los ñoquis

Hervir las papas como para puré, sin cáscara con un poco de sal. Cuando están lias se muelen bien, agregar los dos hevos de a uno y mezclar bien, agregar de a poco la harina para hacer una masa suave que no se pegue en las manos, si así fuera agregar un poco más de harina para trabajar la masa.

Cuando está lista se sacan pedazos de la masa para hacer unos cilindros no muy grandes para cortar los pedacitos para los ñoquis, y con estos se hacen pequeñas bolitas, con la yema del dedo presionar cada uno para que queden como se ve en la foto. (Tambien se pueden hacer con un tenedor)

En una olla poner a hervir agua con sal para ir echando de a poco los ñoquis para que se cocinen, cuando suben a la superficie (señal de que estan listos) se retiran con una espumadera y se van colocando en una fuente donde se ponen por capas, una capa de ñoquis y una capa de salsa y queso rallado así hasta terminar.

Método para la salsa de tomates

En una sartén colocar el aceite y calentar un poco, agregar la cebolla picada,cocer un poco y agregar la carne molida, sal y pimienta, cocinar por un rato y agregar la salsa de tomate, el tomate picado, el ajo,el laurel y la 1/2 cucharadita de azucar.

Cocinar por unos diez minutos hasta que el líquido se evapore, entonces proceder a armar los ñoquis por capas con la salsa y el queso rallado.

  7. Hola Gloria: no estoy desaparecida.Además de que tengo menos tiempon es que no tengo mucho que contar, ahora estoy centrada en buscar otro camino para cambiar algunas cosas, y como soy un poco cobarde y los enfrentamientos no me gustan, voy a ver si doy un rodeo para llegar a otro sitio.
