Orange's Cake and Lemon's dessert with berries sauce
























This curious and nice recipe is two in one. You have to make first the Orange's cake and reserve 10 slices of the cake to make the dessert. I advised you reserved the cakes slices right now because I made this cake twice before of to may make the Dessert (the cake is really yummy).


You may frezze too the cake slices if you don't want to make in the moment.


The Dessert has the texture similar to a cheescake.




I adapted this recipe from Paula Magazine of Centro de Cocina Paula.(Is a Magazine from here that have so many and wonderful recipes)




Orange's Cake recipe


Ingredients

2 large oranges, peel and cut quarters

1 Cup and half of sugar (300 grs.)

1/2 cup of Milk

100 grs. of butter to room temperature

5 eggs

2 teaspoon and half of baking powder

2 cups and half of Flour



Orange's syrup



3/4 cup of sugar

1/2 cup of orange' s juice



METHOD



In a pot place the oranges in quarters , 1/4 of sugar and 1/4 cup of cold water, cook to medium heat until the oranges look transparent. Cut the heat and let chill.

Place in the Beater's Juice the orange mix and add the milk, beat until is uniform. Reseve.

Preheat the oven at medium heat.

Place the butter in a bowl , add the sugar, beat well and add the eggs, .

Add the baking powder and the flour, join well, empty over this mix the mix of orange and milk and mix well.(I use a silicone mold and I dont greased)

(The texture is moist)

Greased with butter a cake mold and empty the batter inside. Place in the oven by 45 minutes or until is golden and dry. Let chill.

Desmold in a large dish.



Orange Syrup

In a pot place the orange's juice, sugar and 1/2 cup of cold water cook for a while to medium heat, by 8 to 10 minutes. Let warm and spread over the cake.





LEMON'S DESSERT with BERRIES SAUCE

Ingredients Dessert

10 slices of Orange's cake (recipe above)

3/4 cup of lemon'sjuice

3/4 cup of sugar
3 eggs

1 cup of double cream

Berries sauce

2 cups of berries

3/4 cup of sugar

1/4 cup of rhum

(I use 1 cup blueberries and 1 cup of raspberries) you may use what to have or like. I used freeze berries because we are in winter but you may use fresh or freeze, A few years ago in the country some enterprises began to plant Blueberries and now we export out of Chile.

In a pot plat the lemon's juice and the sugar , cook to medium heat, when the sugar is dissolved, let chill, and then add the double cream and the eggs, mix well. Reserve.

Preheat the oven.

In a loaf pan (I used 4,5" x 8,5") line up with aluminium paper.

Place the Orange's cake slices in the buttom of the loaf pan and empty over them 1/4 of the batter of lemon and cream, spread, add other slices of the cake and spread again over them the mix of lemon and cream, making layers, you may 3 or four depend of the slices you have.

Prepare a large shallow pan with cold water to cook to Bain Marie , inside this pan place the loaf pan with the dessert by 40 minutes. Remove from the oven and let chill. When is OK desmold over a large dish , cut in slices and serve with the berries sauce.

Berries sauce

Ina pot place the berries, sugar and rhum and cook to medium/slow heat, when begin thickness, stir and let for a while. Serve with the lemon's dessert.

Cake de naranajas y Postres de limòn con salsa de berries



Esta curiosa y muy rica receta es realmente dos recetas en una, porque primero se hace el queque, se reservan unas diez tajadas (hacerlo de inmediato) y despues se hace el postre, està pensado para cuando nos queda Cake, pero la verdad es que como es rico es mejor apartar inmediatamente las tajadas para el postre. Tambien se pueden congelar si no lo quieren hacer en el momento.

Lootro qu esùtil si son pocas personas (1 o 2) se puede hacer y congelar lo que quede y despues hacer el postre.

Esta receta la adaptè de una del Centro de Cocina Paula, revista Paula, que tiene excelentes recetas, es una revista muy antigua aquì en Chile.

Este postre tiene una textura muy similar a un cheescake.




Cake de naranjas (Ingredientes)
2 naranjas grandes, peladas y partidas en cuartos
1 y 1/2 taza de azùcar (300 grs.)
1/2 taza de leche
100 grs. de mantequilla a temperatura ambiente
5 huevos
2 y 1/2 cucharaditas de polvos de hornear
2 y 1/2 tazas de harina normal
Almìbar de naranja
3/4 taza de azùcar
1/2 taza de jugo de naranja
Mètodo: Preparar el Cake. En una olla colocar las naranjas, 1/4 taza de azúcar y 1/2 taza de agua frìa., cocinar a fuego medio hasta que las naranjas estèn transparentes, retirar del fuego y dejar enfriar.
En la licuadora colocar la mezcla anterior,verter la leche y licuar hasta que la mezcla estè homogènea. Reservar.
Precalentar el horno a temperatura media.. En un bol colocar la mantequilla y el resto del azùcar, batir hasta que la mezcla estè espumosa y agregar los huevos de a uno,batiendo bien despues de cada adiciòn. Añadir los polvos de hornear y la harina, mezclar bien y verter sobre èste la mezcla de naranjas y leche y batir para integrar.
En un molde para Cake enmantequillado verter la mezcla y hornera durante 45 minutos hasta que estè dorado o seco al introducir un palito. (La textura de este queque es màs bien hùmeda) Retirar del horno y dejar enfriar.Luego desmoldar y cortar en rebanadas.
Preparar el almìbar de naranjas, en una olla colocar el azùcar el jugo de naranja y 1/2 taza de agua frìa. Cocinar a fuego medio durante unos 10 minutos hasta obtener un almìbar ligero.
Dejar entibiar y rociar con esta mezcla el Cake de naranja.
Postre de limòn con salsa de berries
10 rebanadas de queque de naranja
3 huevos
3/4 taza de crema o nata
3/4 taza de jugo de limòn
3/4 taza de azùcar
Salsa de berries
2 tazas de berries (yo ocupè una de aràndanos y una de frambuesa pero pueden ser de otro tipo)
1 taza de azùcar
1/4 taza de ron
Para el postre en una olla colocar el jugo de limòn y azùcar,cocinar a fuego medio hasta disolver el azùcar, retirar del fuego y dejar entibiar, agregar la crema y los huevos, batir bien, hasta integrar y reservar.
Precalentar el horno a fuego medio, forrar el interior de un molde rectangular con papel aluminio y colocar al fondo 3 rebanadas de queque y luego verter 1/4 de la crema de limon preparada, luego poner rebenadas de queque nuevamente hasta tener 3 o 4 capas de queque y la mezcla de crema de limòn.
En una budinera màs grande colocar el molde con el postre y verter agua frìa en la budinera para cocinar a baño marìa por 40 minutos o hasta que estè firme. Retirar del horno y dejar enfriar antes de desmoldar.
Preparar la salsa de berries, en una olla colocar las dos tazas de bewrries con una taza de agua y 1/4 taza de Ron. Cocinar a fuego medio /bajo durante unos 10 minutos. Retirar del fuego dejar entibiar un poco y servir sobre el postre de limón cortado en rebanadas.
