Crepes Torte(Panquekes) with apricot's jam and Dulce de leche

Sunday was the birthday's Mom so I make this torte, hubby takes the picture. Was so nice she has 78 and Thank's God is so good, I think she was happy, come my sister with her family, Mom made some cakes, chocolate's cake and english's cake (with fruits), we make little sandwichs with mashed avocado, chopped chiken and cheese and I made the Birthday's cake so here is the recipe.
About this torte or Cake I want to add something of history, this is a so antique recipe (about 1850) so the garnish is simple only the cover with sugar and almonds or dulce de leche o sometimes a thing we call "huevo moll" that is a mix of yellows eggs with sugar (so delicious too) this type of recipes is part of Dulces chilenos's history, in the Colonial times the fisrt persons that make this type of sweets were the convent or monastery where the nuns learned to make this type of Dulces.


Ingredients to panquekes



300 grs. of butter

1 cup and hal of caster sugar

6 eggs

3 cups of plain flour

3 spoonfuls of milk powder

3 teaspoonful of baking' s powder

water

Greased paper sheets



to de Filling

1/ 2 kg. of apricot's jam

2 tins of condensed milk (boiled to make Dulce de Leche)

3 spoonfuls of double cream

To the cover

2 cups of granulated sugar

300 grs. grind's almonds

1 teaspoonful of almond's essence

3 whites

1/2 cup of caster sugar

some fruits to garnish



Method

Beat the butter with the caster sugar to be creamy, add the yellows one by one, beat slowly and add the flour with the podwer'smilk and the baking powder, mix weel with 1/2 cup of water. At last add three whipped whites eggs (reserve the other whites) and mix slowly.



Now to make the panquekes cut of the greased paper sheets 10 circles about 24 cm diameter(you may use a tin base to this)

Preheat the oven to medium to slowly heat and spread the mix over each circle of greased paper and take to the oven, you may one or two at the time, I prefer one for one, the time to ready is about 6 minutes no more. In a large dish place the cook panquekes separated by a towel paper.

To unstick the greased paper of the panqueke I turn up over the dish and moist a little with a brush so is so easy to take out.

To make the torte

Place in a large dish one panqueke first and spread the apricot's jam and cover with other panqueke and spread the dulce de leche mixing with the double cream (more creamy to spread)and then other panqueke now with apricot's jam and continue with all the panquekes, one with jam and other with dulce de leche.
(In my recipes I give many times Dulce de Leche's recipe, but here is one of them
Place the condensed milk in a heavy-bottomed pan to slow to medium heat, beat with a woodspoon slowly until golden brown in colour, stirring constantly about 12 to 15 minutes.The caramel will turn thicker as it cooks, but constantly stirring wiil ensure even colour.)

To cover the torte

In a stewpot place the granulated sugar with a little water to cover, when is boiling add the chooped or grind almonds and the almond's essence, stir for a while and take out the fire.Add the whipped whites that you reserve and take to the heat again without stop stir until thicken.
Let chill for a while and cover the torte with this mix. Podwer with caster sugar and you may make some draws and for garnish place some fruits. Is better if you may make the day before.



TORTA DE PANQUEQUES CON MERMELADA DE DAMASCOS
Y DULCE DE LECHE

El Domingo fue el cumpleaños de mi mamá, ella hizo unos queques de chocolate y el queque inglés que va con frutas confitadas. Hicimos pequeños sandwichs con aguacate molido,pollo y también con un queso rico que trajo mi hermana. Vino mi hermana con su familia y estaba mi papá y los niños (María Esperanza y Gerardo) y mi marido amablemente tomó la foto que ustedes ven, así que aquí está la receta.

Masa panqueques(al horno)
300 grs. de mantequilla
1 y 1/2 taza de azúcar impalpable
6 huevos
3 tazas de harina
3 cucharadas de leche en polvo
3 cucharaditas de polvos de hornear
papel engrasado o de mantequilla para hacer los moldes de panqueques

Relleno
1/2 kilo mermelada de damascos
2 tarros de leche condensadas (para hacer el dulce de leche)
3 cucharadas de crema espesa (para suavizar el dulce de leche)

Cubierta torta

2 tazas de azúcar granulada
300 gs. almendras molidas
1 cucharadita de esencia de almendras}
3 claras
1/2 taza azúcar impalpable

Preparación panqueques
Bata la mantequilla con el azúcar impalpable hasta que esté cremosa. Incorpore las yemas una a
una, luego vaya agregando poco a poco la harina cernida, con la leche en polvo y los polvos de hornear, agregue 1/2 taza de agua y una bien.Por último agregue 3 de las claras batidas y mezcle suavemente.Reserve las otras para la cubierta)
Para los panqueques corte círculos de papel engrasado de aproximadamente 25 cm y vaya esparciendo una capa delgada de masa sobre estos, se llevan al horno por unos 6 minutos y se van sacando y dejando en un plato grande separados por una toalla de papel para que no se peguen. Cuando los saco los doy vuelta y por el lado del papel los humedezco con una brocha con un poco de agua son más faciles de despegar.
Armado de la torta
En un plato grande para torta se coloca un crepe y se cubre con una capa de mermelada de damasco, se coloca otro crepe y se le pone una capa de dulce de leche mezclado con la crema espesa para suavizar, así hasta terminar.
(He dado en mis recetas como hacer dulce de leche pero por si alguien no sabe, aqui va; en una olla colocar la leche condensada de los dos tarros y evolver con una cuchara de madera a fuego lento a medio constantemente, aproximadamente de 10 a 12 minutos. Se pondrá color caramelo, despues esperar que se enfríe un poco y agregarle la crema espesa para que sea fácil esparcir)
Para cubrir la torta
Hacer un almíbar con las tazas de azúcar granulada y un poco de agua, cuando hierva agregar las almendras molidas y la esencia de almendras, revolver siempre, cuando se vea el fondo de la olla, retirar del fuego. Añadar las claras reservadas batidas a punto de nieve y llevar otra vez al fuego sin dejar de revolver hasta que espese. Dejar enfriar un poco y luego cubrir la torta, espolvorear con azúcar flor y se le pueden hacer dibujos, adornar con frutas o mazapanes. Queda mejor de un día para otro.
